In recent decades, however, as there has developed an increasing appreciation of the rôle played by African-Americans in the formation of American culture, that view has had to be modified. In terms of the culinary culture of Louisiana, there is indisputable evidence of African influence, which seems obvious now that we understand so much better the general demographic and sociocultural impact of African-Americans from early colonial times.
