Le Colombare Le Colombare This has long been a classic wine from this area, with its name deriving from ‘recie’, or the ‘ears’ or top part of the bunch, selected with great care and attention. This is the Pieropan family’s favourite wine, which they make following a long-standing tradition which has passed down from generation to generation. Denomination: Recioto di Soave DOCG. Grape varieties: Garganega: 100% Geographical location: Hillside vineyard in the Soave classico zone. Vineyard characteristics: Volcanic soils, situated at 300 m above sea level, facing west. Training: Traditionally trained using the pergola veronese system, with 3000 vines per hectare. Defence method: Holistic, low environmental impact approach to pest control. Buds per vine: 8 buds per vine. Age of vines: Vineyard was planted in 1980 Yields: Per hectare: 60 hl (2 kg per vine) Harvesting: Hand-picked with great care, ensuring only the ripest, most healthy grapes are selected. They are picked into small boxes and taken to the winery for drying. Withering The grapes are carried by hand to the drying loft where they are spread on bamboo cane mats to dry naturally for approximately 5 months from midSeptember to the end of February. This all natural environment allows the grapes to dehydrate and concentrate and also allows botrytis, or noble rot, to develop. Vinification techniques: The grapes are de-stemmed and crushed, then fermented at temperatures between 14-18°C in 2500litre barrels The wine ages in 2500 litre oak casks for around two years followed by 6 Ageing: months bottle ageing before release. Organoleptic properties: color: perfume: intense gold, almost amber coloured; tasting notes: reminiscent of exotic fruits and apricots on the nose; total acidity: its initial impression on the palate is delicately sweet; alcoholic 6‰ – 6.5‰; content: 13°. Serving suggestions: This is a wonderful dessert wine which is perfect with almond-based dishes, simple pastries, fruit tarts, dried fruit and rich, blue cheeses. Traditionaly suggested whit Pandoro di Verona. Serve at 12-14°C. .

    RECIOTO di Soave DOCG 2015 VINEYARD: Hand selected grapes from the oldest vines (up to 46 years) and best parcels from the hillside vineyards in Soave. The soils here are brown with large quantities of small volcanic stone and the vines have an excellent southern aspect. Harvest is methodical and very selective. Soil: volcanic stony surface on clay and limestone soil. Surface area: several ha Vine density per hectare: 3,500 Training: Pergola WINEMAKING & AGEING: Made from 100% dried grapes, dried in wooden boxes for a few months. The grapes are then de-stemmed and fermented for 20 days in 25 hl stainless steel tanks before they are placed in their barrels for maturation. Grape: Garganega Maturation: 30 months in stainless steel vats and 5 hl oak barrels Production: limited production of 2,666 numbered bottles ANALYSIS: Actual alcohol content: 13.87 % Total acidity: 5.91 g/l PH: 3.74 Reducing sugar: 144 g/l PRESS: New vintage not yet reviewed TASTING NOTES: Easily one of the most concentrated vintages of the Recioto, the 2015 has an abundance of ripe stone fruit in the aroma and classic characters of citrus peel and honey.     SAN ZENO RECIOTO DI SOAVE DOCG SOIL TYPE: Chalky, limestone and pebbly located on the valley floor. PRUNING SYSTEM: Short Veronese Pergola, Guyot GRAPE VARIETIES: Garganega 100% YIELD: 4 tonnes / hectare HARVEST: Grapes are harvested by hand in the first two weeks of September. WINE-MAKING TECHNIQUE: After careful selection, the grapes are hung up on vertical wires to dry in the fruit drying loft for 5-6 months. Toward the end of February, the grapes are pressed softly. Fermentation is carried out in barriques for 15 – 20 days. The wine is matured in barrique for a further 24 - 30 months. TASTING NOTES: Intense amber in colour, San Zeno is full-bodied with an aftertaste of bitter almonds which balances the soft, sweet, vanilla and sometimes spicy notes on the palate. The bouquet has aromas of bitter almond and dried fruit. SAN ZENO RECIOTO DI SOAVE DOCG FOOD & WINE MATCHING: Perfect with deserts which are quite dry especially with dishes prepared with hazelnuts, almonds and dried fruits. This wine also pairs well with different types of blue cheese served with honey and jams. SERVING TEMPERATURE: 14-16°C ALCOHOL CONTENT: 12,5 % Vol. ABOUT “SAN ZENO”: San Zeno is a find dessert wine made with grapes with high sugar content and loose bunches harvested in the different Garganega vineyards we own. The complexity of this wine allows it to develop with age. Das Gut Valle Spinzo liegt im Roero, dem Gebiet nördlich des Tanaro-Flusses, der Langhe und Roero trennt. Die Weine des Roero sind auf Grund der sandigeren Böden im Allgemeinen leichter und feinfruchtiger als die der Langhe. Die älteste urkundliche Erwähnung dieses Weingutes reicht über neun Jahrhunderte zurück. Die Weinberge liegen größtenteils amphitheaterartig um das Gutshaus. Angebaut werden die traditionellen Traubensorten des Roero, Nebbiolo und Barbera für die Rotweine, Arneis, Favorita und Moscato für die Weißweine. Vor über 25 Jahren lernte ich die Familie Rabino kennen und war sofort von ihren Weinen und ihrer Gastfreund- lichkeit begeistert. Daran hat sich bis heute nichts geändert, und ich freue mich, dass die Rabino ihrem Stil, terroir- typische Weine entgegen aller Moden zu erzeugen, bis heute treu geblieben sind.
