Our Wine List Is Based Around the Drinking Culture of Ancient Our wine list is based around the drinking culture of ancient Rome and throughout the list we highlight the region of Lazio whilst supporting the great diversity of producers found here in Western Australia. Following a practice developed by the Romans for categorizing wines we have listed all wines by colour then by grape varietal forming a simplistic drinking guide. 1 Aperitivi (45ml) Vermouth – Italy Made with fortified wine infused with various botanicals including wormwood, gentian, cloves and other spices, recent history has seen this drink turn into the ideal aperitif. Best served on the rocks or with your choice of tonic or soda. Vino Luck, art, science. Nic Peterkin definitely knows how to define the wine making process, but he also makes beautifully distinct and original wines that taste remarkable. Growing up in vineyards and with both parents from wine making royalty in Margaret River, Nic has been immersed in viticulture and winemaking from a young age. These wines show uniqueness as well as the skill and detail of truly exceptional wines. ‘The aim is to make absolutely delicious, delectable and desirable drops and to discover new flavours in the world of wine. Our mantra is minimal intervention and where possible we aim to work with growers using sustainable vineyard methods. Vino ‘On Chardonnay’ Chenin Blanc, Margaret River, WA 500ml 90 The 2017 Chenin at its simplest is elemental: Flavours of sea spray from the proximity to the ocean. Texture from the Granite which it was grown. Flavours of fresh apple, pear and flowers bring the raw elements together. 2017 L.A.S. Vino ‘Albino PNO’ Pinot Noir Chardonnay, Margaret River, WA 125 Strawberries and cream in a bottle may be a tall order but that’s what we set out to do. To achieve this we handpicked Pinot Noir (90%) and Chardonnay (10%). Naturally fermenting the juice to preserve the primary flavours. The wine then spent 10 months in French Oak where it went through a full malolactic fermentation and was hand stirred to develop complexity and texture. To maximise flavour we bottled the wine unfined with a light filtration. 2016 L.A.S. Vino ‘Pirate Blend’ Touriga Nacional Blend, Margaret River, WA 155 Pirates were the outlaws, the ones who broke the rules, the fighters, the ones who lust after life with gusto. They drank with a passion that was truly magnificent. The Pirate Blend con- tains three Portuguese varieties: Touriga Nacional for structure and depth. Tinta Cao for aroma and finesse.
