Tilapia with Hollandaise 4 servings

Tilapia is a very delicious but inexpensive fish to buy. On top of that, it is usually easy to get it fresh or at least you can find it in the frozen section. This recipe will show you a simple and delicious way to prepare this great fish as well as how to prepare a creamy .

Ingredients: *Cut into small pieces before melting. Directions:

1. Fish preparation:

1.1. Make sure that the fish fillets are properly rinsed under cold water (see section “Meat & Fish Preparation” here).

1.2. Place fish fillets on the plate.

1.3. Pour and sprinkle these ingredients on both sides of each fillet (each fish fillet side should have about 1/8 of the ingredients shown; adjust if needed):

1.3.1. Squeeze lemon and pour olive oil.

1.3.2. Generously salt and pepper.

1.4. Cover with plastic wrap and let rest (marinating) at room temperature for about 15 - 30 minutes.

2. Hollandaise Sauce:

2.1. Water bath:

2.1.1. Prepare a water bath by placing about 1” of water into a medium pot.

2.1.2. Bring the water to simmer on medium heat (without the mixing bowl on the top). Read more in the section “How to Prepare a Water Bath” here.

2.2. Sauce base:

2.2.1. Meanwhile, place into a mixing bowl (not located on top of the pot yet):

4 egg yolks Juice from ½ of lemon

Vigorously whisk together until nicely combined and the eggs get nicely airy (about 2 minutes).

2.3. Cook the sauce:

2.3.1. When the water starts to simmer, lower heat to low, and put the mixing bowl with egg yolks on top of the pot. www.cookingwithfamily.com Cooking with Family © 2021 2

2.3.2. Cook while vigorously whisking for about 30 seconds (to warm the egg yolks).

2.3.3. Then start very slowly (a slow drizzle with breaks) to add:

1 stick of butter - melted

At the same time, vigorously whisk until all the butter is added and the sauce thickens (about 3-5 minutes).

2.3.4. The final consistency should be similar to .

2.4. Finishing phase:

2.4.1. Remove the bowl from the pot, and add:

¼ TSP of Cayenne pepper Pinch of salt

Thoroughly whisk together.

2.4.2. Taste and add salt and pepper if needed.

3. Pan sear the tilapia with finishing in the oven:

3.1. Set oven to 350°F.

3.2. Preheat a fry pan on high heat with 2 TBSP of frying oil.

3.3. Briefly sear to reach a nice sear (about 1 - 2 minutes from each side).

3.4. Pour the marinade over the fish and place into the preheated oven until the fish is fully cooked (about 2 - 4 minutes). *

4. Serve the tilapia with hollandaise sauce and your favorite side.

*Check with a food thermometer to make sure that you have reached your desired temperature:
