This clone from the warm Toro region of Spain thrives in our Dunnigan Hills vineyard, retaining an old-world elegance with a California flare. Deep aromas of saddle leather, oak spice and cigar box lead to layered flavors of boysenberry, dark cherry, vanilla and plum. The bold tannins are balanced by a richness on the mid-palate making this an approachable red. We chose the most flavorful lots of Estate Grown Tempranillo, Graciano, Tannat and Petit Verdot to create a unique blend that is lush and complex. The Dunnigan Hills appellation is uniquely suited for Spanish grape varietals, like Tempranillo, that thrive in a Mediterranean climate. ©2019 M A The Estate grown grapes were gently crushed within 20 minutes of harvest and fermented in small temperature controlled stainless steel tanks. The must was fermented with a special batch of yeast cocktails that our winemakers use to enhance color and flavor extraction without harsh tannins. A portion of the Tinta de Toro Tempranillo (36%) was pumped over Tannat skins (delestage) twice a day until nearly dry to add weight and a firm structure. 10% of the Tempranillo underwent carbonic maceration to intensify the beautiful aromatics. The wine was then pressed and aged in a combination of French and American oaks barrels for 30 months. The best barrel lots were chosen for this limited bottling to create a wine that is both powerful and refined.
