This four-pack of ‘natural’ California red wines was compiled to give you a little taste of what is known as Carbonic Maceration. This method utilizes CO2 and minimal sulphur to ferment the grapes from the inside out, often resulting in fruitier and lighter wines which are meant to be drunk young— think Beaujolais Nouveau. Keep these chilled and enjoy as the summer turns to fall. Folded Hills RYME “Cluster” 100% Syrah Sangiovese Friulano Santa Maria Valley 2019 Mendocino County 2019 Named after the carbonic (or cluster) fermentation This wine is a bit of a postmodern homage to the old fiasco process which utlizes whole intact clusters of grapes bottled Chianti. Large amounts of white grapes, mostly Trebbiano during fermentation, this is a zesty wine with aromatics of and Malvasia, were once added to Sangiovese in Chianti to soften strawberries, Christmas spice, raspberry, and nutmeg.
