The data upon which the analysis rests was collected through participant observation as well as qualitative interviews and surveys. The first chapter consists of a brief overview of traditional foodways in Newfoundland and Labrador, as well as a summary of the current state of the tourism industry. As well, the methodology which underpins the study is presented. Chapter two examines the historical origins of culinary tourism and the development of the idea in the Canadian context. The chapter ends with a description of Newfoundland and Labrador's current culinary marketing campaign, "A Taste of Newfoundland and Labrador." With particular attention to folklore scholarship, the course of academic attention to foodways and tourism, both separately and in tandem, is documented in chapter three. The second part of the thesis consists of three case studies. Chapter four examines the uses of seal flipper pie in hegemonic discourse about the province and its culture. Fried foods, specifically fried fish, potatoes and cod tongues, provide the starting point for a discussion of changing attitudes toward food, health and the obligations of citizenry in chapter five.

  • Canadian Desserts (Paper).Pdf
Canadian Desserts By Everett “Forget the beaver, forget the glorious maple leaf, forget the haunting loon, for all these years the country has completely overlooked the most important contribution to our identity as a nation, the butter tart. The delicate crust supports the rich and creamy center just as the oceans border our natural resources and the people and the animals that dwell here.” (The Canadian Encyclopedia). There are many different opinions on what Canada’s best most iconic dessert is, and most opinions vary from province to province. The most recognizable desserts have varied from era to era. Many factors have contributed to the identity of Canadian desserts. Canadians love a good dessert which has evolved over time, some desserts are the most popular and each popular dessert has a reason why it's considered Canadian. Today in Canada there is a wide selection of desserts to choose from but the most recommended desserts will change depending on what province you are in. On the east coast the butter tart is the most popular dessert. on the prairies the flapper pie is all the rage but in British Columbia the Nanaimo bar reigns supreme. The Nanaimo bar is Canada’s favorite confection as declared by a readers poll in the national post in 2006. There are many reasons why the Nanaimo bar is so popular; one reason is that it is named after the city of Nanaimo, British Columbia. Another reason is that it has been around for so long and it's kind of grown on people. But the most popular dessert might vary from person to person or some people might believe that butter tarts are better with raisins or they are better without.

  • A Short History of the Butter Tart(1) Copy
A Short History of the Butter Tart This recipe is thought to be the first printed recipe for what we now call butter tarts. It was simply called a “filling for tarts”. The recipe was written by Mrs. Malcolm McLeod around 1902. It was published in a cook book put out by The Women’s Auxiliary of the Royal Victoria Hospital in Barrie, Ontario. Mrs. McLeod could not have predicted that the butter tart would become a Canadian icon or that there are now three separate locations that have festivals for butter tarts. They are located in Guelph, the Kawarthas and Midland. The biggest Butter Tart Trail Festival is in Midland and draws about 50,000 visitors who proceed to consume about 150,000 butter tarts. This year’s festival was held on June 9. Midland also hosts the Butter Tart Trot which is a 10 kilometre run that features stations along the way where the runners can consume butter tarts. With the average butter tart topping out at about 600 calories this seems somewhat counterproductive. Mrs. McLeod would probably be very surprised that her “filling for tarts” would become a Canadian icon. Like many icons there is controversy surrounding what constitutes a butter tart. It is polite controversy though. We are Canadian after all. Many of the tarts you will find on the Butter Tart Trail contain things like raspberries, marshmallows or even bacon. These are not butter tarts! If you are a purist you can follow the original recipe as printed in the Summer 2017 issue of Food and Drink or I have included an updated version that is also delicious.
