Traditional Chinese Medicine, or TCM 中醫 (jung1-yi1), includes both herbs and health and wellness practices such as Qi Gong and acupuncture. There are over 300 herbs that are common in Chinese medicinal practice. The effectiveness of traditional Chinese medicine for treating different diseases is debatable, but the goal of using TCM is to regain balance in your body. An extremely common diagnosis in TCM is 熱氣 (nged3-hei1), or sometimes Romanized as yit-hei or yeet-hay in Cantonese. A very common symptom of 熱氣 (nged3-hei1) is sore throat. In TCM, 熱氣 (nged3-hei1), which literally means “hot air” in Chinese, refers to the yin-yang imbalance of a person caused by the hot properties of food. There are some foods, such as those that have hot properties, that trigger this imbalance because excess heat in the system damages the liver. Hot food includes red and black peppers, alcohol, and any deep-fried food, which are spicy, hot, and warming. On the other hand, cool food includes peppermint, which makes you feel cooled and refreshed. Some common remedies to treat 熱氣 (nged3-hei1) are herbal tea and soup. You can easily find herbal tea shops anywhere in Guangdong and Hong Kong. If you live overseas, you can also find them in most Chinese bakeries and in packaged form in Chinese supermarkets. 37 練習 [len3-dib3] Practice I. • La Maison Ladurée
LLLadurée The story of Parisian tearooms is intimately linked to the Ladurée family story.

MASTER THESIS Carolien Potter HASSELT UNIVERSITY FACULTY OF ARCHITECTURE AND ARTS 2014 - 2015 Supervisor: Dr. Katelijn Quartier Tutor: Philippe Swartenbroux PREFACE The first words of my thesis I would like to dedicate to those who have supported me during the project, even when I was 10.000 kilometres away from them. First and foremost I would like to thank my supervisor Dr. Katelijn Quartier for her honest advise and feed- back throughout the research project. Secondly I would like to thank Philippe Swartenbroux, for the nu- merous tutorials, clever suggestions and motivating inspirations. Many thanks for letting me see that the solution was often right in front of me. Furthermore I would like to thank everyone who made it possible for me to go to Hong Kong in the first place, as well as my friends who showed me the city and the outlying island, as if I were a local. Also many thanks to those who helped me make my trip abroad a whole new experience. And last but not least I want to thank particularly my boyfriend Domien, for the love and patience during the project, as well as my friends and family for their encouragements and support when I needed it the most. ABSTRACT Even from the times before Marco Polo travelled and documented his travels to Asia, there has been an interest in other unknown countries to write about it and to show others the interesting and different customs from those cultures.

Hong Kong-style milk tea originates from British colonial rule over Hong Kong. The British practice of afternoon tea, where black tea is served with milk and sugar, grew popular in Hong Kong. Milk tea is similar, except with evaporated or condensed milk instead of ordinary milk. Hong Kong-style milk tea is made of a mix of several types of black tea. A good cup of milk tea has to go through a series of process including boiling, filtering, mixing….then a perfect portion of Black & White evaporated milk adds the final tone. Enjoy the smooth and tasty milk tea – the real taste of Hong Kong! The Chinese name of Custard Crust Bun “pineapple bun” made a lot of people thought there is pineapple in the bun. However, the name only implies that the crust of the bun looks like a pineapple. A piece of good quality butter is the perfect companion for a fresh from the oven Custard Crust Bun. This motif reveals itself in this year’s specialties, alongside other inspired creations imbued with well-wishes for bliss, prosperity and togetherness. Designed to serve smaller groups, the newly created dishes are ideal for sharing meaningful moments of warmth with one’s closest kin.” The quintessential starter for auspicious feasting is the spectacular Premium Gold Rush Salmon Yu Sheng (pictured above), meticulously arranged into an image of the spirited bull, while families with younger children will delight in the special children’s version, arranged into an endearing representation of a playful calf. Fresh ingredients are elevated by champagne jelly, shallot oil and kumquat dressing, striking a captivating balance of rich and refreshing flavours. The standard Gold Rush Salmon Yu Sheng is presented alongside elegant Chinese calligraphy written by Chef Leong himself. The Gold Rush Salmon Yu Sheng with Champagne Jelly, Shallot Oil and Kumquat Dressing is available in Small (S$78++ for 2 to 4 persons), Medium (S$118++ for 5 to 7 persons) and Large (S$138++ for 8 to 10 persons).
