Sparkling wines Only sparkling wine made in the Champagne region of France may be called Champagne. South African sparkling wines made in the traditional French method (methode champenoise) are referred to as Methode Cap Classiques or MCC’s. Wine that has been impregnated with CO2 bubbles is simply termed sparkling wine whereas MCC’s undergo a second fermentation in the bottle to create the sought after bubbles. Many believe that in 1655 Jan Van Riebeeck took the grape vines from France and first planted the grape at his home vineyard in South Africa. It may be the oldest known type of wine, as it is straightforward to make. When Rosé wine is the primary product, it is produced with the skin contact method. Black-skinned grapes are crushed and the skins are allowed to remain in contact with the juice for a short period, typically one to three days. The must is then pressed and the skins are discarded, not left in contact throughout fermentation as with red wine making. Rosé can easily be paired with poultry, pork or seafood dishes. The wine is usually dry and has fruity flavours of cassis, and dark fruits such as cherries, along with a hint of vanilla that comes from the wine aging in the oak.
