This month’s second recipe features Elanit Aarons-Kravetzky’s Chicken Rice. My mom used to make us this meal for Shabbat, and we loved it! It’s a dish she learned from her mom. It reminds me of a paella dish. The funny thing is my mom is Romanian, and it’s very similar to a Spanish dish. Now I make it for my family on Shabbat, and it’s always a success. Elanit Aarons-Kravetzky’s Chicken Rice Ingredients Directions • 6-8 pieces of chicken • Clean the chicken. I like to take the skin off. • ½ cup olive oil • In a bowl, put the olive oil, minced gloves of garlic, salt, pepper, and red paprika. • Olive oil for sautéing • Cut the pepper into small cubes and place on bottom of a pan. • 3-4 cloves garlic • Dip each chicken piece in the olive oil mixture and place on top of the pepper. • 1 red, orange, or yellow pepper • Place the pan in an oven and broil on high until both sides are brown. • 1 small to medium onion • Keep an eye on the oven so the chicken doesn’t burn. • 1 carrot • In the meantime, cut the onion and fry it in oil until golden brown. • 2 cups of rice • Shred the carrot and add to the onion and fry a few more minutes until soft. • Salt, pepper, red paprika • Put the onion and carrot aside until the chicken is brown on both sides. • Boil 4 cups of water and add the onion and carrots, rice, salt, and pepper. • Then right away, not letting it cook yet, add it to a big chicken pan with a cover. • Place the chicken with the peppers on top of the rice, carrots, onions and water. • Put it in a 350-degree oven for about 30-40 minutes. • You will have a delicious chicken rice dish that is very colorful and tasty!
