Crossroad was founded in 2013. 4. Crossroad is a family business engaged in the manufacturing of wine infused dairy and non-dairy ice cream in connection with the trademark WINECREAM. 5. In 2013, a family member shared a suggestion they had from a server to pour wine over ice cream. We found it to be a delicious dessert. 6. Sometime later at a family home gathering, members of my family and I searched the internet for “wine ice cream” and found several recipes to make a wine and ice cream combination dessert. 7. I have personally researched the internet and seen wine ice cream used generally by people when referring to a product that contains wine and ice cream. 8. Exhibit I attached is a set of internet pages I researched and took screen shots of that reflect the results of my search on the internet for third party usage “wine ice cream.” 9. These internet printouts are recipes for wine ice cream by food bloggers and food and beverage companies. 10. These printouts are internet pages of third parties’ usage of the phrase wine ice cream to refer to their wine infused ice cream products. 11. These printouts show the phrase wine ice cream used to describe a wine infused ice cream on menus advertised by food and beverage companies other than the Mercer’s. 12. It took a few tries for my family and I to learn how to make a wine infused ice cream dessert in a manner that the ice cream would stay frozen and the flavor of the wine would come through so that we could sell it commercially.

Our mantra for this recommended pairing: You must keep an open mind.

It’s supposed to be summer, right? And during summer shouldn’t we all give ourselves a little treat every now and then?

We think so.

After reading the June 10 food page, we started thinking about ice cream and wine and how we could marry the two.

Over the years of tasting many glasses of dessert wine — from bone dry to sugar encrusted — there were occasions when it was suggested to pour the sweetest or the most fruit-forward over ice cream.

It’s a great idea, but there’s one rule that should never be broken when considering ice cream and dessert wine: The wine you pour over the ice cream should be as sweet as, or sweeter than, the ice cream.

In the late 1980s, Joann Bentryn of the famous Bainbridge Island Vineyards and Winery strawberry wine, suggested pouring their delightful dessert wine over ice cream.

The fruit-forward flavor of the strawberries is a great topping to a creamy vanilla ice cream.

A few years later, winemakers started adding chocolate to their dessert wines — combining wine and chocolate in a bottle. Deco, a port-like wine, also has chocolate in it. These too encourage pouring the wine over a good vanilla ice cream.

(To clarify, when describing flavors in wine, experts may say it tastes like raspberries or chocolate, but it doesn’t mean they actually exist in wine. That’s the beauty of a grape, it’s a mimic.)

Chocolate in wine might not hit the mark for everyone’s sweet tooth. Luckily for the non-chocolate lovers out there, there’s plenty of pure berry dessert wines — like the Bentryn’s strawberry wine — to choose from.

Randall Graham has a Bonny Doon raspberry dessert wine and Samson Estates Winery has a selection of berry wines like its Blu, a wine made from Northwest blueberries. They also have a selection of other dessert wines that they recommend pouring over ice cream.

These wines are made without grapes, which means the tannic acid found in grape skins is also absent. Without the tannic acid, the wines should be had sooner rather than later — so don’t wait for that special occasion.

The sweetest wine on the planet is from a grape called Pedro Ximenez. PX is a very sweet fortified style of wine from Jerez, Spain. Most sherry houses make a PX, as it is known. Its caramel, nutty flavors make this match delightfully perfect for a creamy scoop of vanilla — or a scoop of chocolate if you’re longing for that chocolate infusion.

So the next time you want to give yourself a summer treat, consider a grown-up version of ice cream with a dessert wine topping.

Many people may not know that wine is often used as an ingredient in a variety of dishes, including appetizers, main courses, and desserts. It gives food a rich flavor and aroma, making it popular amongst chefs all over the world.

Cooking with wine doesn’t have to be difficult. In fact, this recipe is about as simple as it gets and can be made from the comfort of your own home, using only a few ingredients and common items found in most kitchens.

If you’re a fan of wine and ice cream, you will definitely love this dessert that combines the two. So without further ado, let’s get started!

Ingredients you will need

Sweet fruity wines work best in this recipe because they blend well with the berries that are also included. You can use either red or white wine, depending on your own personal preferences. Some fantastic wine choices include our 2014 Merlot, 2015 Chambourcin and Country Bloom, to name a few.

You will need a one cup serving of the wine that you choose. Because we are making ice cream, you want to use chilled wine. You can either chill a bottle in an ice bucket or grab one from your wine freezer (as a side note, check out these reviews if you are on the lookout for a wine cooler that can store both red and white wine at different temperatures).

Together with the wine, you will also need:

▪ a cup of granulated sugar ▪ two cups of cold heavy whipping cream ▪ two tablespoons each of corn starch and dry milk powder ▪ a teaspoon of salt ▪ the scrapings from two vanilla pods (or 5 drops of vanilla essence) ▪ a cup and a half of mixed pureed berries (fresh or frozen)

Preparation method

Place the wine, sugar, corn starch, milk powder, salt and vanilla into a bowl and use a whisk or spoon to stir everything together. This should take a minute or two, after which you will be left with a homogenous liquid.

To this, add the wine mixture and pureed berries. Use the hand mixer once again to thoroughly combine the whole lot of ingredients together.

Finally, pour this mixture into an old ice cream container or other plastic container and allow it to cool overnight in your freezer.

And that’s all there is to it, your homemade wine flavored ice cream will be ready for you to enjoy the next day. This ice cream is an excellent dessert to serve at parties and get-togethers, so be sure to share it with friends and family, especially those who love wine!

July 2, 2017 at 3:34 pm I used blueberry wine, frozen blueberries, and only half the salt although I contemplated leaving it out altogether. I tasted the mixture before adding the salt. Adding half of it did make the mixture ever-so- slightly saltier and I don’t think it improved the flavor. I am a little confused about some of the ingredients. I wonder why cornstarch is used; it only thickens liquids when cooked. I don’t understand how much 5 drops of vanilla extract is. When searching on-line for the equivalent of vanilla extract to substitute for the beans, I found differing opinions varying from 1t. to 2T! I opted for 1T. of Madagascar bourbon vanilla extract to replace one vanilla bean. I churned this in my little ice cream maker and let freeze overnight. It had the softness of a soft-serve ice cream and was delicious! This would definitely work with full fat coconut milk.

No specific person has officially been credited with inventing ice cream. One of the first places to serve ice cream to the general public in Europe was Café Procope in France, which started serving it in the late 17th century. The first mention of ice cream in America appeared in 1744, when a Scottish colonist visited the house of Maryland Governor Thomas Bladen wrote about the delicious strawberry ice cream he had while dining there. The first advertisement for ice cream in America appeared in 1777 in the New York Gazette, in which Philip Lenzi said ice cream was almost every at his shop. Early American presidents loved ice cream, too. President George Washington purchased around $200 available day worth of ice cream (about $3,000 today) in the summer of 1790 and also owned two pewter ice cream pots. However, the story that his wife Martha once left sweet cream on the back porch one evening and returned in the morning to find ice cream is definitely not true. Who else is melting in this California heatwave?? I wish I had thought of this genius combination of granita and ice cream, but alas I did not. That credit must go to Sketch in Berkeley, California, where they combine different granita flavors with soft serve ice cream. Brilliant. I’ve added my own twist by making a red wine granita– couldn’t be easier or more refreshing!

Pour half a bottle of red wine (I used a Malbec) into a large baking dish. In a small pot melt the sugar with the water until dissolved. Add the sugar water to the wine and mix to combine. Place in the freezer.

After about 1 hour, or when you start to see ice crystals form on the edges. Using a fork, scrap the icy edges to the center of the mixture. Repeat this process every 30 minutes until you get a whole tray of ice crystals.

The whole process should take about 4 hours. You could even do this the day before and simply assemble the granita before serving. Resist the urge to plant your entire face in the granita. (How gorgeous is the color of the granita? They look like little rubies!)

To assemble the granita, combine one scoop of vanilla bean ice cream in a small glass with a heaping spoonful of the red wine granita.

Serve quickly before it all melts.

Red Wine Granita with Vanilla Ice Cream

Ingredients:

• 1 pint of vanilla bean ice cream

Directions:

A smooth collaboration between Caci’s North Fork and Macari Vineyards delivers a sweet treat.

Consulting winemaker Helmut Gangl travels to Macari Vineyards from Austria each year to oversee production of his famous Block E sweet wine, which has been served at the White House under the Obama and Bush administrations. (Now that’s what I call clinking across the aisle.)

Gangl visits every January, like clockwork, pressing mostly chardonnay and sauvignon blanc grapes that have waited two or three months in Macari’s coolers for their chance to become Block E’s next vintage. But this year Gangl arrived to find his beloved wine had, in Southold, itself become a dessert.

Umbrian chef Marco Pellegrini of the newly established Caci’s North Fork recently made a handmade gelato from Gangl’s sweet wine and paired it with warm braised apple crosticine making for an oddly perfect dessert amid a blizzard.

“We make our gelato — everything — from scratch,” says Pellegrini, who is known for building dishes from the very ground up. “Ninety percent of gelatos are made with a chemical base, so it doesn’t freeze in the freezer. I make the gelato with Block E, fresh eggs, fresh cream, fresh milk and create our neutral ingredient, our base, from water and sugar.” It took the Italian transplant 10 days to create the recipe for Block E gelato, experiments he said ultimately yielded a recipe for any flavor.

Pellegrini’s constantly changing menus means those who wish to taste his Block E gelato had best hightail it to Caci’s on an upcoming Thursday through Sunday; the same applies to

Mattituck’s Macari Vineyards — named Winery of the Year in 2014 by the New York Wine & Grape Foundation — less than 20 cases of Block E’s 2010 vintage remain. Gangl says 2010’s “tropical” edge becomes one of “orange and honeysuckle with a nose of spring flowers” in the 2011 vintage, subtleties strongly extracted in the gelato. “The Block E integration with the ice brings up more flavor and is soft and refreshing in the mouth,” says Gangl. “It’s a real delicious style of ice.”

Ingredients yellow peaches 4 caster sugar 4 tbsp dry white wine 500 ml mint a handful, fresh vanilla ice cream 4 large scoops

Blanch the peaches in boiling water for 1 minute, then skin, stone and slice them thickly. Put the peach slices in a bowl and sprinkle with the sugar. Mix together then cover them with the white wine. Add the mint and put in the fridge for 1 hour so the flavours have time to develop. Remove the peaches from the fridge and drain. Arrange the fruit in 4 individual serving bowls, cover with ice cream and drizzle over any remaining wine to serve. Topic:Food + Wine Recipes

A bill to allow alcohol-infused ice cream, currently banned in the state of Louisiana, to be legally sold in stores stalled for the second time in committee on Thursday, April 10.

After confusion over what, if any, agency would regulate ice cream products that contain ice cream, sponsor state Rep. Marcus Hunter, D-Monroe, agreed to delay a vote on the bill until he could speak to state alcohol regulation officials. It is unclear when the bill might be heard again.

Currently, alcohol-infused ice cream is illegal under the Louisiana's "adulterated foods" statute that also sets out rules for food sanitation. Boozy confectionaries like chocolates with alcohol contents up to 10 percent have been exempted these rules, but ice cream remains. Louisiana is one of only five states that have not removed ice cream from these restrictions.

Hunter's House Bill 471 would do just this -- exempt ice cream from the adulterated foods statute, and, like boozy candies, allow these products to be sold with an alcohol content up to 10 percent. Several companies headquartered in other states, like Mercers that makes wine ice cream and California's Buzz Bar, have expressed interest in selling their product in Louisiana.

But state Rep. Ray Garofalo, R-Chalmette, raised concerns about regulation of the products, noting retailers would not be required to have a permit from the state Office of Alcohol and Tobacco Control to sell the products.

"This to me is an attractive nuisance. This to me is something that is going to attract kids," said Garofalo. "I'm not opposed to selling this. I'm opposed to selling this without regulation by the ATC."

Hunter said he would be willing to amend the bill before it hits the House floor, if lawmakers would just approve it in its current form first. Garofalo and others wanted assurances from Hunter he would work with ATC on the regulation issue.

But state Rep. Ted James, D-Baton Rouge, said lawmakers should be more trusting of their colleagues, noting the ATC has not expressed concern over the proposal.

"If (ATC) had a problem, they'd probably be here kicking and screaming," said James. He said he didn't see the problem with passing out the bar as is.

Steve Duke, who represents Buzz Bar, agreed, noting, "If a kid gets an (fake) ID, he's not going to go after a $5 ice cream bar."

At the end of debate, Hunter agreed to again postpone a vote on the bill to work on the regulation question.

Do you love wine? Boy, do I have the perfect dessert for you – Wine Ice Cream!

This ice cream may be my favorite ice cream I have ever made! I tasted the mixture before placing it in my ice cream maker and it was love at first bite. I made sure to use one of my favorite wines so that I was ensured to have an ice cream that I enjoyed the taste of. Autumn Harvest Winery is located in Chippewa Falls, Wisconsin and is close to our family that lives in Wisconsin. Chippewa Falls is also known for Leinenkugel’s Beer which is where their brewery is located.

Autumn Harvest’s Blue Heaven is a semi-sweet wine, which works perfectly with this recipe. Whatever wine you choose to use I would recommend that you choose a semi-sweet wine that you enjoy.

1. Keep all ingredients cold before combining. 2. Ice cream will be soft right from the machine. 3. Store leftovers in the freezer; they will be firmer than directly from the machine.
