July – Raksha Bandhan – Hindu ‘Raksha’ means ‘protection’ and ‘Bandhan’ means ‘bond’ or ‘tie’ and this festival is celebrated by Hindus all around the world . During this festival a girl will tie a ‘rakhi’ or special bracelet to her brother’s right wrist to protect him from evil. In return, he promises to look after her for the coming year and gives her some money as a present! In Hindu families cousins and friends join in too! The tradition goes back over 500 years when sisters tied rakhis on their brother’s wrists to protect them on the battlefield. It is said to have begun when there was a terrible war between the gods and the demons and the wife of the god Indra tied a rakhi around his wrist to keep him safe. The Beavers might like to make friendship bracelets from plaited coloured wools or a decorated rakhi to give to their friend or a family member at home! Rakhi Equipment: card circles, ribbon or wool, tape, art materials, glitter, beads, sequins, glue o Cut card circles to make the decorative centre of the rakhi – use gold or silver card to make it extra special! o Attach a length of ribbon or wool to the back of the card circle with tape – this will tie around the wrist. o The Beavers can decorate the card circle of their rakhi with felt pens, colouring pencils and glitter, beads and sequins to make it extra special! Murungai Keerai Soup Recipe / Drumstick Leaves Soup Recipe Ingredients Preparation Time : 10 mins Cooking Time : 15 mins Serves: 4 1 Cup of Murungai Keerai / Drumstick Leaves 1 Handful of Small Onion (12 nos) 6 Garlic Cloves (Big) 1 Tsp of Cumin 1 Tsp of Pepper 1 Tsp of Gingelly Oil 1/4 Tsp of Turmeric Powder Salt and Water as needed Method for Murungai Keerai Soup In a mixie, grind all the ingredients except gingelly oil, turmeric powder, salt and water. Heat a pan, add required water about 4 cups, salt, gingelly oil, turmeric powder and ground mixture. -
South Indian Cuisine
SOUTH INDIAN CUISINE South Indian Cuisine is a term used to refer to the cuisines found in the four southern states of India, namely Andhra Pradesh, Karnataka, Kerala and Tamil Nadu. As opposed to North Indian cuisine, there is limited use of garam masala and other dried spices except cardamom, black pepper and turmeric. South Indian cuisine is rice based. Rice is combined with lentils to make wonderful dosas, idlis, vadas and uttapams. These items are glorious and delicious besides being nourishing and digestible (due to the fermenting process). They are combined with sambhar (dal), rasam (tamarind dal), dry and curried vegetable and pachadi (yogurt). Their rice preparations are also masterpieces like biryani from Hyderabad, lemon rice and rice seasoned with coconut peanuts, tamarind, chilies, curry leaves, urad dal and fenugreek seeds. South Indian chutneys are made of tamarind, coconut, peanuts, dal, fenugreek seeds, and cilantro. Meals are followed by coffee. South Indian dals and curries are more soupy than North Indian dals and curries. South Indian cuisine is also hotter. Coconut milk straight from the nut is a common beverage and sight in South India. Coffee is very popular in South India and Madras coffee is popular in South Indian restaurants throughout the world. The South Indian food is a brilliant blend of flavors, colors, seasoning, nutritional balance, fragrance, taste, and visual appeal. PARIMARAL - THE SOUTH INDIAN TRADITION OF SERVING A TRADITIONAL MEAL A typical traditional meal in South India is served on a "Vazhaillai", a freshly cut plantain leaf. The Sappad or food that is served on a banana leaf (even the size of the leaf varies from one community to another) is displayed like an identity card. -

(M.S.), India) Corresponding author: [email protected] Abstract: The Malnutrition is a serious matter of concern among the population of various countries, due to modern lifestyle specifically consumption of rapidly processed fast food. The present situation demands development of products that are rich in mineral nutrients, meet requirement of growth and development and readily acceptable. In this scenario, Finger millet is preferred as foremost choice for required minerals and low calorie diet. In the present work, 64 landraces were collected from Western Ghats of Maharashtra. The collected landraces were analyzed for their mineral contents. The 12 best landraces containing higher amount of minerals, especially calcium and iron were selected for recipes preparation. Seven recipes of finger millet namely Cookies, Idli, Dosa, Laddu, Cake, papad and Sheera were standardized. Standardized recipes and marketed finger millet products namely cookies, papad and biscuits were analyzed for minerals, calcium and iron by using ICP OES. (AOAC 2011.14). Among recipes, cookies retain a good amount of calcium (194.8mg/100gm) and iron (257.49 mg/ kg), while Laddu (194.3mg/100gm) and Cake (123.5mg/100gram) retains maximum amount of calcium.
