WHAT'S COOKING IN YOUR KITCHEN?

Hello Everyone! It seems like the country is a bit shaken up over this year's Lunar calendar. Thanksgiving and Chanukah at the same time! Who would have thought the world would be sharing these two holidays? Even though Chanukah has coincided with Christmas many times, it just seems like people are confused about their Thanksgiving dinner not being the "same old same old" traditional dinner and where do those latkes fit in? My suggestion is make some wonderful homemade applesauce and throw some cranberries in with those apples while they are cooking. If you are having sweet potatoes with your meal; why not make sweet potato (or squash) latkes. The mashed potatoes need not go by the wayside, you can have your latkes and potatoes, too. The latkes do not have to be potato; they could be zucchini, or white winter squash. Both are delicious...as long as they are fried in oil and taste good the traditions stay with us. Oh, and what about apple fritters or fried apples for dessert? It does not seem so difficult to me.

Now, here is something difficult. All summer we were given tomatoes from friend’s gardens. They were a blessing because my Grandson thinks they are apples! I made soup from many of the tomatoes and began to think that weather is really too warm for soup. Who eats soup in the summer? Tomatoes should grow in the fall season so we can have soup on chilly days. Here are two recipes I used and both were very easy and tasty. Although my Grandson preferred to eat them like apples and cherry tomatoes like grapes, we sipped a good bit of soup and sliced a good bit on burgers!

This time of year you might want to splurge on some tomatoes and keep your tummies warmed.

Garden Fresh Tomato Soup 4 cups chopped fresh tomatoes 1 sliced small onion 4 cloves ( I did NOT use cloves) 2 cups chicken broth 2 Tablespoons parve margarine 2 Tablespoons all purpose flour ( I use Wondra flour) 1 teaspoon salt (or to taste 2 teaspoons white sugar (or to taste)

In stockpot, over medium heat, combine the tomatoes, onion, cloves (NOT for Me) and chicken broth. Bring to a boil. Remove from heat and run the mixture through a food mill into a large bowl or pan. Discard any stuff left over in the food mill. (You could use a blender when mixture is cooled a bit).

In the now empty stockpot, melt the margarine over medium heat. Stir in the flour to make a roux, cooking until the roux is medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with salt and sugar (or sweetener) and adjust to taste.

Roasted Tomato Soup 4 lbs plum tomatoes, cut in half lengthwise 1 large onion, chopped 3 gloves garlic, peeled 4 sprigs thyme (only sprinkled a bit of dry thyme, not a favorite spice for Me) 1 Tablespoon olive oil 2 1/2 cups low sodium chicken broth 1/2 cup non dairy creamer

Preheat oven to 350 Arrange tomatoes in a single layer, cut side up on a large baking sheet. Scatter onions, garlic and thyme around the tomatoes, sprinkle with sugar and season with salt and pepper. Drizzle them with oil and roast until vegetables are soft and slightly carmelized.****

Warm broth in large stockpot over medium heat. Add tomato mixture, scraping up browned bits from baking sheet. Bring to boil and reduce heat to med-low, cover and simmer for 20 minutes.

Remove soup from heat, let cool slightly. Working in batches, puree soup in a blender Strain soup through a sieve to extract liquid. Discard all the solids (or you could use your food mill if you have one) (Continued on page 13)

Stir in creamer and reheat soup to a simmer stirring often (do not boil). Season with salt and pepper to taste.

**** At this point in preparation discard fresh thyme sprigs. I did not use more than a pinch of thyme, not a favorite in our house.

When either recipe is ready to serve you can garnish with flat leaf parsley or torn fresh basil leaves. Again, everybody knows the best tomatoes are ripe in gardens, fruitful at fruit stands, farmers markets, and stores in the Summer, but everyone also loves a bowl of sweet taste and smooth textured soup when the weather is cooler, too. (I would not dare to say that canned tomatoes might not be a great substitute, but you didn't hear that from me!)

Wishing you all a beautiful autumn, Happy Thanksgiving-Chanukah Holiday Combo and hope you enjoy your cup of soup...... until next time Meryl
