~Meal Twenty-Six | Part 1~

It’s like the old song goes, “summer’s here and the time is right for… eating like you’re going to the chair.” Maybe that’s not how it goes, but if you’re anything like me, summer is probably when you socialize the most. Socializing, as it turns out, tends to involve a lot of eating, drinking and some more eating. Sharing a meal with someone is personal. Even if nothing is said during that time, information is exchanged. !"#!$#%&!'())*+%&,!-.)/0%&12!3$!4!5556)#%&7())*+%&68.9 There is communion. Taking that idea a step further, what’s more personal than sharing a meal with people you love (or people you’d like to love) that you yourself made? We’ve covered a lot of recipes here in the last eight years, ranging from simple to more complicated. But typically, they’ve all been stand-alone items. With these next three issues of Surrender, we’re going to cover a complete meal: a starter, a main and a dessert. These recipes all come from The Family Meal: Home Cooking with Ferran Adria, a beautiful book by one of the most celebrated chefs in culinary history. The book has step-by-step photos and is laid out as meals as opposed to just stand-alone recipes. Of course, you’re welcome to mix and match; I highly recommend it! Meal Twenty-Six is: fish soup, sausages with mushrooms and oranges with honey, olive oil and salt. All of these recipes will be for six people, but you can easily scale it down to two to four people or up to nine to twelve.

~Fish Soup~ Ingredients: • Garlic cloves: 9 • Olive oil: ! cup • Mix of whole fish already cleaned*: 2 pounds • Sweet paprika: 2 tablespoons • Water: 8 ! cups • Bread (day old is good): 2 ! slices • Pastis (or other anise flavored liqueur): 2 dashes • Sofrito**: 4 tablespoons

Procedure: 9. Process the soup with a handheld blender until smooth. 1. Coarsely crush the garlic cloves with the back of a knife or You could also use a regular blender. a pestle. 10. Summer Camp Music Festival is my home. Surrounded by cornfields and big, blue sky, Three Sisters Park in Chillicothe, outside of Peoria, IL, is a family reunion every Memorial Day weekend. The fest is anchored by hosting bands moe and Umphrey’s McGee, with over 100 other acts of every genre spanning rock to hip hop, bluegrass, electronic and reggae. This year headliners included our own and with their respective bands, joined by Primus, Run the Jewels, and Gov’t Mule. The official food of Summer Camp is empanadas from Manolo’s, a pizza place connected to the Canopy Club music venue in Urbana, IL. The empanadas are a family recipe from the festival owners and you can taste love in each bite. They are flaky, piping hot pockets of joy filled with cheese and corn, spicy roasted chicken, fudgy brownie, or my personal favorite, “manicotti” with spinach, mushroom and ricotta. I have eaten A LOT of fest food over the years and Manolo’s famous empanadas are numero uno. Self-contained, endless varieties, not overly filling (unless you have five or more in one sitting) and totally scrumptious. Field Day is the color wars at Summer Camp, an afternoon of tug-o-war, dodgeball, Twister and more, all surrounded by music. The prize for the winning team is a Goose Island keg party with Manolo’s pizza, the celebration toasted by drinking victory beer from the Stanley-cup style trophy. The annual Field Day eating contest had been a bit of a fiasco in years past - for our first Field Day in 2011, we bought 20 pies, but forgot to bake them… resulting in a semi-defrosted frozen pie eating shit-show. The next year, we went with pizza, but that was too hot. Ditto for empanadas. Next, we tried bananas to avoid temperature problems, but this ended up rather mushy. One kid could swallow multiple bananas whole, skin and all, with one gulp, earning him the Viking name “Thor.” For the seventh-annual games, we had to get it right and, inspired by Trey and Mike, finally arrived at the perfect eating-contest food: donuts! The perfect weekend at my favorite festival had a very sad ending: the worst food poisoning of my life right before Trey, making me miss both sets. No idea what caused it (and it really could have been anything), but I was devastated. There was a bottle of famous pineapple tequila, homemade by the manager of Manolo’s, with my name on it that we never got to drink. But Trey has played Summer Camp three times in the last four years, so here’s hoping TAB will be back for another stacked lineup soon. Summer Camp is a special experience for both the artists and the fans, filled with jam sessions you can’t see anywhere else, sustainability and nonprofit workshops in the Soulshine Tent, and shenanigans like Sunrise Kickball with Ryan Stasik. All year I will be dreaming about that first buttery bite of manicotti empanada that tastes like home.

Like the story frequently goes, I’m blessed to have an older brother ! who is really into both The Grateful Dead and smoking weed. Jerry is still alive. My Mom leaves us alone every other weekend to go to Manhattan. House parties. Maxell XL IIs. Infinite . I was an open vessel longing for corruption. So one night, when a dude named Sven, who co-owned a 1972’ VW Micro-Bus with my brother, hands me a lit joint, heads to the tape-deck and says “Adam King – you need to start listening to fuckin’ Phish,” I was hooked before he even pressed play. The tape? March 22, 1993 – Crest Theatre in Sacramento – Set 2 – Gamehendge. Side note: I remember at the time confusing Phish with Perch, Glen’s band from Real World Los Angeles. Now somehow, despite the show only being four months old, this tape was already like 6th generation. The narration was more muffled than would be tolerable in the digital era. But that didn’t matter anyway, because once that tape came into my possession there was just one song I kept rewinding to – Lizards. I was fortunate enough to have parents with good tastes in music, so Paul Simon’s Graceland had been a staple of my youth. So I can still remember that night, and the first time hearing the chorus kick in on Lizards, and having this immediate soul-jerk reaction to its gracelandicity. And coinciding with that, I can remember the physical grab of infatuation happening in that moment. With that chorus at its’ epicenter, my love and appreciation for Phish spiraled out – into the verses, into the outro, into Gamehendge, into stacks of tapes, into concerts, into this integral part of my core being, further and further out and up through the galactic rabbit hole. It was a catalyst moment of my life. But alas, my Crest Theatre tape came with no case! For a solid two years, I sort of embraced this blissful ignorance of not knowing what my favorite Phish song was called. I couldn’t seem to find it on any of the albums. In fact, I remember buying the day it came out on double-cassette, and seeing that Tape 2, Side A only had two songs: Wilson and Tweezer. Since the playtime was 36 minutes, I presumed that Wilson must be the name for the collection of songs I had on that Sacramento tape, (as I recognized Wilson’s name being mentioned throughout the set.)Well believe me, the only thing that can make that Bangor Tweezer any more abrasive is listening to it with the youthful anticipation that it’s going to drop into Lizards at any moment. Let’s just say it was an early lesson in the dangers of preconceptions when it comes to listening to Phish. Don’t worry though, I figured it out eventually.

! TAB opened the second leg of their extensive spring tour on a warm, rainy Thursday night in Philadelphia, and a good time was certainly had by most. Their Philly Fillmore debut consisted of two well-paced, varied sets of originals spanning the entire length of Trey’s solo career, as well as a few staple covers peppered throughout the second set. What a present-day TAB show may lack in unpredictability, it more than compensates for in consistency- the band was, on this particular Thursday, vacuum-sealed tight, with each member taking standout turns. A Sand opener always bodes well, coming out of the gate with high energy for the capacity crowd. First set provided a nice balance between the funky, up-tempo Afrobeat stylings of early-TAB classics (Mozambique, Curlew’s Call, and a particularly greasy, fully-developed take on Gotta Jibboo) and the moodier, more song-driven later compositions (Sometime After Sunset, Pigtail, Valentine). Ray Paczkowski was particularly inspired on the keys, which led to some big smiles from the band and crowd alike, and the rhythm section was firing on all cylinders as usual. Second set opened with a rather potent one-two combo of a pretty take on Drifting and an especially wild Night Speaks To A Woman, with the latter cresting into a raucous peak that had the sweaty, capacity crowd shaking a great many tailfeathers. From there they tore into Leon Russell’s Delta Lady, the first of four well-curated covers to grace the second set. After ceding most of the first set’s transcendent moments to the rhythm section, the horns took figurative center stage through the second (See TREY Con’d on Page 28)

Summer time… and the living’s easy! Here we go, everyone, on yet another

fun filled Phish summer tour! Although this year’s tour is less tour-y than usual, with more than half of the season’s scheduled shows happening at one single venue, but it is inarguably summer, and definitely Phish! This first of three Surrender to the Flow issues focuses on the Midwest portion of this year’s shows, that is, the five shows that are in Chicago, Dayton, and Pittsburgh. This is the most typical, old-fashioned style tour portion of Summer Tour 2017, and will be fun and easy for both road- warriors and non-road-warriors alike. The drives are short and sweet, beginning with a three night stand in our country’s third biggest city, followed by two single night visits to two smallish, friendlish, lots-of-heart sort of cities, at small, indoor, college owned and operated venues. Who knows what will unfold during the next few weeks? The possibilities are endless, and the memories are sure to stick with us forever, so get ready, get out there, put on your dancing shoes, get excited to greet old friends and make some new ones, and prepare to rage, laugh, dance, and experience another unforgettable summer with our favorite band on earth! Chicago is a great city, a great place to see Phish, and a great place to start Summer Tour 2017! This city has really grown on me during Phish 3.0; after only playing within the city limits a handful of times during late 1.0 and 2.0, the Windy City has become a frequent and regular stop on summer tours of this era, and that, plus 2015’s Fare Thee Well weekend, has given many of us out-of-towners a newfound familiarity and love for this Midwestern metropolis. Phish has, in fact, played in Chicago every summer tour except two in 3.0 – 2012 and 2015 – at four very different venues. This will be their third time playing on Northerly Island, after visits in 2013 and 2014, plus two visits to the suburb of Bridgeview’s Toyota Park in 2009 and 2010, a three-night run at University of Chicago’s UIC Pavilion in 2011, and of course their run last year at historic Wrigley Field. Between memorable shows at these venues – a baseball field, a soccer stadium, an indoor college arena, and a giant outdoor venue on the shores of - many of us who have visited Chicago for Phish shows have left a little more impressed by this town each time. There’s so much to do, the people are friendly, the architecture is spectacular, and the food is fantastic! Make sure you take some time to explore this city and it’s uniqueness during the run if you can during our three days and nights here, but also pace yourself for full immersion in three nights of Phish! Our band will likely be firing on all cylinders for this summer opening three-night-run, so you better be too! It’s hard to say what will happen here during this run, but Phish certainly loves playing in Chicago so expectations and hopes are high. Dayton! This was a huge surprise to pretty much everyone when this venue in this city appeared on the list of Summer Tour 2017 dates, but here we go! Phish has not played at the Erwin J. Nutter Center since 1997, on 12/7/97 to be exact. That show has gone down in history as amongst their most famous, actually, thanks to bust outs like (last played in 1993) and Boogie On (last played in 1988), and for being one of the best examples on record of true 1997 cow funk. Few know that Phish played at The Nutter one other time though as well, just two years earlier, on 11/30/95; it was another, less well known show, that was also quite a heater and is certainly worth checking out if you haven’t already. This relatively small venue was completed in 1990 and is named for local businessman and inventor, Erwin J.Nutter, who donated $1.5 million to Wright State towards the arena’s construction; the rest of the cost, $8 million additional, was covered by the university and the state of Ohio. It was built in twenty months, and since its opening, it has mostly hosted Wright State Rangers basketball games, but has also been home to indoor football teams the Dayton Warbirds and the Dayton Bulldogs, world basketball league’s Dayton Wings, and mid-level professional hockey team the Dayton Bombers. Further, it has hosted a wide variety of WWE events, political speeches, Science Olympiad finals, and concerts, and the Harlem Globetrotters have performed at the Nutter Center every New Year’s Eve since at least 2005. Dayton is the sixth largest city in Ohio with approximately 140,000 residents and is most well known for its interest in and contributions to aviation and aerospace. A great deal of research takes place at Patterson Air Force Base that has lead to many technological innovations in flight and space exploration; also, Orville Wright was born in Dayton, and the Wright Brothers’ patent for the invention of powered flight was filed here. Pennsylvania is hardly the Midwest, but for all intents and ! purposes for this issue of Surrender, Pittsburgh is. This is the last stop on the Midwestern leg of Summer Tour 2017, with the remainder of tour proper bringing fans to NYC for thirteen shows over seventeen nights at Madison Square Garden. This venue is new to Phish, and therefore new to most of us, and judging by pictures alone, it looks pretty cool! It was completed in 2002 and is owned by the University of Pittsburgh, and is home to the school’s basketball team, the Pitt Panthers. Phish has played within the city of Pittsburgh five times prior to this visit, with stops there in 1992, 1993, 1994 (x 2), and 1995, but they haven’t been there since; for many years, nearby Burgettstown (~25 miles to the west) was a regular stop on their summer tours, but they haven’t even visited that town’s Star Lake Amphitheater since 2012! Southwestern Pennsylvania is therefore extremely ready for a Phish show, and it’s always fun to check out a new venue – as it’s a blank slate for everyone involved – and this, random, Wednesday night show is likely to be a good one! This show marks the end of shows covered in this issue, and the end of the true “touring” portion of this year’s summer tour – so have fun – stay safe- and get ready for the Baker’s Dozen ahead!
