Les Caves De Pyrene Started Trading in 1988, and in the Last 24 Years LES CAVES DE PYRENE Independent Wine Importer Les Caves de Pyrene started trading in 1988, and in the last 24 years, has established itself as a leader of distribution to the On-Trade in the UK, and also selling to private customers from our store in Guildford. Putting out mission statements tends to erode credibility, but as the song goes, we want to accentuate the positives and eliminate the negatives in our list. Those positives that we aim to promote are: wines of terrior and typicity; delicious, tasty, unmediated wines; diversity of style and indigenous grape varieties; endeavours of small independent growers; and the importance of sustainable, organic viticulture. We work from the point of view of understanding the wine by trying to understand the country, the region, the microclimate, the vineyard and the grower. Every wine tells a story and that story deserves to be told. Our achievements within the trade has been well documented in the trade press, and, over the last few years we have also won, amongst other things, French Merchant of the Year, Italian Merchant of the Year, and Best Wine List at the International Wine Challenge Merchant Awards, culminating last year when we won On-Trade Merchant of the Year, Loire specialist of the Year and Regional France Merchant of the Year, and Decanter Specialist Wine Merchant of the Year 2011. Just fewer than 40 people work for us in the UK and the majority of our stock is kept in a warehouse in East London from which we distribute to our customers across the UK. We have extensive experience in distributing to the on-trade, working with over 800 restaurants in London alone, but also nationally with customers as far afield as Cornwall and the Outer Hebrides. Above anything we believe in the quality of our wines, but also work very closely with our customers to gain the best possible understanding of their requirements, and to provide them with the best possible understanding of the wines. Parallel Venues clients • A choice of over 1,500 wines • Sale or return • Free delivery and collection of returns from Fetcham Park & Cams Hall • Free tasting at Les Caves de Pyrene, Guildford • Expert advice, including food and wine matching Some of the restaurants we supply Arbutus (Michelin *) Locanda Locatelli Artisan and Vine Marcus Wareing at the Savoy Baglioni Hotel Maze (Michelin **) The Boundary Momo Boxwood Café Petrus (Michelin **) Chez Bruce (Michelin *) Pied-a- Terre (Michelin *) China Tang at The Dorchester Richard Corrigan - Mayfair (Michelin *) The Dorchester River Café Claridges (Michelin **) Simpson’s, Birmingham (Michelin *) Club Gascon Sketch (Pierre Gagnaire) Cellar Gascon St Alban Le Cercle The Fat Duck (Michelin ***) Connaught The Glasshouse Drakes -Ripley (Michelin *) The Ledbury Fifteen The Orrery Galvin Bistrot de Luxe The Square (Michelin**) Galvin at Windows (Hilton Hotel) The Wolesley Gordon Ramsay at Royal Hospital Road Tom Aikens (Michelin **) (Michelin ***) Tom’s Kitchen Hakkasan (Michelin *) Villandry Hambledon Hall (Michelin *) Waterside Inn (Michelin ***) J Sheekey Yauachta (Michelin *) La Trompette (Michelin *) Zuma (Michelin *) Le Gavroche (Michelin **) 36 On The Quay (Michelin *) Example prices Country of Origin Vintage Cost Champagne Inc Vat Jean Paul Deville Carte Noire - N/V £19.58 Philipponnat Royale Reserve Brut - N/V £27.50 Ruinart R de Ruinart Brut - N/V £32.72 Laurent Perrier Rose Brut - N/V £48.08 Sparkling Wine Cava Domino de Tharsys Nature Spain N/V £8.52 Prosecco Bellenda Italy 2014 £12.24 Vouvray Brut Champalou France N/V £13.44 White Wine Crisp, Dry & Refreshing Touraine Sauvignon Guy Allion France 2014 £7.98 Lorenzo Verdicchio Gino Italy 2014 £9.42 Framingham Sauvignon New Zealand 2014 £11.22 Sancerre la Vigne Blanche France 2014 £14.34 Floral, Aromatic & Delicate Villa Vieja Chenin - Torrontes South Africa 2014 £6.60 La Boussole VDP d’Oc Viognier France 2013 £7.68 Gewuztraminer Bodegas Pirineos Spain 2013 £9.90 Riesling Kabinett Donnhoff QBA Germany 2013 £14.34 Mediterranean & Southern Europe Pinot Grigio Trefili Italy 2014 £7.08 Vinho Verde Afros Portugal 2014 £11.28 Soave Tamellini Superiore Italy 2013 £10.98 Albarino Abadia San Campio Spain 2014 £12.48 Classic Burgundy & Richer Fuller Whites Chardonnay Estate de Martino Chile 2014 £7.44 Chenin Blanc Vinum South Africa 2012 £9.78 Gendre Cuvee des Conti France 2013 £10.38 Chablis Gerard Tremblay France 2013 £11.94 Country of Origin Vintage Cost Rose Wine Inc Vat Montepulciano Rosato Masciarelli Italy 2014 £8.22 Cotes de Provence Rose, Cuvee Elegance France 2014 £9.30 Red Wine Delicate, Fruity & Light Gaillac Rouge Cuvee de Drilles France 2013 £8.16 Gamay du Touraine, Henri Marionnet France 2013 £9.54 Good Hope Pinot Noir South Africa 2012 £10.80 Morellino di Scansano Bellamarsilia Italy 2013 £9.96 Ripe, Savoury & Spicy Moulines Merlot France 2012 £7.68 Montesc Rioja Spain 2013 £7.50 Cote du Rhone, Domaine Chapton France 2013 £9.24 De Martino Legado Syrah Chile 2012 £9.66 Firm with Good Structure Santa Julia Organica Malbec Argentina 2014 £7.56 Carignan Bodega Cecchin Argentina 2012 £8.15 Chianti Colli Senesi Italy 2011 £10.20 Cahors Chateau du Cedre France 2011 £14.58 The Classic Reds Lussac-Saint Emillion Chateau la Claymore France 2010 £13.44 Hacienda Grimon Rioja Reserva Spain 2005 £17.22 Clos Henri Pinot Noir New Zealand 2012 £21.96 Savigny Les Beaune 1er Cru Les Serpentieres France 2012 £22.98 Sweet Wine Muscat de Rivesaltes Chateau de Jau 50cl France 2011 £10.68 Banyuls Chateau de Jau 50cl France 2011 £10.74 CONTACT James Board 07584 086 298 www.lescaves.co.uk [email protected].

I am thus a happy cook! My inspiration comes from a combination of the Southwest of France, where I grew up and from the Mediterranean, which seduced me from a young age. But I also remain a curious cook. My roots carry me but do not hold me down. My arrival in Monaco was a magical and momentous moment in my life. It is on this rock, nestled between France and Italy that I encountered my Riviera. I know today that this land was my destiny. All my cooking is inspired from this area that sings sunlight. From it, I draw strength and truth. « Riviera »: the word alone echoes a certain invitation to dolce farniente. However, the Riviera is a land of farmers and breeders who, historically, have toiled to bring abundance from an arid land.

  • London Food Guide: 2
A Short Guide To London Restaurants By Kit Hume, Rob Hume, and Judy Milhous 15th Edition Revised July 2009 What follows was originally written in 1984 after a year’s sabbatical in London. It has been revised every couple of years since then, reflecting our experience dining out several times a week during a sabbatical from August 1990 to August 1991, half a year in 1995, sabbaticals in 1997-98 and 2004-05, and numerous short visits in the intervening years. The basic organization of this guide is geographical. Some of the restaurants are new to this edition; others have been in since the original 1984 edition, and have been revisited with pleasure every year since then. We retain a few places we have not visited recently because friends have enjoyed them and The Good Food Guide continues to rate them highly. If you look for an old favorite from our previous guides and no longer find it listed, it has probably perished. Rodos closed in the spring of 2003: second generation owners failed to keep it viable. Poons is no more. We still sigh over both those extinctions. Note that Chez Nico and La Tante Claire passed into memory when their chefs retired. Prices are given in current British pounds, the £ being worth roughly $1.65 at the time of writing. London continues to be a fantastic place to eat out, but inflation and the mediocre exchange rate have made it less of a bargain. One of the best buys in London is still Indian food. If you are unfamiliar with this cuisine (and Indian menus can be dauntingly unhelpful), see the Appendix for some basic definitions and explanations.

The Flavor Thesaurus A Compendium of Pairings, Recipes and Ideas for the Creative Cook Niki Segnit It seems fitting to dedicate this book to a pair: my cooking adviser and mother, Marian Stevens, and my writing adviser and husband, Nat Segnit. These combinations have the quality of a logical discovery: bacon and eggs, rice and soy sauce, Sauternes and foie gras, white truffles and pasta, steak-frites, strawberries and cream, lamb and garlic, Armagnac and prunes, port and Stilton, fish soup and rouille, chicken and mushrooms; to the committed explorer of the senses, the first experience of any of them will have an impact comparable with an astronomer’s discovery of a new planet.” John Lanchester, The Debt to Pleasure Introduction I hadn’t realized the depth of my dependence on cookbooks until I noticed that my copy of Elizabeth David’s French Provincial Cooking had fingernail marks running below the recipes. Here was stark evidence of my timidity, an insistence on clinging to a set of instructions, like a handrail in the dark, when after twenty years of cooking I should surely have been well enough versed in the basics to let go and trust my instincts.
