    On 20 March 2019 we asked people across the UK to capture the arrival of the first official day of spring and help create a crowd-sourced nature diary. More than 400 people did just that from across the four corners of the UK – celebrating this season of colour and the natural world coming to life. The following pages are a selection of the entries curated by the writer Abi Andrews. Introduction n 2018, my spring was spent in a caravan, in a glade in view of Carningli mountain, Itopped by a rocky grey outcrop with purple heathers, confettied below with vivid yellow gorse. The caravan sat within the Pembrokeshire Coast National Park, in an area that saw an influx of ‘back-to-the-landers’ during the seventies. In it you will find covert, sympathetically built dwellings and cooperative human communities in repurposed farmhouses, lying between woods of bent, blackened oaks, their flamboyant colonies of lichens, and boulders covered with soft and ecstatic mosses. On the moors are strange, stunted Welsh horses, their silhouettes hunched like the simplified animals of Neolithic rock art. Clear spring water gurgles up and silvers everything, running brown through the taps after a heavy rain. At night, owls call to each other. In spring 2019, I was the most attentive to the living world that I have ever been, for the transition of a season. I grew up in suburbia, and moved soon after to a city. Living closer to the land has offered me an anchoring, in noticing the seasons more: the fatigue that comes with winter darkness, the processing of firewood for next year, the harvesting of food — being reminded all the time of the future by preparing for it.

    USE OF NATURAL COLOURS IN THE ICE CREAM INDUSTRY Dr. Juan Mario Sanz Penella Dr. Emanuele Pedrazzini Dr. José García Reverter SECNA NATURAL INGREDIENTS GROUP Definition of ice cream Ice cream is a frozen dessert, a term that includes different types of product that are consumed frozen and that includes sorbets, frozen yogurts, non-dairy frozen desserts and, of course, ice cream. In order to simplify its classification, we can consider for practical purposes two different types of frozen desserts: ice cream and sorbets. Ice cream includes all products that have a neutral pH and contain dairy ingredients. While sorbet refers to products with an acidic pH, made with water and other ingredients such as fruit, but without the use of dairy. Additionally, when referring to ice cream, we are not referring to a single type of product, we are actually referring to a wide range of these. Ice cream is a food in which the three states of matter coexist, namely: water in liquid form and as ice crystals, sugars, fats and proteins in solid form and occluded air bubbles in gaseous form, Figure 1. Artisanal ice creams based on natural ingredients which give it its special texture. It should be noted that ice cream is a very complete food from a nutritional point of view since it incorporates in its formulation a wide range of ingredients (sugars, milk, fruits, egg products ...) essential for a balanced diet. Another aspect of great relevance in the manufacture of ice cream is the hedonic factor. Ice cream is consumed mainly for the pure pleasure of tasting it, the hedonic component being the main factor that triggers its consumption, considering its formulation and design a series of strategies to evoke a full range of sensations: gustatory, olfactory, visual and even, of the touch and the ear.

In rodents, the brown adipose tissue is under the control of sympathetic signals originating in the hypothalamus. However, the putative connection between the depots of brown/beige adipocytes and the hypothalamus in humans has never been explored. The objective of this study was to evaluate the response of the hypothalamus and brown/beige adipose tissue to cold stimulus in obese subjects undergoing body mass reduction following gastric bypass. SUBJECTS/METHODS: We evaluated twelve obese, non-diabetic subjects undergoing Roux-in-Y gastric bypass and 12 lean controls. Obese subjects were evaluated before and approximately 8 months after gastric bypass. Lean subjects were evaluated only at admission. Subjects were evaluated for hypothalamic activity in response to cold by functional magnetic resonance, whereas brown/beige adipose tissue activity was evaluated using a (F 18) fluorodeoxyglucose positron emisson tomography/ computed tomography scan and real-time PCR measurement of signature genes. RESULTS: Body mass reduction resulted in a significant increase in brown/beige adipose tissue activity in response to cold; however, no change in cold-induced hypothalamic activity was observed after body mass reduction.
