Our way of serving tea is inspired by the traditions of the Orient. And as these vary so much, here is a little guide to the basic principles which the Czajovnia observes: - unless otherwise stated, teas which are fully fermented, scented and flavoured, such as representative examples of half green and green teas are served in teapots h contain a minimum of 350 ml. - teas of more than one pouring, unless otherwise stated, are served in different teapots identified by the symbol e or a and contain a minimum of 300 ml.     AFTERNOON TEA Afternoon Tea ~ A brief history Nobody knows the exact origins of the afternoon tea but one lady features in all theories, Anna, Seventh Duchess of Bedford (1783-1857), Lady-in-waiting to Her Majesty, Queen Victoria. Traditionally, dinner was not served until 8.30 or 9.00 in the evening and the Duchess often became hungry, especially in the summer when dinner was served even later. Every afternoon, she experienced a “sinking feeling” and requested sandwiches & cakes between 3pm & 4pm in the afternoon. Soon others followed the Duchess’ lead. In 1842, a well-known actress named Fanny Kemble heard of afternoon tea, and began to invite some guests to join her. Soon all of fashionable London was sipping tea with a variety of sandwiches on the side. The custom of “taking tea” in the afternoon had become well established, along with a complex set of rules and etiquette. Afternoon tea prices are subject to change for special occasions.     Tea Industry Introduction The Indian tea industry is nearly 200 years old. Robert Bruce, a British national discovered tea plants growing in the upper Brahmaputra valley in Assam and adjoining areas. In 1838, Indian tea that was grown in Assam was sent to the UK for the first time, for public sale. Tea in India is grown primarily in Assam, West Bengal, Tamil Nadu and Kerala. Apart from this, it is also grown in small quantities in Karnataka, HP, Tripura, Uttaranchal, Arunachal Pradesh, Manipur, Sikkim and Meghalaya. India has a dual tea base, unlike most other tea exporting countries. Both CTC and Orthodox tea is produced in India. The tea industry is agro‐based and labour intensive. It provides direct employment to over 1 million persons. Through its forward and backward linkages another 10 million persons derive their livelihood from tea. In Northeast India alone, the tea industry employs around 900,000 persons on permanent rolls. It is one of the largest employers of women amonst organized industries in India. Women constitute nearly 51% of the total workforce. The tea estates in the North Eastern India are located in industrially backward areas. Tea being the only organised industry in the private sector in this region, people outside the tea estates have high expectations from the industry. The three most distinct known varieties of tea in India are: a) Assam tea (grown in Assam and other parts of NE India) b) Darjeeling tea (grown in Darjeeling and other parts of West Bengal) c) Nilgiri tea (grown in the Nilgiri hills of Tamil Nadu) Objective Through this dissertation project, I intend to study, with respect to the CIS nations and the United Kingdom that serve as the foremost export markets, the Indian tea industry in detail, the trends observed in the past, the highs and lows of export volumes to these countries and the reasons behind them, as well as future prospects on where Indian would stand in the global arena.

XYZ dish method developed by us was a simple and fast method for antioxidative activity of tea in normal drinking conditions. Thirty kinds of commercial tea products and 54 kinds of tea materials were examined. Tea products containing green tea leaves showed much stronger activities than other teas. Activities by XYZ dish method" exhibited a high correlation between catechin by HPLC and DPPH radical scavenging activities. These results suggest that XYZ dish method was reliable for antioxidative evaluation of various tea products in normal drinking conditions. Leaf, rhizome, grain and fruits ofherbs and medicinal plants were processed into tea products in small regional factory. Due to this health-benefit effect should be evaluated. A number of researchers have reported on the free radical generation in our body and its mediation to several diseases and cancer, for example, diabetes melitalis, arteriosclerosis and cardiovascular heart diseases.     Tea Overview Tea-a beverage made by steeping processed leaves, buds, or twigs of the tea bush (Camellia sinensis) in hot water for a few minutes Tea is the most widely-consumed beverage after water. It has a cooling, slightly bitter, astringent #avour. The !ve types of tea most commonly found on the market are black tea, oolong tea, green tea, white tea, and pu-erh tea. Tea Culture Tea culture is de!ned by the way tea is made and consumed, by the way the people interact with tea, and by the aesthetics surrounding tea drinking. Tea is commonly drunk at social events, and many cultures have created intricate formal ceremonies for these events. Western examples of these are afternoon tea and the tea party. In the east, tea ceremonies di"er among countries, Japan's complex, formal and serene one being the most known. Other examples are the Korean tea ceremony or some traditional ways of brewing tea in Chinese tea culture. Unique customs also exist in Tibet, where tea is commonly brewed with salt and butter, or in the Middle East and Africa where tea plays an important role in many countries. The British empire spread its own interpretation of tea to its colonies, including places like Hong Kong, or Pakistan which had existing tea customs. Di"erent regions also favor di"erent varieties of tea, black, green, or oolong, and use di"erent #avourings, such as milk, sugar or herbs. The temperature and strength of the tea likewise varies widely. Tea Preparation The traditional method of making a cup of tea is to place loose tea leaves, either directly, or in a tea infuser, into a tea pot or teacup and pour hot water over the leaves.
