XYZ dish method developed by us was a simple and fast method for antioxidative activity of tea in normal drinking conditions. Thirty kinds of commercial tea products and 54 kinds of tea materials were examined. Tea products containing green tea leaves showed much stronger activities than other teas. Activities by XYZ dish method" exhibited a high correlation between catechin by HPLC and DPPH radical scavenging activities. These results suggest that XYZ dish method was reliable for antioxidative evaluation of various tea products in normal drinking conditions. Keywords Antioxidative activity, Korean health tea, XYZ-dish method, Catechin Introduction Recently various kinds of health teas have become popular in Korea. Leaf, rhizome, grain and fruits ofherbs and medicinal plants were processed into tea products in small regional factory. Due to this health-benefit effect should be evaluated. A number of researchers have reported on the free radical generation in our body and its mediation to several diseases and cancer, for example, diabetes melitalis, arteriosclerosis and cardiovascular heart diseases. Antioxidative activity is considered to be an important quality factor of food and tea for the prevention of free radical mediated diseases.

This study showed that the number of green tea farms and the cultivation area had decreased, while the average unit sales price of green tea in Boseong-gun was approximately three times higher than that in Hadong-gun. Also, this study found that Hadong-gun mainly provided green tea products to wholesalers, whereas Boseong-gun sold it directly to the local retail stores targeting tourists, and this results in generating relatively higher unit prices. Meanwhile, we discovered that both regions had difficulties in management which were caused by the demand for low delivery unit costs from large corporations and small food companies.

However, the flavor changes, both sensory and volatile compounds, of green teas that have been brewed multiple times are unknown. The objectives of this study were to determine how the aroma and flavor of green teas change as they are brewed multiple times, to determine if a relationship exists between green tea flavors and green tea volatile compounds, and to suggest the number of times that green tea leaves can be brewed. The first and second brews of the green tea samples provided similar flavor intensities. The third and fourth brews provided milder flavors and lower bitterness and astringency when measured using descriptive sensory analysis. In the brewed liquor of green tea mostly linalool, nonanal, geraniol, jasmone, and β-ionone volatile compounds were present at low levels (using gas chromatography-mass spectrometry).

    1 TITLE: THE KOREAN WAY OF TEA GRADE: 7th Grade AUTHOR: Carolyn Chrisman THEME: Culture TIME REQUIRED: Three 45 minute class periods BACKGROUND: The tea ceremony arrived in Korea from China via the Silk Road. Tea had been grown and drank in China since 2500BC. Not only was tea consumed by the aristocrats of society, but by the average person as well. Tea was also used as an offering to Buddha. Therefore with the introduction of Buddhism to Korea, the tea ceremony followed. It probably arrived in Korea in the 4th century, but was firmly established by the 6th and 7th centuries. Korean Buddhist priests saw the Chinese tea ceremony first hand when the traveled to China to study. By the time of the Koryŏ Dynasty, tea use was at its greatest volume and was the subject of many poems. The royal palace developed an elaborate ritual for drinking tea. Scholars and government officials developed a relaxed leisurely way of drinking tea. Buddhist monks offered tea to Buddha in their own special ceremony too. It is unmistakable though that tea drinking was directly related to Buddhism. And when Buddhism was replaced by Confucianism in the Chosŏn dynasty, tea drinking continued. The following is a history of tea in Korea taken from The Korean Way of Tea by Brother Anthony of Taize and Hong Kyŏeong-Hee: “The culture of tea in Korea was originally identified with Buddhism. However, when Buddhism was replaced by Confucianism as the main official religious tradition after Joseon took over from the Koryŏ Dynasty at the end of the 14th century, and most temples were destroyed, the drinking of tea continued.
