Hatch Chile Chicken Soup Yield: 16 Serving Size: 1 bowl

INGREDIENTS 5 lbs JTM Hatch Salsa Verde 1 qt Chicken Stock 2 cup Onion, diced 2 cup Black Beans, drained/rinsed 4 cup Chicken, cooked/shredded 2 Tbsp Butter 2 cup Roasted Corn 1 tsp Salt & Pepper, to taste 3 Tbsp Seasoning 1/2 cup Cilantro, chopped 6 Limes, fresh squeezed 8 oz Tri-Color Tortilla Strips Additional Menu Inspirations RECIPE PREPARATION METHOD: 1. Melt butter in stock pot and add diced on- ions. Sweat for 3-5 minutes until tender. 2. Add hatch salsa verde, chicken stock and seasonings. Blend well. 3. Simmer for 25-30 minutes. Add shredded chicken, roasted corn and black beans. 4. Simmer for additional 10 minutes and finish with fresh chopped cilantro and lime juice. 5. Top with 1/2 oz. of tri color tortilla strips.
