Exciting developments are taking place at the winery, and we are eager to share the news!

First, we have created a new intimate space, called Cellar 47, for elevated tastings and private events. In addition, you’ll read more in this issue about the redevelopment of the Le Petit Clos block of our estate vineyard. Lastly, we have recently received some impressive scores on our 2013 and 2014 vintages, beginning with 93 points for the 2014 Oakville in this month’s club selection!

WINEMAKERS GATHER

IT’S THAT TIME OF YEAR FOR THE ANNUAL BARREL TRIAL TASTING AT PINE RIDGE VINEYARDS. THREE YEARS AGO, THE WINEMAKING TEAM BEGAN HOSTING WINEMAKERS FROM AROUND THE NAPA VALLEY, INVITING THEM TO THE WINERY TO TASTE AND EVALUATE MULTIPLE BARREL SAMPLES OF EACH WINE. EACH WINEMAKER WAS ASKED TO SCORE BASED ON WHICH FLAVORS AND CHARACTERISTICS EACH TYPE OF BARREL IMPARTED TO EACH SAMPLE. THE RESULTS WERE INTERESTING AND FUN, AND AT LUNCH THEY HAD A LIVELY DISCUSSION OVER THEIR PREFERRED COOPERS. WINEMAKING UPDATE

We’re starting to work on our blends from the 2016 vintage, a process that will last several months as we gradually narrow down which lots we’ll use in each wine. I’m excited about the vintage. Fermentation has been completed on the 2016 vintage wines and the Cabernets are showing great color and flavor. The early assessment shows pronounced tannins and great acids along with substantial fruit, which makes for well-balanced wines.

CELLAR UPDATE

In late January and February we’re catching up on a small amount of bottling we couldn’t do in December, partially because the wines weren’t quite ready. Case in point is our 2016 Pine Ridge Vineyards Rosé, which will be released, appropriately enough, on Valentine’s Day. A 50/50 blend of Cabernet and from our estate vineyards in Oakville and Carneros, this is a beautifully hued wine that offers abundant fruit and floral notes. Ideal for spring and summer sipping!

VINEYARD UPDATE

The big news in the vineyards and in California in general is the amount of rain we’ve been getting in the last several months. We’ve had a series of strong storms that filled our reservoirs and gave the dormant vines a good, deep drink of water. I was looking at some notes I took awhile back, and at this time in 2014 our reservoirs were completely dry. Believe me, it’s a much better feeling when they’re full!

Our AVA Vertical Tasting focuses on Cabernet Sauvignon from one appellation (which changes quarterly) and features a selection of three vintages plus a barrel sample. This tasting provides an in-depth look at a single appellation as well as the opportunity to understand vintage variation. It includes a food sampling component and a brief tour. WWW.PINERIDGEVINEYARDS.COM • ( 800) 400-6647 Transforming Le Petit Clos Last spring we wrote in our newsletter about the replanting project we’re undertaking in a portion of our estate vineyard called Le Petit Clos, which is currently planted to Chardonnay and located in our home vineyard in the Stags Leap District. One of the last phases of that project entails removing the Chardonnay vines in this steeply terraced two acre block and replacing them with Cabernet Sauvignon.

Starting in early April, Vineyard Manager Gustavo Aviña and his team will begin removing the existing vine trunks and preparing the soil for replanting. After installing the stakes, the crew will plant the rootstocks, scheduled for late May. A year later, once the rootstocks are firmly established, they’ll come back and graft the vines onto the rootstocks. If all goes as planned, our vineyard team will harvest the first Cabernet Sauvignon from the two acre Le Petit Clos block in 2019, but there probably won’t be a full crop from the site until 2020.

INGREDIENTS DIRECTIONS

3 pounds fatty pork butt TO PREPARE: Preheat the oven to 300˚ F. Cut the pork into 2-inch 1 Tablespoon Kosher salt cubes, season the meat with the kosher salt, and place in a heavy- 1-2 quarts veal or chicken stock bottomed vessel, such as a Dutch oven. Add the spice sachet, bouquet garni and stock to cover pork by 2 inches. Spice Sachet (tie in cheesecloth): TO COOK: 2 teaspoons whole black and On the stovetop, slowly bring to a simmer. As the stock evaporates, add more liquid, as needed, to keep the pork from sticking to the pot. Bouquet Garni (tie together): Drain the pork, reserving the stock. Remove the spice sachet and 1 large leek, split and cleaned bouquet garni and discard. Leave both the pork and the stock to cool. 1 celery stalk When the pork is cool enough to handle, shred it with two forks or 2 sprigs thyme in a stand mixer with the paddle attachment. Add the cooled stock 2 bay leaves to the shredded pork a portion at a time until the mixture has a creamy, spreadable texture.
