The Gin & Jenever Menu The Gin & Jenever Menu Very Ginteresting… The story of Genever and Gin has a very long and interesting History. Although today there are many stories and myths ranking around Genever and Gin, one thing is certain: Its roots are here, in the Netherlands. Well, to be precise it started in the Low Countries in the 12th Century; a region that today includes The Netherlands, Belgium and parts of Northern France. At first, it began with medical tonics in which juniper berry- containing low wines were used. With the use of distillation processes the Dutch were the first to develop a Juniper berry spirit in the beginning of the 16th Century. The Genever was born. In 1585 the British Queen Elizabeth I sent her soldiers to the Netherlands to help the protestant Dutch in their revolt against the Catholic King Philip II of Spain. In 1618, The Low Countries once again became a battlefield for the Thirty Years War. During these times, the English troops discovered Genever which they brought back home as the spirit that has given them the Dutch Courage. In England, Gin quickly became very popular. In the 18th Century, it was cheaper than beer and became a National disease. But as much as the British Parliament tried to ban it, the „Gin Craze‟ was not to be stopped. However, due to the release of the „Gin Acts‟ the production got more refined In the Early 19th, Century Gin became very fashionable again as Cocktails emerged. Then once again British soldiers brought something back home to England and the rest of the world. While British troops were in India, they discovered quinine in the Tonic Water to use against Malaria. In Order to make that very bitter drink more tasty, they added Gin: The Gin and Tonic was born and it was Winston Churchill who famously said: “The Gin & Tonic has saved more Englishmen‟s lives and minds than all the doctors in the Empire.” Since then, gin has long been called a grandmother‟s drink. But luckily gin found its way back to the bars and pubs. A whole new generation of gins and gin drinks emerged and with them a new drinking culture. In many countries the long drink glasses were substituted by large balloon glasses. They were filled completely with ice in order to avoid unwelcomed dilution. More and more tonic waters popped up and in no time there were many different combinations of G&T with different fruits, flowers, botanicals and more to find the ultimate G&T experience. „And why all that?‟ you ask? Humphrey Bogart in Casablanca “Of all the Gin joints in all the world she had to walk into mine” Welcome, To the Wonderful World of Gin… Gin started life in the early 17th century in Holland, although claims have been made that it was produced prior to this in Italy. WC Fields would start the day with two double martinis, enjoyed either side of his breakfast. He drank about two quarts of gin a day. Every Gin brand has its own unique fragrance; most consumers have probably only tasted a small number of the gin brands available. In ours there are more than 60 different Gin brands, from 9 different countries; offering a wide spectrum of fragrances, using different botanicals and infusion methods in all shapes and sizes. Gin is distilled differently. Premium Gins are distilled 3 to 5 times to remove impurities; each brand has a unique formula that provides its special characteristics. The favourite drink of former President Gerald Ford is Gin and Tonic. Gin is the only alcohol liquor that was first developed as a medicine remedy before it became popular as a social drink. “Mother’s Ruin” a term that came from British soldiers taste for Gin when home on leave from the World War II, and the maternal state it induced in the women who shared their off-duty conviviality. William of Orange prohibited the importing of alcohol to England in the early 18th Century encouraging the production and consumption of English Gin. The excessive consumption that followed gave rise to the name Gin Craze.

  • The Atlas Collections Volume 1
THE ATLAS COLLECTIONS VOLUME 1 Dear Guests, Welcome to ATLAS - a labour of love that honours my grandfather, CS Hwang, the late founder of Parkview Group, and the beautiful space he created in which ATLAS resides. It is our hope that your experience at ATLAS reflects the passion and attention that has gone into every aspect of its creation. A grand and beautiful space, we invite you to unwind, enjoy, celebrate and indulge as our talented and dedicated ATLAS team makes you feel most welcome and at home. The ATLAS Collections feature two of the world’s most remarkable physical collections of Gin and Champagne. Building the ATLAS Collections was a monumental task which took over two years to curate and assemble. We are also delighted to feature a selection of rare and exceptional still wines and whiskies from my own family’s private cellar, which for the first time since its inception almost 40 years ago, has been opened especially for our guests at ATLAS. Building upon the modest collection of wines started by my grandfather, the Parkview Family Cellar found a permanent home in 1989 with the opening of the Parkview Group’s flagship property, Hong Kong Parkview. Initially consisting of a small collection of 50 bottles of right bank Bordeaux wines, the collection grew steadily under the stewardship of my uncle, George Wong, and his son Alex. By 2000, the collection was at 3,000 bottles and has now expanded beyond the right bank to other regions in France and the rest of the world. Currently, the collection stands at 50,000 bottles of fine wine and over 10,000 bottles of whiskey acquired through reputable merchants, auctions, and numerous trips to the wineries and distilleries where suppliers have now become close friends, ensuring that the family always has access to the finest and rarest bottles.

The Scotch Whisky Regulations 2009 The Scotch Whisky Regulations 2009 (SWR) came into force on 23 November 2009. They replaced the Scotch Whisky Act 1988 and the Scotch Whisky Order 1990. Whereas the previous legislation had only governed the way in which Scotch Whisky must be produced, the SWR also set out rules on how Scotch Whiskies must be labelled, packaged and advertised, as well as requiring Single Malt Scotch Whisky to be bottled in Scotland from 2012. The following guidance is aimed at assisting those producing and selling Scotch Whisky, and those designing labels, packaging and advertising, to comply with new law. Checklists are included where appropriate. This guidance covers only the main provisions of the law; the Regulations should be referred to for the full detail. The SWA’s Legal team is ready to assist with any questions. Contact details are provided at the end of this Guidance. Contents 1. Production of Scotch Whisky 3 2.
