According to this legislation, all gins must be: 1. Made with suitable ethyl alcohol flavoured with juniper berries and other flavourings. 2. The ethyl alcohol must be distilled to the minimum standards stated in the EU Spirits Regulations. 3. The predominant flavour must be juniper berry. 4. Water may be added to reduce the strength but the gin must have a minimum retail strength of 37.5% alc./vol. 5. Further ethyl alcohol of the same composition used in the distillation may be added after any distilling run. The rules further legislate upon three distinctive definitions of gin, these being ‘Gin’, ‘Distilled Gin’ and ‘London Gin’. GIN - the ethyl alcohol does not have to be re-distilled, fla- vourings can be either approved natural or artificial flavourings and these can be simply cold compunded, and there is no re- striction on the addition of other approved colour or flavouring additives such as sweeteners. DISTILLED GIN- must be made in a traditional still by re-distilling neutral alcohol in the presence of natural flavour- ings but there is no minimum strength stipulated for the re- sulting distillate; additional flavourings, sweeteners and other approved additives may be added after distillation and these can be natural or artifical; approved colourings may be used to colour distilled gin. LONDON GIN - must be made in a traditional still by re-distilling neutral alcohol in the presence of natural flavours but there is no minimum strength stipulated for the resulting distillate; the ethyl alcohol used to distil London Gin must be of a higher quality than the the standard laid down for ethyl al- cohol. The methanol level must not exceed 5 grams per hecto- litre of 100% alc./vol; the flavourings used must all be approved natural flavourings and they must impart their flavour during the distillation process; the use of artifical flavouring is not per- mitted; the resultant distillate must have a minimum strength of 70% alc./vol.; no flavourings may be added after distillation; a small amount of sweetening may be added after distillation, but apart from water, no other substance may be added - sugars must not exceed 0.5 grams per litre of finished product. Final- ly, London Gin cannot be coloured. Building upon the modest collection of wines started by my grandfather, the Parkview Family Cellar found a permanent home in 1989 with the opening of the Parkview Group’s flagship property, Hong Kong Parkview. Initially consisting of a small collection of 50 bottles of right bank Bordeaux wines, the collection grew steadily under the stewardship of my uncle, George Wong, and his son Alex. By 2000, the collection was at 3,000 bottles and has now expanded beyond the right bank to other regions in France and the rest of the world. Currently, the collection stands at 50,000 bottles of fine wine and over 10,000 bottles of whiskey acquired through reputable merchants, auctions, and numerous trips to the wineries and distilleries where suppliers have now become close friends, ensuring that the family always has access to the finest and rarest bottles.

    The Scotch Whisky Regulations 2009 The Scotch Whisky Regulations 2009 (SWR) came into force on 23 November 2009. They replaced the Scotch Whisky Act 1988 and the Scotch Whisky Order 1990. Whereas the previous legislation had only governed the way in which Scotch Whisky must be produced, the SWR also set out rules on how Scotch Whiskies must be labelled, packaged and advertised, as well as requiring Single Malt Scotch Whisky to be bottled in Scotland from 2012. The following guidance is aimed at assisting those producing and selling Scotch Whisky, and those designing labels, packaging and advertising, to comply with new law.
