Whiskey Menu WHISKEY MENU B A L O O A N M I N G T O N , I N D I A type of distilled alcoholic beverage made from fermented grain mash. Various grains (which may be malted) are used for different varieties, including barley, corn (maize), rye, and wheat. Whiskey is typically aged in wooden casks, generally made of charred white oak. Whiskey is a strictly regulated spirit worldwide with many classes and types. The typical unifying characteristics of the different classes and types are the fermentation of grains, distillation, and aging in wooden barrels. A blended whiskey (or blended whisky) is the product of blending different types of whiskeys and sometimes also neutral grain spirits, coloring, and flavorings. It is generally the product of mixing one or more higher- quality straight or single malt whiskies with less expensive spirits and other ingredients. AMERICAN WHISKEY American whiskey is a distilled beverage produced in the United States from a fermented mash of cereal grain. Among the types included under this designation are bourbon whiskey, rye whiskey, rye malt whiskey, malt whiskey, wheat whiskey, and corn whiskey. All of these are made from mashes with at least 51% of their named grains. Irish single pot still whiskey is a mix of barley, malted and unmalted, distilled in a pot still. The unmalted barley gives a spicy freshness that is associated with Irish whiskey.     WHISKY BIBLE FOURTH EDITION aqua vitae uisge beatha – ‘water of life’ A brief history of Whisky The Gaelic ‘usquebaugh’, meaning ‘Water of Life’, phonetically became ‘usky’ and then ‘whisky’ in English. Scotland has internationally protected the term ‘Scotch’. For a whisky to be labelled Scotch it has to be produced in Scotland. ‘Eight bolls of malt to Friar John Cor wherewith to make aqua vitae’. The entry above appeared in the Exchequer Rolls as long ago as 1494 and appears to be the earliest documented record of distilling in Scotland. This was sufficient to produce almost 1500 bottles. Legend would have it that St Patrick introduced distilling to Ireland in the fifth century AD and that the secrets travelled with the Dalriadic Scots when they arrived in Kintyre around AD500. The spirit was universally termed aqua vitae (‘water of life’) and was commonly made in monasteries, and chiefly used for medicinal purposes, being prescribed for the preservation of health, the prolongation of life, and for the relief of colic, palsy and even smallpox. Scotland’s great Renaissance king, James IV (1488-1513) was fond of ‘ardent spirits’. When the king visited Dundee in 1506, the treasury accounts record a payment to the local barber for a supply of aqua vitae for the king’s pleasure. The reference to the barber is not surprising. In 1505, the Guild of Surgeon Barbers in Edinburgh was granted a monopoly over the manufacture of aqua vitae – a fact that reflects the spirits perceived medicinal properties as well as the medicinal talents of the barbers.

Smith1*, Carole Sester2, Jordi Ballester3 and Ophelia Deroy1 Abstract Background: Although most Scotch whisky is blended from different casks, a firm distinction exists in the minds of consumers and in the marketing of Scotch between single malts and blended whiskies. Consumers are offered cultural, geographical and production reasons to treat Scotch whiskies as falling into the categories of blends and single malts. There are differences in the composition, method of distillation and origin of the two kinds of bottled spirits. But does this category distinction correspond to a perceptual difference detectable by whisky drinkers? Do experts and novices show differences in their perceptual sensitivities to the distinction between blends and single malts? To test the sensory basis of this distinction, we conducted a series of blind tasting experiments in three countries with different levels of familiarity with the blends versus single malts distinction (the UK, the USA and France). In each country, expert and novice participants had to perform a free sorting task on nine whiskies (four blends, four single malts, one single grain, plus one repeat) first by olfaction, then by tasting. Results: Overall, no reliable perceptual distinction was revealed in the tasting condition between blends and single malts by experts or novices when asked to group whiskies according to their similarities and differences. There was nonetheless a clear effect of expertise, with experts showing a more reliable classification of the repeat sample.

Increasingly micro-distilleries are basing their business on the production of “legal moonshine”—legally produced un-aged whiskey labelled by the distillers as moonshine. This paper draws primarily on ethnographic work at Bear Wallow Distillery to understand how the owners create a destination distillery by connecting their legal moonshine and distillery experience to a local moonshining tradition and a broader rural American imaginary. It will also explore issues of traditionalization and commodification of heritage through examining how micro-distilleries rely on a perceived connection with an “authentic” moonshine tradition even as they seek to challenge traditional definitions of moonshine in the development of their own moonshining tradition. Bear Wallow Distillery is a family-run craft micro-distillery in Gnaw Bone, Indiana, nestled in the hills of Brown County. Brown County, situated about an hour south o f Indianapolis, is a popular tourist destination, especially for outdoor recreation. Its beautiful outdoor attractions include Hoosier National Forest, Brown County State Park, Yellowwood State Forest, Lake Monroe, and Lake Lemon. The distillery opened in 2014 and is owned and operated by Susan Spagnuolo. The distillery is truly a family-run business: Susan’s son Adam is the head of production, her son Jon is in charge of marketing and creates all the labelling and logos, and her husband Mike works at the distillery entertaining customers with highly engaging tours on the weekends.

PRECAUTION: • Always use the Alembic Pot Still System in a room with adequate ventilation. • Never leave the Alembic Pot Still system unattended when operating. • Keep the Alembic Pot Still system away from all sources of ignition, including smoking, sparks, heat, and open flames. • Ensure all other equipment near to the Alembic Pot Still system or the alcohol is earthed. • A fire extinguishing media suitable for alcohol should be kept nearby. This can be water fog, fine water spray, foam, dry powder, carbon dioxide, sand or dolomite. • Do not boil dry. In the event the still is boiled dry, reset the cutout button under the base of the still. In the very unlikely event this cutout fails, a fusible link gives an added protection. IN CASE OF SPILLAGE: • Shut off all possible sources of ignition. • Clean up spills immediately using cloth, paper towels or other absorbent materials such as soil, sand or other inert material. • Collect, seal and dispose accordingly • Mop area with excess water.     The 25 Most Important Bourbons Ever Mad If you asked a spirits expert a quarter century ago to name the most important bourbons ever made, they might have wondered whether America’s home-grown whiskey deserved such analytical consideration. Bourbon was in the doldrums, unappreciated and underdrunk. But today, thanks to a boom that shifted into high gear around the turn of the century, bourbon is arguably the most talked-about, most obsessed-over and most in-demand spirit in the world. To better assess how we got here, we consulted with 23 bourbon experts, including distillers, journalists, authors, whiskey-bar owners and one whiskey-centric-liquor-store proprietor. Each participant named five to ten bourbons that made a difference—not their favorite bourbons, or the ones they thought tasted best, but those bottles that were influential, innovative or otherwise held a significant place in bourbon history. They were allowed to reach way back to pre-Prohibition years, cite bourbons they could never have tasted, and yes, in the case of distillers, include their own creations. (One self-serving endorsement would not land them a spot on this list, however, as every bourbon here received multiple votes.) The final order was determined strictly by the votes received. There were a number of ties in the lower rankings. In those cases, editorial judgment determined final rankings. In a few instances, the panelists indicated complete lines of bourbons that bore the same name, not just a single bottling. In other cases, panelists pointed out different bottlings within a single line. As the arguments behind these choices were often similar, these votes were sometimes combined and placed within the rankings as a bourbon label’s complete line.
