It was once a staple food consumed by the ancestral Native Americans, and has stood the test of time in Indian, African, Australian, and Central American cuisines. Recently it has been making a comeback more locally, celebrated for its mild, fresh flavor and bright, tart finish. The perky leaves are excellent used as an attractive and flavorful garnish, although its most popular use is in green salads alongside other greens with small leaves. Its dynamic flavor pairs best with tomato, onion, parsley, dill, and citrus in creamy mayonnaise, oil, sour cream, or buttermilk-based preparations.
