Once only grown wild and foraged, purslane is now being cultivated throughout North America and popping up on menus across the world. It was once a staple food consumed by the ancestral Native Americans, and has stood the test of time in Indian, African, Australian, and Central American cuisines. Recently it has been making a comeback more locally, celebrated for its mild, fresh flavor and bright, tart finish.

The perky leaves are excellent used as an attractive and flavorful garnish, although its most popular use is in green salads alongside other greens with small leaves. Its dynamic flavor pairs best with tomato, onion, parsley, dill, and citrus in creamy mayonnaise, oil, sour cream, or buttermilk-based preparations. For cooked preparations, steam or sauté for just a minute or two, releasing earthier notes of flavor, which pair excellently with fish.

Tamarillos, also known as tree tomatoes, are popular in New Zealand, Central America, and South America. Unfamiliar to many northern Americans, people are often mystified by the eggplant-like peel, dense, juicy interior, and sweet & sour flavor.

The golden fruits are milder and easier to use, while the red pack plum-like flavors and striking color, but they do stain. Both varieties can be used in both sweet and savory dishes, but for any application, tamrarillos must first be peeled and are best served with plenty of spice or acid and should be prepared with sugar and tartness of some kind.

Tamarillos are excellent for freezing, you can freeze them whole, peel and wrap, or even puree before freezing and the unique tree tomato will retain its trademark sweet tart flavor for use in any preparation. Use tamarillo sliced as a topping on desserts and salads, or pureed for use in sauces, preserves, and beverages.

Yuzu is a Japanese citrus fruit celebrated for its highly aromatic rind and tart, acidic juice that is able to maintain its bold qualities through high cooking temperatures. The juice, however, is very minimal, and highly coveted in the culinary world. Yuzu is the quintessential ingredient in Japanese Ponzu sauce as well as the lesser known yuzu-kosho seasoning. Its qualities are highly versatile as a bright & fresh addition to salad dressings, cocktails, seafood, sauces, and marinades.

Large, hard squash are at their peak from fall into late winter when their flamboyant exteriors match their equally dynamic flavors and textures. Overall, these varieties are sweeter, denser, and firmer than summer squash, which lend them best to soups, risotto, pasta, and even desserts. These unique varieties highlighted here, not commercially available, are worth seeking out.

KURI SQUASH This bright orange kabocha-type squash has a characteristic tear drop shape, smooth, golden skin, and fairly sweet flavor with notes of chestnut. Halve and remove the seeds before cooking this sqash in its difficult-to-peel skin. It works well in sweet preparations such as baked goods with warm flavors of maple, cinnamon, and nutmeg, but works equally well with curry powder, fennel, and parmesan cheese for risotto, soup, and curries.

SWEET DUMPLING SQUASH These small, compact squash are the perfect size for using as an individual serving bowl. They are entirely edible and have a sweet, earthy flavor similar to yams. You can also use them in place of sweet potatoes or pumpkins in any application. Use these for stuffing with meat, cheese, grains, or other vegetables for an attractive presentation. Their sweet flavor pairs well with parsley, sage, beets, arugula, nutmeg, curry, strong cheeses, and maple.

CARNIVAL SQUASH Carnival squash are a hybrid of acorn and sweet dumpling, with a decorative patterned exterior and furrowed shape. When cooked, it develops a soft, melting texture, fragrant aroma, and nutty, sweet flavor most comparable to butternut squash. Roasting with butter and spices best brings out its dynamic flavor; it can be roasted whole for use as an individual edible vessel or cut into pieces for stew, risotto, curry, or pasta. It pairs well with pork, lamb and winter vegetables prepared with flavors of maple, toasted nuts, aged cheeses, garlic, or nutmeg.

Burdock root seems to have been primarily used in medicinal preparations by the Chineese and Japanese for thousands of years previous to the 19th century. It is only then that it became adopted into culinary uses, primarily by the Japanese, most often pickled or shredded and cooked in kinpira. Burdock root delivers unique crunchy texture and sweet, earthy flavors with notes of artichoke and salsify. If the skin is thin, it does not need to be peeled, just well-scrubbed. More mature burdock would benefit from being peeled immediately before preparing or they will brown. To remove bitterness, soak in salted or acidulated water prior to cooking. Try using burdock root in braises, stir fries, salads, and mixed vegetable sides. It pairs excellently with carrots, leeks, shallots, celery, mushrooms, nuts, and lemon.
