A Round of Applause

Head bartender, Grant Sceney uses inspiration from his past travels and the rich culture and history he’s experienced along the way, when crafting cocktails. Sceney uses a classic style with an avant garde approach, using fresh and local ingredients where possible. Grant is an active member in the Canadian Professional Bartending association (BC Chapter) and is active on the cocktail competition circuit – most recently being named 2014 World Class Canada Bartender of the Year, and Fourth in the World. We invite you to sip on some of his most recent gold medal wins.

Sceney has created a duo of literary inspired cocktails, based on Ernest Hemmingway’s split personalities and literary triumphs. This duo was a challenge winner at the Diageo World Class Finals, and secured Grant a 4th place finish in the world.

Tanqueray 10 / Ketel One / Chamomile / PX Sherry / Fino Sherry / Butter / Fennel A bold and complex cocktail that tries to break out of its feminine appearance; illustrating the early years of Hemmingway’s life where his mother dressed him as a female until the age of six. Bold in nature, but feminine in appearance; it’s carbonated and served in a champagne flute, giving it the essence of sparkling wine.

The Sun Also Rises 24 ‘Written Words’ Challenge Recipient, World Class Global Finals 2014

Spiced Ron Zacapa / Don Julio Blanco / Tamarind / Grapefruit / Lime / Tajin Inspired by Hemingway’s latter years spent living throughout the after many years travelling on death defying adventures; this cocktail uses one of his favorite spirits at the base - rum. It is grounded like his soul, and has notes of citrus, and finished with a hint of spice.
