Sceney uses a classic style with an avant garde approach, using fresh and local ingredients where possible. Grant is an active member in the Canadian Professional Bartending association (BC Chapter) and is active on the cocktail competition circuit – most recently being named 2014 World Class Canada Bartender of the Year, and Fourth in the World. We invite you to sip on some of his most recent gold medal wins. Sceney has created a duo of literary inspired cocktails, based on Ernest Hemmingway’s split personalities and literary triumphs. This duo was a challenge winner at the Diageo World Class Finals, and secured Grant a 4th place finish in the world. Six Years a Lady 17 ‘Written Words’ Challenge Recipient, World Class Global Finals 2014 Tanqueray 10/ Ketel One/ Chamomile/ PX Sherry/ Fino Sherry/ Butter/ Fennel A bold and complex cocktail that tries to break out of its feminine appearance; illustrating the early years of Hemmingway’s life where his mother dressed him as a female until the age of six. Bold in nature, but feminine in appearance; it’s carbonated and served in a champagne flute, giving it the essence of sparkling wine. The Sun Also Rises 24 ‘Written Words’ Challenge Recipient, World Class Global Finals 2014 Spiced Ron Zacapa/ Don Julio Blanco / Tamarind/ Grapefruit/ Lime/ Tajin Inspired by Hemingway’s latter years spent living throughout the Caribbean after many years travelling on death defying adventures; this cocktail uses one of his favorite spirits at the base - rum. It is grounded like his soul, and has notes of citrus, and finished with a hint of spice. French Breakfast 20 ‘King of Grapes’ Challenge Recipient, World Class Canada Finals 2014 Grand Marnier / Rosemary Butter Bourbon / Fino Sherry / Champagne This cocktail was created for the ‘king of grapes’ round at the recent World Class Canada finals. It was carefully crafted on the grounds of Saturna Island Family Estate Winery where the finalists were flown to compete in this challenge – the cocktails were required to highlight ingredients sourced from grapes. ~Aperitifs ~ Pacific 75 19 Moet ‘et Chandon / Tanqueray 10 / Basil/ Grapefruit A subtle adaptation of the classic and elegant French 75 Americano 14 Campari/ Punt e Mes/ Sparkling Water/ Orange “In cafés, you have to drink the least offensive of the musical comedy drinks that go with them,” says James Bond as he orders an Americano in Ian Flemming’s first novel ‘From a view to a kill’. This classic was served up at ‘Café Campari’ in the 1860’s For Heaven’s Sake 16 Granville Island Sake/ Grapefruit/ Barrel Aged Cointreau/ Basil Local made Junmai Nama Sake is given layers of citrus and elevated with a hint of basil – this cocktail is perfectly paired with sushi, and aptly named by one of the most graceful voices to fill the Lobby Lounge ~Light and Refreshing ~ Celibataire 15 Cointreau/ Aperol / Grapefruit / Lemon/ Ginger Beer If ‘Celibataire’ is French for ‘single’, then this sexy cocktail is quite the catch. Aperol joins Cointreau and ginger beer, along with a sassy citrus squeeze of grapefruit and lemon – making for a cocktail that’s worth celebrating Absolut Beta 16 Absolut Citron/Lemon/Beet and Pepper Shrub/Ginger/Honey/Egg Whites/Basil Citron and Pepper combine to pay homage to the first ever released vodka flavours. Beets and ginger give body and depth, while the basil and honey announce the refresh- ing lemon flavor. Harvest Moon 18 Bulleit Bourbon /Punt e Mes / Moondog Bitters / Root Beer Spices A healthy dose of bourbon is complemented by the spices of root beer, making this a delicious complex sipper.
