At Brooklyn Cider House, we use one simple ingredient to make our ciders – apples. So the structure, aromas, mouth feel, and any resid- ual sugar are definitively tied to the quality of our apples. This is why our work begins on our orchard upstate in New Paltz, NY. All of our ciders are made only once a year from freshly harvested apples of heirloom, dessert, and hard cider varieties.
Depending on the style, our ciders take anywhere from 2 months to 2 years to ferment and age. We encourage wild yeast and microbes to leave their regional mark on all but one of our ciders, often with a boost from white wine yeast. We make our ciders with minimal intervention and strive for balance, depth of structure, and a lively acidity that begs to be paired with food.

Bring your friends, family, and dogs to see where where all of our cider-making begins. Sit by the ponds and apple trees and enjoy wood-fired pizza, burgers, cider doughnuts, and free cider tastings.
