    WHISKY BIBLE FOURTH EDITION aqua vitae uisge beatha – ‘water of life’ A brief history of Whisky The Gaelic ‘usquebaugh’, meaning ‘Water of Life’, phonetically became ‘usky’ and then ‘whisky’ in English. Scotland has internationally protected the term ‘Scotch’. For a whisky to be labelled Scotch it has to be produced in Scotland. ‘Eight bolls of malt to Friar John Cor wherewith to make aqua vitae’. The entry above appeared in the Exchequer Rolls as long ago as 1494 and appears to be the earliest documented record of distilling in Scotland. This was sufficient to produce almost 1500 bottles. Legend would have it that St Patrick introduced distilling to Ireland in the fifth century AD and that the secrets travelled with the Dalriadic Scots when they arrived in Kintyre around AD500. The spirit was universally termed aqua vitae (‘water of life’) and was commonly made in monasteries, and chiefly used for medicinal purposes, being prescribed for the preservation of health, the prolongation of life, and for the relief of colic, palsy and even smallpox. Scotland’s great Renaissance king, James IV (1488-1513) was fond of ‘ardent spirits’. When the king visited Dundee in 1506, the treasury accounts record a payment to the local barber for a supply of aqua vitae for the king’s pleasure. The reference to the barber is not surprising. In 1505, the Guild of Surgeon Barbers in Edinburgh was granted a monopoly over the manufacture of aqua vitae – a fact that reflects the spirits perceived medicinal properties as well as the medicinal talents of the barbers.

    Diner Het diner werd gehouden op het terras van ons hotel in de chique badplaats Deauville. Het werd aangeboden door Jean-Roger Groult, aan wie wij de volgende dag een bezoek zouden brengen. Calvados Roger Groult Wij worden ontvangen met een heerlijk aperitief, Calvados Blanc met tonic en een schijfje limoen. “Clos de la Hurvanière” De familie Groult maakt sinds 1850 Calvados AOC Pays d’Auge op het landgoed “Clos de la Hurvanière” te Saint-Cyr du Ronceray en heeft een grote naam opgebouwd. Na de dood van Jean-Pierre Groult in 2008 kreeg zijn zoon Jean-Roger Groult – 8e generatie - de leiding van de distilleerderij. Het bedrijf is met 8 werknemers niet al te groot, en Jean-Roger wil dat zo houden. De export bedraagt 55%, en wel naar 25 landen. Jean- Roger is lid van de groep Esprit Calvados en van Vignobles & Signatures. Jean-Roger Groult Oogst De bodem van de boomgaarden bestaat uit een toplaag van leem op een onderbodem van klei met vuursteen. Op 23 hectare eigen boomgaarden staan 5.600 appelbomen, goed voor de helft van de benodigde 500 tot 600 ton appelen per jaar. Er is ook nieuwe aanplant van boomgaarden, maar het duurt 40 jaar voordat de appelen bruikbaar zijn. De boomgaarden liggen meestal op heuvels, waardoor ze geen last hebben van overstromingen. Op 17 hectare staan minstens 1,25 m hoge bomen (hautes tiges, betere kwaliteit) en op 6 hectare lage bomen (basses tiges, hogere productie). De andere helft van de appelen wordt bijgekocht van naburige appelkwekers. We lopen met Jean-Roger door de boomgaarden.

Highland Park 12yr (40%) From Scotland’s northernmost distillery comes a full flavoured Malt. With a nose of malt, sherry and peat, a palate of smoke, heather and other earthy elements. Highland Park 15yr (43%) Highland Park 15 has a remarkable complex nose with notes of camphor, peat and citrus fruits and flowers. The drying sensation on the finish leaves a rich smoky feeling and the immediate desire to refill your glass. Highland Park 18yr (43%) Burnished gold in colour with a rich, mature oak and aromatic smoke aroma. It has a rich, full flavour, honey and peat taste and a soft, round and long finish. Highland Park 21yr (47.5%) Drawing its incredible character from predominantly American oak casks which have been seasoned with sherry, this 21 year old is a truly dynamic whisky with an intensely fruity and spicy centre, surrounded by complex layers of candied orange peel, dark chocolate and rich, slightly drier smoke. A malt that rewards patience and delivers experience like no other. Highland Park 25yr (50.7%) With its golden dark red colour and very rich, mature oak, chocolate fudge aroma, this whisky is universally acclaimed, by the critics as one of the great single malts.     Pemartin Oloroso NV (Sherry Wine) Bodegas Diez Mérito produces Sherry wines in a traditional system of soleras and criaderas, Brandy de Jerez, traditional vinegar and other spirits in their two historic bodegas, El Cuadro and Bertemati, in Jerez. Their holdings encompass over 500 acres of vines between 3 main vineyards, Vina El Caribe (in the historic pago of Añina), Vina El Diablo and Vina las Mezquitillas, mostly on the typical, chalky, albariza soil and all rated Jerez Superior. The brand Pemartin dates back to 1810 with the planting of a vineyard in the Macharnudo pago by Julian Pemartín Rodis.
