The idea came about on a trip abroad, when Evan broke it to Ari that he’s always wanted to open a restaurant. He even had a crazy idea about reinventing their great-grandparents’ grocery store in the form of San Francisco’s first Jewish deli. Ari, in a prescient moment, suggested: “Maybe it’s not so crazy...” Upon his return, Evan talked his good friend, Leo Beck, into joining him on a (very reasonable) journey that started with guerrilla cooking and pop-ups. Today, Wise Sons has grown to 5 locations across the Bay Area, regular presence at some of the best farmers markets in California, a restaurant in Tokyo, and is poised to bring its Californian take on Jewish family cooking even further. Evan continues to helm the business as CEO, while Ari splits his time serving as Chairman and debating his brother about who actually is the wiser son.     FAMISHED This city, I had been told, was a Jewish-food desert. Yes, there were bagels, but they were abominations. And yes, there was Wise Sons, the two-year- old Mission delicatessen slinging up- dated, conscientiously sourced Semitic staples—or Jewveau cuisine, as I prefer to call it. But, the kvetch went, one or two decent pastrami sandwiches do not a Jewish-food hub make. Shortly after I ar- rived, the scope of the region’s supposed deprivation was exposed when a pop-up traffi cking $6, day-old Russ & Daughters bagels drew two-hour lines. It made me wonder what, exactly, those people were waiting for: an overpriced bagel, or what it represented? In considering the question, I’ve been weighing my own assumptions, not only about food but also about Jews, immigra- tion patterns, assimilation, and context. And unfair comparisons: According to Yaron Milgrom, a fellow expat New York Jew and an owner of the growing Local Mission empire, complaining that San Francisco’s Jewish food isn’t as good as New York’s is “like saying that our Japa- nese food isn’t as good as Tokyo’s.” Or, to put it another way, what did you expect? Most settled on the East Coast, where they maintained their religious and culinary culture. Their communities were large enough to sustain neigh- borhood delicatessens, appetizer stores, bakeries, and kosher meat and poultry mar- kets. Brisket, borscht, matzo ball soup, chopped liver, pickled herring, gefilte fish, bagels and lox, latkes, blintzes, kugel, knishes, kasha, challah, and rye bread—these Ash- kenazi staples became the cornerstone of Jewish food in America. This is not the healthiest or most varied diet, especially because the only green on the plate might be a token sprig of parsley, but it is a cuisine that has a strong emotional pull on Jewish Americans who want to hold on to their eastern European heritage. Many early Jewish households in America were observant and kept kosher kitchens. When not cooking traditional family recipes from memory, they relied on a few basic Jewish cookbooks recommended by friends and relatives. These no-nonsense volumes offered practical advice to the housewife, or balaboosta, on shopping, kosher cooking, and preparations for holiday celebrations. In time, more modern Jewish cookbooks were published, as families looked for a broader range of recipes and for time-saving shortcuts. Food processors replaced hand graters for making latkes, and shredded carrots or sweet potatoes were mixed with the traditional russet potatoes for a new taste. Clever recipes for gefilte fish loaves and sa- vory layered kugels appeared, and Lipton soup mix, cranberry sauce, Coca-Cola, and canned beef broth turned up in recipes for braised brisket.

House of Bagels serves the Jewish and East Coast expatriate community with an authentic East Coast bakery experience. Sidney Chassey opened the business and ran it with his wife, Mary Chassey. In 1964, Miguel Puente, started working at the House of Bagels and eventually become the second owner. In addition to bagels, the bakery makes every day artisan breads (fresh challahs and rye), traditional cookies (hamentashen, black and white cookies, rugelach and Russian tea cakes), cookies and pastries. According to the owner, House of Bagels is the only place in San Francisco where one can get a real black and white cookie (lemon cake topped with chocolate and vanilla frosting), a cheese pocket, a kuchel or a mandlebrot. The business is located on the north side of Geary Boulevard between 14th and 15th avenues in the Inner Richmond neighborhood.
