And yes, there was Wise Sons, the two-year- old Mission delicatessen slinging up- dated, conscientiously sourced Semitic staples—or Jewveau cuisine, as I prefer to call it. But, the kvetch went, one or two decent pastrami sandwiches do not a Jewish-food hub make. Shortly after I ar- rived, the scope of the region’s supposed deprivation was exposed when a pop-up traffi cking $6, day-old Russ & Daughters bagels drew two-hour lines. It made me wonder what, exactly, those people were waiting for: an overpriced bagel, or what it represented? In considering the question, I’ve been weighing my own assumptions, not only about food but also about Jews, immigra- tion patterns, assimilation, and context. And unfair comparisons: According to Yaron Milgrom, a fellow expat New York Jew and an owner of the growing Local Mission empire, complaining that San Francisco’s Jewish food isn’t as good as New York’s is “like saying that our Japa- nese food isn’t as good as Tokyo’s.” Or, to put it another way, what did you expect?     ABSTRACT Title of thesis: A CONSUMING HERITAGE: BALTIMORE’S EASTERN EUROPEAN JEWISH IMMIGRANT COMMUNITY AND THEIR EVOLVING FOODWAYS, 1880-1939 Charlotte Louise Sturm, Master of Arts, 2013 Thesis directed by: Professor Lisa R. Mar Department of History This study explores how Baltimore’s Eastern European Jewish immigrants and their American-born children engaged with American foodways during the period 1880- 1939. Food-related charitable aid and food education were used as tools of Americanization and moral uplift by public health officials, middle-class charitable workers, and social reformers between 1880 and 1920. The home economics classrooms of Baltimore’s public schools continued this work in the early twentieth century, teaching the immigrants’ American-born children lessons about food and middle-class domesticity. Although somewhat influential in reshaping the immigrants’ food habits, the Eastern European Jewish immigrants and their children largely retained their traditional foodways, making their own choices about how to adopt American foodways. Interconnected issues of food, health, economics, middle-class domesticity, citizenship, and identity are evident in this study. Using sources such as cookbooks and oral histories, this study demonstrates how foodways expressed and continue to express Jewish, American, and Jewish American identities.   • Barnert Sisterhood Bialy Challh Recipe
    Barnert Temple Sisterhood Garlic-Onion Challah (a.k.a. Bialy Challah/French Onion Soup Challah) This recipe is not ideal if you want to get fancy with braiding. Because each strand is stuffed, it lends itself to a basic 3-strand braid. Ingredients: • 2 packets active dry yeast (one packet equals 2-1/4 tsp. of bulk yeast) • 1-1/2 cups warm water • 1/4 cup plus 1 teaspoon of sugar. (the one teaspoon is to activate the yeast) • 6-1/2 cups flour plus more for dusting (2-1/2 cups of whole wheat flour can be substituted) • 2 teaspoons kosher salt • 2/3 cup flavorless oil (canola/vegetable)) • 5 large eggs (4 for the dough, one for the glaze) • 1/4 cup butter, melted • 1 medium onion - finely chopped • 6 gloves garlic (or more - can’t have too much), finely chopped • 1 tablespoon of honey • Kosher salt or flaky salt (like Himalayan) (for the topping) Supplies: • 2 large bowls (glass, ceramic or metal) • 1 small/medium bowl • Parchment or Silpat • Tea towel • Baking sheet(s) • Cooking spray • Gallon Ziploc bag (depending on how you choose to expedite your rise) Directions: In Bowl #1: Combined yeast, warm water and 1 teaspoon of sugar and give it a little stir. Let sit for 5 minutes until it’s foamy on top. In Bowl #2 (large):* Mix together 6 cups of the flour, kosher salt and the 1/4 cup of sugar. Stir to blend. In Bowl #3:* Whisk together oil and 4 of the eggs. *Bowls Two and Three can be prepared ahead of time.
