Paratha by Anjula Devi Paratha By Anjula Devi Serves Prep time Cook time Total time 2-3 10 mins 30 mins 40 mins Chef Skills: Indian bread making Ingredients Equipment ● 250g atta flour or chapati flour ● Mixing bowl (plus extra for dusting) ● Rolling pin ● 1 tbsp ghee (plus extra for ● Tava or wide frying pan rolling) ● Sharp knife or pizza cutter ● Pinch of salt ● Approximately 200ml water Before you click play ● Get out all equipment & measure ingredients 1 of 2 - Next Paratha By Anjula Devi 1. In a mixing bowl add 250g atta flour or chapati flour with a tablespoon of ghee and a generous pinch of salt. Give it a mix with your fingers. 2. Gradually add the water, mixing it through the flour before adding more. Continue mixing so all the water is absorbed by the flour. Move the dough around the bowl, kneading until you have one large dough ball. 3. Take a handful of the dough, roughly 40g, and roll it into a ball in your hands. Dip the dough into some more flour and begin rolling with a rolling pin into a circular shape. 4. When you have achieved a flat circle, use a spoon to massage a little ghee over the dough. With a sharp knife or pizza cutter, cut a line into the centre of the circle. Create a fold and roll it around the entire diameter of the dough, so you are left with a cone shape. 5. Stand the cone into the palm of your hand and press down with your other hand to flatten it. Dip it back into the flour and begin rolling it again - gently this time. Continue rolling until you have achieved a flat circle again. 6. Return to step 3 and roll out the rest of the dough. 7. Heat your tava or frying pan to a medium heat. Once the pan has reached temperature place a paratha onto the centre of the pan. Cook for 1 minute on each side. Spread a little ghee on each side of the paratha while it’s in the pan. The inside of your paratha will be soft and the outside will be beautiful and crispy. 8. Repeat this process for all your rolled out dough. Chef tips ● Paratha is an amalgamation of the words parat and atta, which literally means layers of cooked dough ● Try these with our lentils - see separate recipe ● Try your paratha with nutella for a sweet twist! 2 of 2 - Done.

Ingredients 3/4 Cup of Urad Dal (White) 1 and 1/4 Cup of Palm Jaggery 1/4 Cup of Gingelly Oil Pinch of Salt 1/2 Cup of water or as needed Method Grate the palm jaggery and keep it aside. Dry roast the urad dal lightly, let it cool for sometime. In a pan, heat the water, after it boils, add the palm jaggery , let it be in the flame until jaggery melts and stir it occasionally. Once it done, turn off the flame Powdered the urad dal finely or rava consistency using mixie or spice grinder. Using tea strainer, strain the jaggery syrup to get rid of impurities. In a medium flame, add the Jaggery syrup to the same pan, add a pinch of salt, bring it to a boil, add urad dal powder little by little and stir well to avoid lumps. Add oil little by little and keep on stirring until the mixture leaves the sides of a pan. Serve hot or cold with a tsp of ghee. Make a small balls, in the center, add a tsp of ghee.

Keep aside for 15-20 mins. Make a equally sized balls out of the dough. Using rolling pin, roll out 1 ball about 5-6″ in diameter as thin as possible. Add a tsp of ghee(oil)- maida paste to the center of roti and spread it evenly. Roll the second roti to the same size of first roti. After that, place the second roti over the first roti. Roll out both the roti together to a very thin roti. Repeat the procedure to the rest of the dough.
