Gaul, M.A. Thesis Advisor: Elliott Colla, Ph.D. ABSTRACT This dissertation is a comparative study of modern Egypt and Morocco from the turn of the twentieth century through the 1970s, narrated through the lens of the urban middle-class kitchen. Scholars of the region have paid increasing attention to domestic spaces and the politics of gender in the formation of national identity, but with a tendency to focus on written sources, nationalist movements, and formal concepts. I suggest that the notions of modern home and family that underpinned nationalist politics and cultures in Egypt and Morocco cannot be fully understood without an exploration of the kitchen as both a conceptual and material space. By tracing the histories of cooking stoves and cookware, cookbooks, and foods associated with “national cuisines,” I use the kitchen to tell a narrative that grounds abstract processes in everyday material, affective, and sensory contexts. I show how the home kitchen was crucial to the formation of modern national cultures as well as the figure of the middle-class housewife as a new kind of worker, and the concept of domestic happiness. The dissertation uses literary analysis, archival data, and ethnography to explore relationships between dominant discourses and quotidian experiences.

    Bukovina Cookbook, Food Discussions and Recipes, Volume IV Collected, assembled and produced by Merle Kastner Guivetch on the Kibbutz: Looking through the "cooking" I'd like to add a funny story. My husband the children and I, they were still children then - and grandparents now!! went to visit a young Kibbutz of 30 young people settled by a group of youngsters from our small town after their army service. We were invited and asked them how to get there and their answer was "drive along the desert on the way to Eilat and when you see a patch of green, like a stamp on a brown envelope, you've arrived. They have become one of the best Kibbutzim since growing the best peppers, most beautiful flowers, horses, have given up part of the land for huge sun heating installations which now feed Kibbutzim around them with electricity and heating. Well that's now. When we got there they were that small group living in simple houses but, at that time, evenings and leisure time was still spent as a group. Lovely young people. I became mother from the moment we arrived. I started preparing evening meals for them. During the day they were working - working from 4 a.m. till 9 then breakfast, more like a brunch, then off to sleep till sundown then work till about 8 p.m. because of the desert heat, and then came dinner. Well, why did I tell you the whole story, for one evening meal I made Ghiveci for the 30 starving youngsters.

Freshwater mussels (Unionidae) and carp (Cyprinidae) have been identified. No lobster remains have yet been found, but various species inhabit the Mediterranean and Black Seas, as do the other fish and shellfish included in the recipe. Ingredients Bread, one rustic French loaf, sliced ½ cup extra-virgin olive oil, plus extra for brushing the croutons 4 garlic cloves, minced 1 live lobster (1–1¼ pounds) 2 large tomatoes, peeled and coarsely chopped 1 large onion, small dice 1 pound boiling potatoes ⅓ cup finely chopped fennel fronds (sometimes called anise) 1 Turkish or ½ California bay leaf ¼ teaspoon crumbled saffron threads 1½ tablespoons coarse sea salt ½ teaspoon black pepper 7 cups white fish stock (homemade or store-bought) 2 cups Midas Touch or homebrew interpretation 3 pounds white fish fillets (such as monkfish, turbot, red snapper, striped bass, porgy, grouper, cod, other native species from the Mediterranean, the Black Sea or inland Turkey, and/or comparable species elsewhere), cut into 2-inch pieces ½ pound cockles or small hard-shelled clams, scrubbed ½ pound cultivated mussels, scrubbed and any beards removed ½ pound large shrimp in shells Preparation Make the croutons: Put an oven rack in the middle position and preheat the oven to 250°F.
