9 4.12.2019 White Wines Chardonnay FRANCE Burgundy Chablis The crisp and mineral side of Chardonnay, with a tart and steely character. In its youth, aromas of seaspray, oyster shells, nuts, lemon custard, and mushrooms are profound. As the wines develop with age, butter, honey, and oozing cheese aromas are intensified. Flavors of tart green apple, and lemon with razor-like texture and acidity. This gives the vines access to mineral deposits rich in iron and magnesium that translate into the wines. Coche-Dury and Roulot are the most highly-regarded domaines. 11 4.12.2019 Chardonnay Côte de Beaune Puligny-Montrachet

The village of Puligny is considered to be the ideal terroir for Chardonnay. With 4 Grand Crus and many Premier Crus surrounding them, Puligny is home to some of the most sacred vineyard ground in all of France, and possibly the world. These wines are generally on the riper side of Chardonnay, and can age gracefully. Look to Etienne Sauzet, Paul Pernot, and Domaine Leflaive for premier examples. Soil type: Limestone, Oolitic ironstone, flinty clay, marl and calcareous topsoils

PREMIER CRU 0496 Henri Boillot, ’Les Pucelles’ 2012 495 3534 François Carillon, ’Les Perrières’ 2012 375 GRAND CRU 0449 Domaine Gagnard-Delagrange, Bâtard-Montrachet 2014 470 0499 Bernard Moreau, Chevalier-Montrachet 2010 850 0486 Paul Pernot, Bâtard-Montrachet 2011 795 Chassagne-Montrachet

The white wines of Chassagne-Montrachet have power, and a round, creamy mouthfeel that is seductive. The wines are more floral than the wines found in Puligny, with slightly more use of new French during élevage. Top-tier producers include Ramonet, Marc Colin and the rising stars, Bernard Moreau and Pierre-Yves Colin-Morey. Soil type: Oolitic Bathonian limestone Bin No. Bottle

12 4.12.2019 Chardonnay Côte de Beaune Saint Aubin While not the most famous of the Cote d'Or villages, Saint-Aubin is one of Burgundy's top-performing wine communes in terms of both volume and vineyard quality; nearly three-quarters of its sites have Premier Cru status. As well, while Saint-Aubin wines are rarely considered to be among the region's finest, they are known for offering excellent value for money and can provide a good introduction to Burgundy wines. Pierre-Yves Colin-Morey is based out of here and produces some of the most stunning examples.

14 4.12.2019 Sauvignon Blanc FRANCE Loire Valley Some of the world’s most mineral wines from various soils loaded with limestone and silex. The wines are flinty and highly perfumed with musky aromas of flowers, tart green apples, gooseberry, and a distinctive herbaceous quality reminiscent of fresh-cut grass. The palate delivers fresh grapefruit zest, and high-pitched citrus flavors. This is terroir at its finest. 15 4.12.2019 Chenin Blanc FRANCE Loire Valley These wines are produced in both dry and off-dry styles, and benefit from high mineral content in the tuffeau soils from which the vines grow. Tart tree fruit, lemon, chamomile, and ginger dominate the nose and palate. The more oxidative versions found in Savennières and Vouvray can give off aromas of hay, lanolin, pistachios, and bruised apples. GERMANY MOSEL Wines from the Mosel are some of the most transparent wines in the world. The wines are the lightest and most mineral-driven Rieslings in all of Germany, producing wines that are incredibly compatible with food. The climate in the Mosel is marginal and grapes struggle to ripen. Steep vineyard slopes create quick drainage, so vines must penetrate the slate beneath them to access water deep below the surface.
