sauce..............................................................................62 APPETIZERS, STARTERS & SOUPS 3 2 FRIED MOZZARELLA SANDWICHES WITH SAN MARZANO TOMATOES 30 min easy 4 INGREDIENTS • 11 oz Mozzarella di Bufala Campana • 4 cups of extra virgin olive oil, DOP (buffalo mozzarella) for frying • 6 oz San Marzano dell’Agro • 1 clove garlic Sarnese-Nocerino DOP tomatoes • 3-4 fresh basil leaves • 3 eggs • 1 pinch of freshly-ground black pepper • 8 slices of white sandwich bread • 1 cup of flour • ½ cup of whole-fat milk • 1 pinch of fine table salt PREPARATION Cut the crusts off the white bread slices with a sharp knife. Cut the Mozzarella di Bufala Campana DOP into 4 medium-thick slices and place them on 4 of the bread slices, making sure that they do not spread over the sides, and then cover each with a slice of bread to make a sandwich and press them firmly. Cut each mozzarella sandwich into two strips. Put the flour onto a plate and beat the three eggs in a bowl with the milk, salt and ground pepper. Dip the strips first in the flour, making sure the sides are well-coated and then in the egg mixture; this will form a seal so that the mozzarella doesn’t leak during frying. Repeat until you have coated all the strips. Meanwhile heat the oil in a deep skillet and when it is hot, deep-fry the sandwiches until they are golden-brown on all sides. Then drain the fried sandwiches in a basket or on paper towels. For the sauce, put extra virgin olive oil in a frying pan, sauté the garlic until golden and then add the San Marzano DOP tomatoes, salt and cook gently. To serve, place the sauce in a bowl, then the mozzarella sandwiches on the side, just dipping into the sauce, garnish with basil and black pepper and the dish is ready. 5 4 TUSCAN BREAD AND TOMATO SOUP 50 min easy 4 INGREDIENTS • 28 oz San Marzano dell’Agro • 1 clove garlic Sarnese-Nocerino DOP tomatoes • a few sprigs of fresh basil leaves • 21 oz stale Tuscan country-style • extra virgin olive oil, as needed (sourdough) bread • salt, to taste • vegetable stock, as needed • pepper, to taste PREPARATION Roughly chop the San Marzano DOP tomatoes. Take a large pot (if you have a stove-top clay pot, it is ideal), heat up the extra virgin olive oil with a clove of garlic over a medium heat for about 2 minutes, then remove the garlic. Add the chopped tomatoes. Let the tomatoes cook for a couple of minutes and then cover. Season with salt and pepper. Dice the stale bread and put it into
