THE WINE PROGRAM AT CHARLESTON is all about the relationship between wine and food. After a quarter century of watching and tasting CHEF'S VERY PERSONAL CUISINE in development I constantly work to understand the balance & content of her dishes and how they relate to the wines in the cellar.

Among many, some considerations for cellar selection include : - what the growing season is like for farmers in this part of the country - the mood and the taste of our clientele - the individual people who make the wine and their culinary traditions

All of this information becomes this giant and RIDICULOUS MATRIX OF INFORMATION that gives us just enough detail and data to actually do something akin to art. Making the right connections is not formulaic, but it is based on a lot of information. THESE CONNECTIONS ARE AT THE HEART OF WHAT WE STRIVE TO CREATE.

– Tony Foreman, Wine Director & Owner Lindsay Willey, Chief Sommelier

All CHAMPAGNE TASTES SOMEHOW OF APPLES. The wines are superbly diverse and complex yet always accessible. Maybe this is THE wine of celebration as it has the most particular magic. Aroma of fresh peel from a granny smith is so different from the sweet flesh of a honeycrisp, but somehow they bring the same universal happy memory. In the wine, this accessible note from childhood is mixed with all the geological history and individual seasonal life story of the vines and their fruit that is written in an ENTIRELY UNIQUE PLACE for growing and making wine. Champagne is sorted on the following pages into different groups: BLANC DE BLANCS one would expect to be lacy, clean and full of verve. BLANC DE NOIRS is filled with raspberry baritone fruit. ROSÉS are diverse. From charming, light & easy to rich, toasty & boisterously chasing a lamb dish. TÊTE DE CUVÉE are the best grown versions from both tiny familial producers and the most famous names in Champagne alike. NON & MULTI VINTAGE (NV) run from young and fruity to powerful and austere. Champagne is VERY FAR NORTH in comparison to other places you may try to grow Chardonnay, Pinot Noir and Pinot Meunier and as such, ripening is extremely variable (though a bit more reliable with climate change). Because of this inconsistency, the wines historically have been a BLEND OF DIFFERENT VINTAGES attempting to maintain something of a HOUSE STYLE. 806 Pol Roger “Réserve” Brut NV $120 809 Billecart-Salmon “Réserve” Brut NV $132 Bollinger always produces a more toasty red fruit-driven, rich Cello solo sort of a Champagne. 840 Bollinger “Special Cuvée” Brut NV $158 829 Egly-Ouriet Grand Cru “Tradition” Brut NV $222 868 Gosset "Excellence" Brut NV MAGNUM $247 SPARKLING 824 Conca del Riu Anoia, Raventós i Blanc “De Nit” Brut Rosé (Spain) 2018 $54 825 Roederer Estate Brut (Anderson Valley) NV $63 638 Crémant d’Alsace, Sipp Mack Brut (France) NV $68 Outside of Champagne, the most interesting and delicious wine - that is made in the Champagne method - I have had in a long time is the Brut “Classic Cuvée” from Nyetimber in Surrey. WHEN I WAS A KID this was the misnomer of all the terrible white wines everyone’s parents were drinking when they weren’t drinking Canadian Club. THESE ARE NOT THOSE WINES. These wines are extremely precise, structured and incredibly long and complex in the mouth. The Grand Crus are very age worthy and can carry one through a meal. Chef always has seafood courses that beg for the intensity and relative lightness available here. HER COOKING IS NOT SHY. Neither are these wines. 2234x Chablis, Jean-Marc Brocard “Sainte Claire” 2019 $54 2134x Chablis, Domaine Testut “Côte de Bréchain” 2018 $60 2446x Chablis, Alice et Olivier de Moor “L’Humeur du Temps” 2019 $94 2232 Chablis Ier Cru “Vaillons” Jean et Sébastien Dauvissat 2017 $96 2549x Chablis Ier Cru “Fourchaume” Louis Jadot 2018 $101 2333 Chablis Ier Cru “Fourchaume” Le Domaine d’Henri 2017 $105 2441x Chablis Ier Cru “Fourchaume” Jean-Marc Brocard 2018 $114 2164 Chablis Ier Cru “Vaillons” Jean-Paul & Benôit Droin 2018 $114 2239x Chablis Ier Cru “Mont de Milieu” Alice et Olivier de Moor 2018 $180 2413x Chablis Grand Cru “Les Clos” William Fevre 2012 $232 The wines of François Raveneau are at the pinnacle of white wine quality in the world. 10 MEURSAULT I just love the wines of this village. There is generosity, balance, FLIRTATION & RESTRAINT all at once in the Chardonnay expression here. These wines have tension and more tension. Volume and intensity are focused through acidity to create a unique condition. While these wines are famous the world over for how “classy” they are it is THEIR EDGE that sets them apart. 11 WHITE BURGUNDY

CHASSANGE-MONTRACHET There is an opulence here that seems to flow into the Grand Cru wines situated between Puligny and Chassagne. Like the BONES are from one and the FLESH from another. These wines can be CREAMY & DENSE and require rich preparations of seafood and white meat. 2133x Chassagne-Montrachet, Louis Jadot 2016 $150 2259 Chassagne-Montrachet, Marc Colin “Les Encégnierès” 2015 $172 2142 Chassagne-Montrachet Ier Cru “Les Champ-Gains” Guy Amiot 2014 $190 2135 Chassagne-Montrachet Ier Cru “Clos Saint Jean” Guy Amiot 2016 $215 2111 Chassagne-Montrachet Ier Cru “Les Vergers” Guy Amiot 2016 $215 2449 Chassagne-Montrachet Ier Cru “Morgeot” Louis Jadot 2017 $216 2147 Chassagne-Montrachet Ier Cru “Les Caillerets” Guy Amiot 2017 $226 719 Bâtard-Montrachet Grand Cru, Etienne Sauzet 2016 $1407 CÔTE CHALONNAISE & MÂCONNAIS The wines from Côte Chalonnaise are from just south of the Côte d’Or and reflect a similar build to their nearby brethren. The flavors just turn a bit darker, they absorb oak differently and reveal STURDY FRUIT & STRUCTURE. Mâconnais wines are FATTER & SUNNIER and built more like California Chardonnay with a completely different minerality. 2404x Saint Véran, Domaine Cordier “En Faux” 2018 $81 2209 Givry Ier Cru “Crausot” François Lumpp 2016 $96 2345 Pouilly-Fuissé, J. Their depth of expressive fruit and ebullient personalities are always at the core, in my mind, of what these wines should be. There are certain dishes that I absolutely prefer with American Chardonnay — LOBSTER & FRESH CORN being two of the ingredients that trigger that preference.

15 SAUVIGNON BLANC

BORDEAUX Bordeaux whites are often complex blends of Sauvignon Blanc, Sauvignon Gris, Semillon & Muscadelle. Both of the Sauvignon grapes lend a verticality to the structure and length to the finish of the wines. Semillon can add a nutty richness and density depending upon the individual growing site and the choices of the grower. These whites AGE VERY SUCCESSFULLY becoming more savory and complex as time goes by. The older ones can be a remarkable PAIRING WITH THE CHEESE CART. 108 Domaine de Chevalier “L’Esprit de Chevalier” (Pessac-Leognan) 2016 $88 2023x Château Carbonnieux (Pessac-Leognan) 2015 $90 2154 Château Malartic Lagravière (Graves) 2015 $180 447 Château Malartic Lagravière (Graves) 2010 $197 157x Domaine de Chevalier (Pessac-Léognan) 2009 $286 LOIRE VALLEY Sauvignon Blanc from the Loire is among the most MARVELOUSLY CRISP & CLEAN white wines available. The chalky soils and the cool growing season form 90% of the wine’s personalities. 2418x Sancerre, Karine & Christian Lauverjat “Moulines des Vrilleres” 2020 $52 2032 Pouilly Fumé, Joseph Mellot “Domaine des Mariniers” 2018 $54 2146x Sancerre, Alphonse Mellot “La Moussière” 2020 $75 2339 Sancerre, Edmond et Anne Vatan à Chavignol “Clos la Néore” 2017 $257 AMERICAN, ETC. The American Sauvignon on the list are of a particular rich style, much like white Bordeaux but even sunnier still. Many of these are FAVORITE FIRST COURSE WINES, especially for summer menus. 2558x Sauvignon Blanc, Andrew Will “Cuvée Lucia” (Yakima Valley) 2018 $75 427x Sauvignon Blanc, Rochioli (Russian River Valley) 2017 $92 206x Sauvignon Blanc, Spottswoode (Sonoma County) 2018 $95 2321 Sauvignon Blanc, Peter Michael “L’Après-Midi” (Sonoma County) 2016 $146 210 Sauvignon Blanc, Peter Michael “L’Après-Midi” (Sonoma County) 2017 $155 2454 Sauvignon Blanc, Peter Michael “L’Après-Midi” (Sonoma County) 2018 $155 VOUVRAY 2113 Vouvray, Pichot “Domaine le Peu de la Moriette” 2018 $40 2509x Vouvray Sec, Domaine Huet “Le Haut-Lieu” 2019 $80 2423 Vouvray Moelleux, Foreau “Domaine du Clos Naudin – Reserve” 2015 $244 2524 Vouvray Moelleux, Foreau “Domaine du Clos Naudin – Goutte d’Or” 2015 $634

16 RIESLING

The grape can be either DRY or bone dry OR A LITTLE BIT OFF DRY like some Alsace and some German versions and also a little bit sweet in the case of certain vintages. AUSTRIA The wines, especially from the most famous sites in the Wachau are Riesling at its MOST PRECISE, incredibly linear and age worthy. They gain power and more complex flavors with time in the cellar. 2305 Riesling Federspiel, Franz Hirtzberger “Steinterrassen” (Wachau) 2016 $75 2425x Riesling Federspiel, Weingut Knoll “Loibner” (Wachau) 2016 $80 2330 Riesling Smaragd, Franz Hirtzberger “Hochrain” (Wachau) 2014 $104 2355x Riesling Smaragd, Franz Hirtzberger “Ried Setzberg” (Wachau) 2017 $136 2130 Riesling Smaragd, Franz Hirtzberger “Singerriedel” (Wachau) 2011 $178 2175x Riesling Smaragd, Franz Hirtzberger “Singerriedel” (Wachau) 2009 $205 2215x Riesling Smaragd, Franz Hirtzberger “Hochrain” (Wachau) 2009 $210 GERMANY Germany produces a typically lighter version that is often a bit lower in alcohol, sweeter but a very vivid expression of the grape — Riesling at its most charming. 2415x Riesling Kabinett, Eugen Müller (Forst) 2019 $41 2405 Riesling, Dönnhoff (Nahe) 2019 $54 2305x Riesling Grosses Gewächs, A. 17 GRÜNER VELTLINER

Besides being the single most entertaining grape varietal to pronounce, these are wines of very special and particular qualities. They are marvelous with RAW, CURED & SMOKED SEAFOOD, salty dishes and dishes that are built with a broad range of flavors from earthy like a Chioggia beet to edible flower petals. Typically you expect aromas and FLAVORS OF GREEN TEA, white pepper and minerals. 164 Grüner Veltliner, Soellner “Toni” (Wagram) 2016 $40 Franz Hirtzberger Grüners age very very well and their style is broader and more powerful than others. 2165 Grüner Veltliner Federspiel, Franz Hirtzberger “Rotes Tor” (Wachau) 2017 $81 2435x Grüner Veltliner Smaragd, Franz Hirtzberger “Ried Kirchweg” (Wachau) 2017 $102 2205x Grüner Veltliner Smaragd, Franz Hirtzberger “Rotes Tor” (Wachau) 2016 $126 2415 Grüner Veltliner Smaragd, Franz Hirtzberger “Rotes Tor” (Wachau) 2017 $126 2505 Grüner Veltliner Smaragd, Franz Hirtzberger “Ried Axpoint” (Wachau) 2017 $136 2535x Grüner Veltliner Smaragd, Franz Hirtzberger “Honivogl” (Wachau) 2014 $210 2405x Grüner Veltliner Smaragd, Franz Hirtzberger “Honivogl” (Wachau) 2017 $222 738 Grüner Veltliner Smaragd, Franz Hirtzberger “Honivogl” (Wachau) 2017 6 LITER $1950

18 CENTRAL EUROPEAN

GEWÜRZTRAMINER, MUSCAT & PINOT GRIS Gewürztraminer and Muscat are the spice boys with the MOST EXOTIC & SPICY AROMAS out there. Muscat does not have the same muscle as Gewürztraminer nor is it typically quite as sweet or big bodied. Pinot Gris from Alsace is actually the same grape as Pinot Grigio in Italy, but the style of the wine is enormously different. These are more similar to Chardonnay in size and density — just don’t expect the toasty, oaky buttery flavors. The wines often have a SLIGHTLY SMOKEY APPLE PIE characteristic. 2455 Pinot Gris/Pinot Blanc/Riesling Trocken, Diel “Diel De Diel” (Nahe) 2018 $45 2030 Gewürztraminer, Sipp Mack “Tradition” 2016 $51 138 Gewürztraminer, J. We are ignoring the political boundaries in this section because the stylistic similarities are strong and the cooking styles from these areas are similar. 330 Valle Isarco Kerner, Abbazia di Novacella (Alto Adige) 2018 $42 2010 Auxerrois, Rolly Gassmann “Rotteilble de Rorschwihr” (Alsace) 2016 $54 395 Pinot Blanc, Domaine Weinbach “Clos de Capucins – Réserve” (Alsace) 2016 $57 2545 Pinot Blanc, Domaine Weinbach (Alsace) 2018 $60 204 Pinot Bianco Riserva, Cantina Terlan “Vorberg” (Alto Adige) 2017 $91

19 SPAIN & ITALY, ROSÉ

SPAIN & ITALY SUMMER INGREDIENTS are quite conducive to the whites of Spain & Italy. Many of these make excellent APERITIF WINES that transition into first courses. 2558 Albariño, Fillaboa (Rías Baixas) 2019 $40 235x Gavi di Gavi, Broglia “La Meirana” (Piedmont) 2019 $48 2447x Verdejo, Belondrade “Quinta Apolonia” (Spain) 2018 $51 The Maffini Fiano manages a very specific balance between being plump, rich and expressing real freshness at the same time. It is the perfect white for rich fish, strong flavored shellfish & summer vegetables. 109x Cilento Fiano, Luigi Maffini “Pietraincatenata” (Campania) 2017 $93 330x Veneto Bianco, Giuseppe Quintarelli “Secco Ca’del Merlo” (Veneto) 2016 $111 331 Toscana, Gaja-Ca’Marcanda “Vistamare” (Tuscany) 2013 $150 ROSÉ Palette, Château Simone (Provence) 2018 — will continue to age with time. 20 RED BURGUNDY

Burgundy is the home of PINOT NOIR and it is the most extreme place to grow it. The slope that runs about 31 miles is positioned with such a wide variety of exposure to very specific weather. The coolness is a big factor in bringing such intense, vivid flavors that are so specific because the grapes are on the EDGE OF SURVIVAL. There is a reason we filled 10+ pages with wines from Burgundy — and it is worth explaining why. More than fruit, savory flavors and structure — there is also SOUL & MAGIC in the wine when everything works. We know that when it’s in a mood, that magic lies dormant. Like people, as time goes along, you have different days. Something that strikes you as funny one day may not the next. There are three big factors that contribute to quality and differentiation in Burgundy. These will be most helpful in making a choice. 1) PRODUCER: the individual farmers who grow grapes and produce wines 2) SITE: vineyard location dictates not just some of the quality potential but a lot of the flavors 3) VINTAGE: variations in weather have a major impact on the final product Imagine the difference between green and blue. Let’s say Morey-Saint-Denis, a particular village in Burgundy, is green. For each producer, site and vintage, there are many variations of the color green within the village. Chambolle-Musigny — we’ll say that village is blue — many factors may dictate the shade but it’s always still blue. A word on vintages... Burgundy is a challenging place to grow Pinot Noir to full ripeness even in the days of climate change. What constitutes “a great year” has shifted a bit. One thing that is certain is that from the very best producers and the very best sites you have wines with the most personality, greatest character and most specific and particular expression. There are vintages available from this cellar that were cooler and produced light, clean and vivid wines that drink beautifully in the right context — 2008, 2011, 2013. There are vintages of plump sunny fruit and ebullience that take over the party as soon as they walk in like 2009 & 2015. The vintages prized by the classicists the most — 2010 & 2016 — are often wines that require the most patience and in the short term the most intense dishes paired with them. 2014 is not as bombastic as 2015 or as tart as 2013.

28 BEAUNE In Beaune Premier Cru look for MEDIUM-WEIGHT, SPICY PINOT NOIR that are dead-on for a number of dishes — quail, sweetbreads, foie gras. 30 BEAUJOLAIS & RED LOIRE

There is no bottle of Beaujolais that we offer that I’m not very happy to drink. These wines are absolutely “important” enough for a very special meal. If there is PORK OR BACON involved – and you don’t want to spend the money for good Northern Rhône, Gamay from Beaujolais can have a similar build with a little less tannin. Serious Gamay from the best terroirs have the same granitic soil — are VIVID & INTENSE and will handle pork, guinea fowl and also all kinds of charcuterie. Loire reds with venison and bison are excellent – the INTENSITY & HERBY EDGE works so well with the intense, very gamey, bloody meat with nearly no fat. 2437 Chinon, Bernard Baudry “Les Granges” 2018 $47 2324 Moulin à Vent, Domaine des Chers “Vieilles Vignes” 2017 $49 199 Beaujolais, Pierre Marie Chermette “Origine” 2019 $49 2313 Saumur-Champigny, Château du Hureau “Fours à Chaux” 2015 $60 576 Bourgueil, Y. 31 RED BORDEAUX

Thinking about the difference between Cabernet Sauvignon & Merlot in Bordeaux versus in Napa and the new world... The wines are enormously different because theVINES ARE ADAPTED to the region – each is becom- ing more itself. Very few from the west coast of the U.S. are similar. Cabernet Sauvignon definitely isTHE BIG MOVIE STAR on the west coast and gets all the attention and Merlot is the quiet friend that goes along sometimes. In Bordeaux, Merlot is the most widely planted grape. Cabernet Sauvignon is only the dominant grape in a few specific sites. The wines on this list are all broken into villages that have DISTINCT SOIL TYPES. It is the soil types and the drainage that dictate the plantings of the grapes. And yes, there are three other grapes that are included in the blends although none of them run the show — except for two extreme examples that I can think of. SATELLITE APPELLATIONS 2527 Château Larose Perganson (Haut – Médoc) 2015 $57 2238 Château d’Aiguilhe (Castillon – Côtes de Bordeaux) 2015 $90 ST. ESTÈPHE Clay soils make St. Estèphe a more successful place for Merlot than the rest of the left bank of the Gironde. These wines tend to have rich, dense, vertical Cabernet Sauvignon structure and broad, mineral-driven Merlot content. Like all Bordeaux, they age very well though St. Estèphe never loses the BARITONE/BASS NATURE of its personality even at advanced age. 309x Cos d’Estournel 2006 – deuxièmes cru $350 495 Château Montrose 1995 – deuxièmes cru $673 702 Château Montrose 2000 – deuxièmes cru $860 745 Cos d’Estournel 1975 IMPÉRIAL – deuxièmes cru $5500

32 PAUILLAC Pauillac is the home of three first growths, maybe the most famous wines of Bordeaux and very likely THE LONGEST LIVED. Most of these wines are 85-90% Cabernet Sauvignon grown in meager gravel soils and can be incredibly structured and complex. It is home of many an address to impress. 2434x Château Lafite-Rothschild 1999 –premier cru $2142 724 Château Mouton Rothschild 2009 – premier cru $2589 733 Château Mouton Rothschild 1990 – premier cru $2635 706 Château Latour 2000 – premier cru $4375 2018x Château Pichon Longueville – Comtesse de Lalande “Réservé de la Comtesse” 2014 – deuxièmes cru $120 2128x Château Pichon Longueville – Comtesse de Lalande 2005 – deuxièmes cru $620 2140 Château Pichon Longueville “Comtesse de Lalande” 1990 IMPÉRIAL – deuxièmes cru $3450

ST. JULIEN I find these wines similarly structured to Pauillac however they typically have a bit more Merlot in the blend and tend to be more forward drinking. I am personally very fond of the MINERAL FOOTPRINT that is evident in the aromatics in St. Julien. 2527x Château Ducru-Beaucaillou 2000 – deuxièmes cru $868 725 Château Gruaud-Larose 1982 – deuxièmes cru $1140 Château Ducru-Beaucaillou is a second growth estate that is my personal favorite of St. Julien. 34 MARGAUX Margaux is the name of the village and also of the most famous Château in the appellation. These are wines very much dominated by Cabernet Sauvignon that is grown in sandy soil. This particular terroir offers less dense wines with more gentle tannins than other left bank wines. Margaux is usually most loved for its floral aromatics and PURITY OF BLACK FRUIT. These can be wines of great refinement and nuance. 2536 Château Margaux “Pavillon Rouge” 2010 – premier cru $730 413 Château Margaux 1982 – premier cru $2906 425 Château Margaux 2000 – premier cru $3025 741 Château Margaux “Pavillon Rouge” 1996 5 LITER – premier cru $3075

35 RED BORDEAUX

PESSAC-LÉOGNAN & GRAVES This region is home to one of my personal favorite producers historically — Château La Mission Haut Brion — as well as a number of rapidly ascending producers that are lesser known. The wines are very individual and usually have a stamp of very complex aromatics of tobacco, flint, a mixture of dusty red & black fruits, and very INTENSE MINERAL SENSE. When I think about these wines I WANT TO DRINK THEM. They are typically an even blend of Cabernet Sauvignon and Merlot with a few very particular exceptions. 2419 Château Haut-Bergey 2005 $146 2201 Château Malartic Lagravière 2014 $165 167 Château Malartic Lagravière 2015 $170 200 Château Branon 2008 $180 2128 Domaine de Chevalier 2014 $198 2556 Domaine de Chevalier 2015 $231 407x Château Malartic Lagravière 2010 $252 2502 Château Pape-Clement 2009 $370 148x Château La Mission Haut-Brion 2004 $660 391 Château La Mission Haut-Brion 1996 $980 708 Château La Mission Haut-Brion 1990 $2080 718 Château La Mission Haut-Brion 1996 MAGNUM $2720 2140x Château Haut-Bailly 2005 IMPÉRIAL $5350

36 POMEROL Pomerol has a very special magic for me. I often think these are the richest wines in Bordeaux and they live a much longer time than you think they may — especially from the best producers. These wines are often more than 90% Merlot and have a particular FERROUS MINERAL NOTE that recalls some of the great Côte de Nuits Grand Crus like Clos de la Roche or Chambertin-Clos de Bèze. These are also wines of a beguiling SOFT, PLUSH TEXTURE. What can I say, I’d like to be spoiled. 2172x Château Bellegrave 2015 $158 2335 Château Rouget 2016 $200 2172x Château Le Gay 2013 $226 2158 Château Feytit-Clinet 2015 $243 303 Château Clinet 2013 $250 2503 Château Certan – De May de Certan 2011 $270 132 Château Clinet 2015 $272 408 Château La Conseillante 2014 $297 2213 Clos L’Église 2016 $358 2532x Château Clinet 2008 $408 2036x Château Clinet 2010 $428 2138 Château Certan – De May de Certan 2010 $450 341 Vieux Château Certan 2004 $523 2335x Clos L’Église 2009 $546 499 Château La Violette 2006 $650 2176x Vieux Château Certan 1999 $660 354 Vieux Château Certan 2005 $695 100x Vieux Château Certan 2009 $990 2226 Vieux Château Certan 1982 $1150 221x Château l’Evangile 1990 $1302 726 Château Pétrus 2016 $4450

38 NORTHERN RHÔNE VALLEY

The Northern Rhône Valley offers a range of terroirs for SYRAH. Crozes-Hermitage and Saint Joseph show the grape at ITS MOST FORWARD (in France) and perhaps Cornas offers it at its most broad & rustic. 2254x Crozes-Hermitage, Marlène & Nicolas Chevalier “Les Voleyses” 2015 $66 310 Saint Joseph, Domaine Faury 2010 $107 445 Saint Joseph, Domaine du Tunnel 2016 $110 2303 Saint Joseph, E. Guigal 2016 $128 HERMITAGE Hermitage is the ancient home of SYRAH IN FRANCE. The grape has been documented to grow there for more than 1100 years. Hermitage vineyards are essentially sitting like a monk’s cap of granite atop a very round hill directly across the river from the town of Tain (where Valrhona chocolate was born and is produced). The best vintages for Hermitage are always when that GRANITE CAP IS ROASTED thoroughly in the sun. 231x Hermitage, Delas Freres “Les Tourettes” 2011 $220 158 Hermitage, J.L. Chave 2006 $435 113x Hermitage, Delas Freres “Les Bessards” 2011 $500 2246x Ermitage, E. Guigal “Ex Voto” 2007 $900 400 Ermitage, E. Guigal “Ex Voto” 2009 $1200

39 NORTHERN RHÔNE VALLEY

CÔTE RÔTIE Côte Rôtie (meaning the roasted slope) is a steep vineyard site with GREAT SUN EXPOSURE on the west bank of the Rhône river just north of the Hermitage hill. These wines are not as dense, tannic or broad as Hermitage but often are much more SPICY, EXOTIC & JUICY. Some of the wines have an accent dose of the white grape Viognier in the blend with the Syrah which will make the wines more exotic and generous. For about 20 years I believed strongly that the 1969 “La Mouline” from Guigal was the SINGLE MOST DELICIOUS red wine I had ever tasted. I will always have great affection — the same sort of feeling about that wine as I do about my first real girlfriend — I will never lack affection for or appreciation of it. The single vineyards are very rare and compelling and we are very lucky to have such a collection. 222x Côte Rôtie, Saint Cosme 2016 $174 2538 Côte Rôtie, Domaine de Bonserine “La Viallière” 2012 $204 450 Côte Rôtie, E. 40 CHÂTEAUNEUF-DU-PAPE

In the last 25 years I’ve seen a huge change in perception and awareness of Châteauneuf-du-Pape driven by Mr. Parker’s enthusiasm for the wines as well as — first and foremost — by how delicious they are. These are red wines with broad drinking windows, good age ability, FANTASTIC FRUIT and terrific complexity. The diversity of terroirs and winemaking styles is pretty gigantic in this appellation. Growers are allowed to source from a vast selection of 13 DIFFERENT GRAPES: Grenache, Mour- vèdre, Syrah, Cinsault, Counoise, Picpoul (Noir/Blanc/Gris), Terret Noir, Bourboulenc, Clairette, Roussanne, Vaccarèse, Picardan and Muscardin. They are all interesting but Grenache is, by far, the most widely planted & interesting — it brings joy and carries the personality of the wines. 43 CÔTES DU RHÔNE

The wines from around the villages in the Southern part of the Rhône Valley that are notable are typically Grenache driven. Like Châteauneuf-du-Pape, their personalities are particular. The wines don’t possess the same kind of rich body and power but so many of them are really juicy and LOVELY WINES TO DRINK. These are not shy wines. 2302x Lirac, Domaine La Consonniere 2016 $50 2109x Côtes du Rhône, Famille Perrin “Coudoulet de Beaucastel” 2016 $57 2257 Côtes du Rhône, Famille Perrin “Coudoulet de Beaucastel” 2018 $59 444x Côtes du Rhône, Famille Perrin “Coudoulet de Beaucastel” 2017 $60 2402x Côtes du Rhône, Le Clos du Caillou “Le Bouquet des Garrigues” 2016 $66 2241 Vacqueyras, Domaine le Sang des Cailloux “Cuvée Doucinello” 2017 $80 2322 Gigondas, Domaine Raspail-Ay 2017 $91 2519x Gigondas, Les Pallières “Racines” 2018 $106 712 Côtes du Rhône, Château de Fonsalette 1998 $245

RIOJA Rioja as a wine growing region is a MICROCOSM OF CHANGE and development in wineries and winemaking over the last 50 years. There are still producers who work in the “more traditional way” meaning greater oxidation and very long barrel aging, often in American oak. There are also modernists, smaller producers, individually vinifying very special small vineyard sites. A reasonable rule of thumb in choosing & cellaring Rioja is that is has an EXCELLENT PARALLEL TO BORDEAUX. The best wines age extremely well and largely follow Bordeaux vintage quality. 2451 Rioja Reserva, Cune “Imperial” 2015 $93 305x Rioja Reserva, La Rioja Alta “Viña Ardanza” 2012 $93 322 Rioja Reserva, Cune – Contino 2014 $105 2352x Rioja Gran Reserva, Viñedos de Páganos “El Puntido” 2007 $141 2156x Rioja, Conde De Hervías 2009 $148 2162x Rioja Gran Reserva, Muga “Prado Enea” 2014 $176 434 Rioja Gran Reserva, Granja Remelluri 2010 $216 All the Cune wines are bottled and then stored, unlabelled, in the historic cellars. PIEDMONT This is a region that I have an undying affection for — both the wines and the food. Nebbiolo, the most important grape that you find in Barolo, Barbaresco and several other DOCGs in the cellar has a personality and an ability to be uniquely and individually expressive in a way that is not unlike Pinot Noir from Burgundy — with one gigantic difference. These are wines of grace but also DENSITY, POWER, TANNIN and a dry fruit character. Nebbiolo in a happy place will always have aromas of flowers, fruit, spice and the MINERAL CONTENT OF THE EARTH in which it is grown as part of its expression. 2300 Nebbiolo d’Alba, Sandrone “Valmaggiore” 2017 $79 2166x Barbaresco, Produttori del Barbaresco 2017 $99 2406x Barolo, Poderi Luigi Einaudi “Ludo” 2015 $110 160x Barolo, Brovia (Castiglione Falletto) 2015 $118 2458 Barolo, M. TUSCANY The most important red grape in Tuscany is SANGIOVESE and it is grown in a wide variety of locations and situations. There are SOFTER WINES from the Chianti zone and much more tannic versions from Montalcino where Sangiovese is most easily identified by its very consistent dried red fruit and SWEET LEATHERY PALATE. The wines from the Tyrrhenian coast famously known as “Super Tuscans” are largely made from Bordeaux grapes like Cabernet Sauvignon and Merlot and are built very similarly. 2148x Rosso di Montalcino, Uccelliera 2017 $75 212 Bolgheri Superiore, Michele Satta “Piastraia” 2016 $78 446 Chianti Classico, Fontodi 2017 $99 2328x Brunello di Montalcino, Conti Costanti 2015 $240 2119x Brunello di Montalcino, Fuligni 2016 $243 2141x Brunello di Montalcino, Conti Costanti 2016 $255 2543 Brunello di Montalcino Riserva, Uccelliera 2012 $261 314 Sangiovese di Toscana, San Giusto a Rentennano “Percarlo” 2013 $305 429 Brunello di Montalcino, Valdicava 2010 $310 2442x Brunello di Montalcino Riserva, Fuligni 2013 $385 2217x Brunello di Montalcino, Cerbaiona 2012 $390 421 Brunello di Montalcino, Salvioni Giulio “Cerbaiola” 2009 $410 217x Bolgheri Superiore, Ornellaia 2015 $478 2148 Bolgheri Superiore, Ornellaia 2006 $625

49 BORDEAUX in the NEW WORLD

After spending a lot of time on European wine education from when I was very young I had affection for those wines and I had begun to have reasonable command of them. In 1990 I had dinner with a colleague at Jean-Louis, the very storied restaurant in the Watergate hotel. Jean-Louis Palladin came to the U.S. as a two star Michelin chef some years before and did not do things like other chefs in Washington. A friend that I worked with gifted my colleague and I with a bottle of wine — the famous Cabernet Sauvignon bottling from Beaulieu Vineyards, Georges Latour. The vintage was 1969. I was stunned by the breadth, the intensity, the complexity and the SIMPLE HAPPINESS that the wine provided. That will probably always be my AMERICAN EPIPHANY WINE that made me turn and look at the very best of our efforts here in the states with admiration. The wines that follow are not solely from Napa but from a number of regions from the west coast that we think grow remarkable Cabernet Sauvignon. BOND This is Bill Harlan’s project made up of very small distinct single vineyards that have individual personalities. OREGON & WASHINGTON Oregon has the potential to RIVAL BURGUNDY for compelling aromatics. At the very best they can almost have that very sensual perfume that Burgundy can have. 59 LARGE FORMAT

We’ve chosen a few particularly ageworthy wines to offer in large formats in part because the larger format allows the wines to AGE MORE SUCCESSFULLY and because of course, it is always MORE FESTIVE to have a big bottle at the table. It is best to allow us some decanting time, or order a bottle a day or two in advance, so we can properly care for it and it can be served as intended, the SHOW-STOPPING CENTERPIECE of your dinner party.
