The Txakoli winemaking region is situated in the north of the Basque country on the sea-facing hillsides of Getaria and Bakio. High quality Txakoli wines are also produced in other regions e.g. in Álava. Txakoli wine is of great social and economic importance and a source of pride amongst locals who value the region’s thriving wine industry. The Basque government seeks to protect the unique heritage and winemaking methods of the Txakoli region whilst promoting its quality wines.

Due to successful measures taken by the Txakoli-producers as well as the Basque Government, Txakoli has experienced a true Renaissance over the past years. The objective is to conserve the singular heritage and the traditional growing methods of the Txakoli-region and to establish quality wines in the Spanish and international market.

Itsasmendi winery was founded in 1995 in Muskiz, a town is renowned for its rich Txakoli white wine-producing tradition. In 2002, due to the increase of the vineyards, the winery moved to Gernika, in the Urdaibai Reserve. Itsasmendi winery owns 30 hectares of vineyards that were gradually planted between 1989 to 2011 in mountainous hills next to the sea.

6 Rioja Alavesa

Located in the southern part of Alava, in the south of the Basque Country, this part of the world famous DOCa Rioja guarantees plentiful sunshine, sufficient rainfall and protection by the Sierra de Cantabria Mountains from the harsh weather conditions of the Bay of Biscay. This winning combination enables the region’s 200+ vineyards to make wines with unique characteristics, which set them apart from wider known Riojas produced in neighbouring Rioja Alta and Rioja Baja. About 90% of is grown here on ochre clay and lime soils

Many wine producers of the region do have a long family tradition, which is very important in every day life. The wine producers combine traditional methods, passed on from generation to generation, with the most up to date technologies to achieve the highest quality.

Agrícola La Bastida, a family wine cellar, has 22 hectares of land distributed across 17 vineyards situated at the foot of the Sierra de Toloño mountain range and very near the river Ebro. The winery grows only native grape varieties and is a pioneer in the processing and production of small amounts of wine in vertical 225-litre casks.

The Bodegas Carlos San Pedro Perez de Viñaspre is a small family winery with a long history of winemaking in Rioja Alavesa. Today there are two wineries; a 300 year old wine cellar, with ideal conditions for ageing wine and a modern facility established in 2004. The range includes traditional carbonic maceration wines, crianza & reserva wines, as well as some market rarities such as un-barrelled red wine aged only in the bottle.

A family winery established 125 years ago and located in Villabuena. To ensure the character of their wines, old vineyards with a low production level are cultivated at the same time as new plantations. To give the wines their “defining character”, a significant percentage of production focuses on some of the least common varieties of grape in the Rioja-Alavesa winegrowing region: Tempranillo, Mazuelo, Graciano and Viura. The wineries production is around 480,000 bottles (50% exports to the main wine markets).

The cellars and vineyards of Bodegas Hermanos de Lareda are located in Leza, in the foothills of the Sierra de Cantabria Mountains near the River Ebro. With 30 ha. of vineyards here, the Laredo family produces a wide range of young and aged wines, highlighting Reserva and Gran Reserva. The vines were planted in the 1940s so that they are now at their peak, with an almost perfect balance between yield and quality. The new cellar, built in the turn of the century, uses all the technological advances in the winemaking world in recent times.

Located in the village of Oyón, Bodegas y Vinedos Zuazo Gaston is a family cellar with 52 hectares of calcareous-clay soil vineyards growing Tempranillo and Graciano on vines with an average age of 30 years. They only produce red wines – including a young wine, a selected harvest wine (aged 5 months), a Crianza (aged 12 months), a Reserva (aged 18 months) , and a special wine: Finca Costanillas (from the smaller, aged vineyard). Production is limited to 300.000 bottles per year; allowing the possibility to maintain optimum quality.

The Basque cuisine and its ingredients are internationally known and famous for its extraordinary quality. Notable Top-Chefs represent the reputation of this region and attract food enthusiasts from all over the world.

Basque cuisine is influenced by the abundance of produce from the sea on one side and the fertile Ebro valley on the other. The mountainous nature of the Basque Country has led to a difference between coastal cuisine dominated by fish and seafood, and inland cuisine with fresh and cured meats, vegetables, and freshwater fish. Although little known in the UK, Basque cuisine influences international cuisine, particularly Spanish and French cuisine where it is highly regarded.

Fish from the Basque Country, especially white Tuna is highly regarded, as a fresh product as well as in high quality olive oil. Only caught in the traditional way, i.e. the maintenance of the fish stock is sustainably assured. A further speciality is raw milk sheep cheese Idiazabal. The mild as well as medium savoury cheese is produced in a smoked and an unsmoked version and has a Idiazabal Protected Designation of Origin (PDO) since 1987. In addition to that the Basque country boasts mild Guindillas (peppers) in white wine vinegar and with subtle pastry, and ready-to-eat meals.

ARTZAI GAZTA is composed by 116 shepherds who produce Idiazabal D.O.P. cheese. Idiazabal D.O.P cheese is made using only pure unpasteurised milk from Latxa or Carranzana breeds of sheep, salt and rennet and/or lactic ferments.

Additionaly, the shepherds at ARTZAI GAZTA produce the cheese from the milk from their own flock. Thus, it is a seasonal and entirely artisanal production, only made on a small scale.

ARTZAI GAZTA members make Idiazabal D.O.P. cheese by hand with a respect for traditional food methods and with regard to the local environment and agriculture.

Agiña Piperrak has spent years devoting itself to the production and sale of Ibarra chilli peppers with the Eusko label. All produce is made in a traditional way in their hamlets selecting only the best from their harvests. The chilli peppers are bottled in white wine vinegar with a little salt to preserve them. All characteristics come together to produce an agreeable smoothness to the palate.
