These chains may eventually become too heavy to stay suspended in the liquid and may drop out of the solution as sediment. This development has a major impact on the flavor of the wine and is one of the main results of the aging process. In many cases, the production of sediment in a properly-aged red wine renders a wine lighter in color and less astringent. However, it should be noted that new research indicates that polymerized tannins can possibly continue to alter in structure and may eventually break down during extended aging; thus is may be impossible to predict how the tannins in a well-aged wine will be perceived by the taster. De meerwaarde ervan is niet gering, maar slechts recent wisten de Portugezen ook de erkenning daarvoor af te dwingen. De oceaan en het klimaat De meest onderscheidende factor voor de Portugese wijnidentiteit is de invloed van de Atlantische oceaan. De gelijkmatige rijping, en daarmee het evenwicht in de geproduceerde druiven, staat en valt met de verkoeling die de wind van over de oceaan brengt. De specifieke geografie van Portugal bepaalt de mate waarin dit verkoelend effect speelt. Het land wordt klimatologisch in twee gedeeld door de stroom van de Tejo en een diagonale lijn van mekaar opvolgende bergketens (die loopt van links boven Lisboa omhoog tot ten noordoosten van de Dão). Neem daarbij nog de uitgestrektheid van Portugal - van de grens met Galicië tot de Algarve is de afstand zo’n 600km - en we komen uit bij een grote variatie in gemiddelde temperatuur. In het noorden bedraagt die in juli en augustus net geen 21°C. Rond de zuidelijk gelegen stad Wijnhandel Van Dinter waar informatie steeds hoog in het vaandel staat Noteer nu alvast 27-28-29 april 2018 Grote Lenteproeverij Beja loopt ze op tot haast 25°C en is een temperatuur overdag van meer dan 35°C heel gebruikelijk. Die variatie vormt de basis voor de rijke verscheidenheid aan wijnen die Portugal produceert.

Monastrell likes warm, dry climates and has small, thick-skinned berries – the textbook combination for making wines with intense color and high tannin levels. The varietal’s meaty, herby aromas are very distinctive, as are its strong tannins. This is a serious, compelling red wine!
