Stir into the coffee mixture. 4. Sift the flour, baking powder and salt together. Add the cocoa mixture and mix well. 5. Beat the egg whites until stiff. Spoon ⅓ into the batter and fold gently. Then add the rest and fold until combined. 6. Pour into the prepared tin and bake for 40 minutes. Allow to cool before turning out. For the meringue 1. Heat the sugar and water in a small pot until the sugar has dissolved. Bring to the boil for 5 minutes. Set aside. 2. Beat the egg whites until soft peaks form and add the cream of tartar.
