CIRINO STYLE CALAMARI Our friends and customers at Cirino’s Italian Restaurant in Nevada City enjoyed this calamari for the past 30 years. People are constantly asking the secret of our calamari. It is as follows: buy only the highest quality calamari steaks, take the me to tenderize it to perfec on, bread it in your own fresh house‐made seasoned bread crumbs, sauté un l perfectly tender and golden brown, never deep fry, serve with your own killer tartar and cocktail sauces and a wedge of lemon. DAMN HOT PEPPERS WITH GRILLED POLENTA When I was young, my Sundays, every Sunday, much too early, would start: “Hey! You want me fry you some peppers? Damn hot peppers here!” The whole household would wake to the exo c aroma of these wonderful peppers permea ng the air. Sunday mornings. My father celebra ng the only way he knew how, in the style of Naples, yelling and cooking simultaneously! His exclama on to the world: “It’s good to be alive!” And when we feel this way we just have to cook or yell or sing or be er, all of the above at the same me!
