In June 1889, as a means of honouring the Queen of Italy – Margherita di Savoia – an Italian chef named Raffaele Esposito invented a dish that he named the “Pizza Margherita”. The condiments available at the time, tomato, mozzarella and basil, which represent the colours of the Italian flag, make us proud of our simple but rich gastronomic culture. As per Neapolitan tradition, we only make our pizzas using the finest ingredients such as Petra 3 “Type 1” Molino Quaglia and Molino Spigadoro “Type 0” flours mixed with a pinch of yeast. Our dough is leavened for a minimum of 48 hours, our Artisan passata is made from a careful selection of bio tomatoes from Campania which are dry farmed in the Appenino Sannita hills, our fior di latte cheese comes from the Lattari mountains and is produced by an artisanal dairy farm in Tramonti, and to finish, a drizzle of extra virgin olive oil and organic basil from our herb garden. In addition to our classic dough, we also offer a multigrain base made from ancient grain flour.
