You’ll never smell bread baking, bacon crisping, or mozzarella bubbling in a raw-food kitchen. Well, not unless the “bread” is dehydrated, gluten-free, and made of chia seeds and almonds; the “bacon” is actually wafer-thin, dehumidified eggplant; and the “mozzarella” is made entirely from cashew paste. Welcome to the world of vegan raw food: turn off your oven, pour dairy milk down the drain, and put down that meat cleaver. “The term ‘raw food’ refers to food that hasn’t been cooked, treated, or processed in any way above 42°C (115°F),” says Irene Arango, raw-food chef and co-owner of NAMA Foods, the Notting Hill eatery that’s spearheaded London’s raw-food scene since 2013. “Food cooked above this temperature starts to lose vital vitamins, minerals, and enzymes. When I lived in the United States, tofu was the stuff of tofurkey and faken (tofu turkey and tofu bacon), the weird go-to food for weirdly healthy people. Here in Korea, tofu is a mainstream favorite, a food thought of not as off-putting for being so nutritious, but as delicious. Comforting, even. Made by coagulating soymilk, which is made by soaking dry soybeans and grinding them with water, and then pressing the curds that form into soft blocks, tofu is high in protein and calcium while low in fat and carbohydrates. There is fresh tofu and processed tofu, there is soft (or silken) tofu and firm tofu. A staple food in many Asian countries, it is pronounced “doo-boo” in Korean and pre- pared in a variety of ways. Sundubu jjigae (soft tofu stew) is one of the most popular Korean dishes to use tofu as a main ingredient. It’s made with anchovy stock and ingredients including beef or pork, red pepper flakes, mushrooms and short neck clams. It’s topped, when sizzling, with a raw egg. Another favorite is dubu kimchi (tofu with stir-fried kimchi). Pair a square of tofu with a bit of stir-fried kimchi and the result is an intense flavor mix of fresh and fried, neutral and spicy, white and red.

The growth in menu penetration for burger substitutes has broken new ground for plant-based alternatives. But don’t let the popularity of those items obscure something important: Most consumers eat meat, and if they dial back their meat consumption, they’re more likely to go the flexitarian route than to go all the way to a vegetarian or a vegan diet. Plant-forward is a trend The Culinary Institute of America has been tracking ahead of its Menus of Change conference and the recent release of its “Plant-Forward by the Numbers” report. Given the current state of the industry, the goal is now to understand: how is this consumer macro-trend tracking five months into the pandemic? The result of CIA’s research and this study is a big-tent approach that recognizes vegetarian and vegan preferences, with an acknowledgement of an even bigger opportunity for change: the food industry can build on the already shifting preferences of a larger part of the population wanting to eat less meat and fewer animal-sourced foods, without eliminating those foods altogether. There is plenty of demand to meet just by developing flexitarian menus. Consumers like having alternatives, and plant-forward items serve this purpose more holistically than vegetarian or vegan offerings by themselves. EXAMPLES OF PLANT BASED DIETS ● Semi-vegetarian​ or ​flexitarian ​includes eggs, dairy foods, and occasionally meat, poultry, fish, and seafood. ● Pescatarian ​includes eggs, dairy foods, fish, and seafood, but no meat or poultry. ● Vegetarian ​(sometimes referred to as lacto-ovo vegetarian) includes eggs and dairy foods, but no meat, poultry, fish, or seafood. ● Vegan ​includes no animal foods. ● Paleo ​a diet based on the types of foods presumed to have been eaten by early humans, consisting chiefly of meat, fish, vegetables, and fruit, and excluding dairy or grain products, and processed foods and sugar. ● Ketotarian ​diet is a plant-based version of the low carb, high fat keto diet. TIPS FOR STARTING A PLANT BASED DIET ● Eat lots of vegetables. Fill at least half your plate with vegetables at every meal. Make sure you include plenty of colors in choosing your vegetables. Enjoy vegetables as a snack with hummus, salsa, or guacamole. ● Eat Organic whenever possible. The product of a farming system which avoids the use of man-made fertilisers, pesticides; growth regulators and livestock feed additives. ● Change the way you think about meat. Have smaller amounts. If you have meat on a meal, have it only be 25% the amount of the food you eat. ● Choose good fats. Fats in olive oil, olives, nuts, nut butters, seeds, and avocados are particularly healthy choices. ● Cook a vegetarian or vegan meal at least 7 meals a week.
