MADO MENU DESSERTS From Karsambac to Mado Ice cream: Flavor’s Journey throughout the History From Karsambac to Mado Ice-cream: Flavors’ Journey throughout the History Mado Ice-cream, which has earned well-deserved fame all over the world with its unique flavor, has a long history of 300 years. This is the history of the “step by step” transformation of a savor tradition called Karsambac (snow mix) that entirely belongs to Anatolia. Karsambac is made by mixing layers of snow - preserved on hillsides and valleys via covering them with leaves and branches - with fruit extracts in hot summer days. In time, this mixture was enriched with other ingredients such as milk, honey, and salep, and turned into the well-known unique flavor of today. The secret of the savor of Mado Ice-cream lies, in addition to this 300 year-old tradition, in the climate and geography where it is produced. This unique flavor is obtained by mixing the milk of animals that are fed on thyme, milk vetch and orchid flowers on the high plateaus on the hillsides of Ahirdagi, with sahlep gathered from the same area. All fruit flavors of Maras Ice-cream are also made through completely natural methods, with pure cherries, lemons, strawberries, oranges and other fruits. Mado is the outcome of the transformation of our traditional family workshop that has been ice-cream makers for four generations, into modern production plants. Ice-cream and other products are prepared under cutting edge hygiene and quality standards in these world-class modern plants and are distributed under necessary conditions to our stores across Turkey and abroad; presented to the appreciation of your gusto, the esteemed gourmet.

  • Spinach and Cheese Pie.Pdf
Spinach and cheese pie We found ıspanaklı ve peynirli börek to be as common in Turkey as spanakotyropita is in Greece, and made a point of sampling as many as humanly possible, purely in the name of research of course. They are essentially the same dish – a savoury pie made of multiple layers of ultra-thin pastry with a spinach and cheese filling. Sometimes it’s just spinach, or just cheese, but I like it with both. They come in various shapes and sizes, depending on which country, region, town, village, bakery or home you’re in, and with different fillings. The form here is nice and simple and works with the packets of filo dough we can find in shops in the UK. I have made the filling purposefully generous in quantity and moist in consistency as I don’t like my börek dry. The recipe is loosely based on two very different versions I had the opportunity to make with chefs in Turkey and Greece – Engin Akin in Istanbul and Dimitris Mantsios in Naoussa. Serves: 6-8 for lunch or as a snack Total time: approx 1 hour 30 mins 400g (14 oz) spinach, well washed, well dried and quite finely chopped 200g (7 oz) Feta cheese, or similar, crumbled 1 small bunch spring onions, white and pale green parts only, finely sliced 2 eggs 225ml (<1 cup) thick whole plain yoghurt approx 2 tsps sumac or lemon juice, to taste approx ½ tsp chilli flakes, to taste salt and pepper, to taste approx 125g (4½ oz) butter 250g (8¾ oz) fresh filo pastry (approx 14 sheets) 1 egg yolk 1.

These light-as-a-feather confections are one of the most mouthwatering gifts France has offered to the world. Cold eggs, milk, sugar, blackberries, rum and, possibly cocoa blend together. Pair it with a glass of almond milk to really feel like a kid again! Tub Tim Krob, Thailand. Although they are popular in Pakistan and Nepal. Even thinner than filo, the delicate warqa dough that's used for this Moroccan sweet is prepared by daubing a ball of dough on a hot griddle; it's an impressive labor of love that takes deft hands and many hours of practice. Below you can find some familiar yet still favorable classic Oreo cake recipes. These little puffs of choux pastry, sprinkled with pearl sugar, are crisp, airy, and simply irresistible. The melted cheese and warm dough create a savory and sweet mixture of tastes unique only to kanafeh. A soft, flaky dough is shaped into a plump half-moon that barely contains the sweet filling, then topped with a light blanket of powdered sugar. Dark rounds of chocolate cake are doused in a cherry syrup spiked with kirschwasser, a sour cherry brandy, then stacked atop a thin, chocolate base with deep layers of whipped cream and fresh cherries.
