isitor turnout at ISM 2011 was up 5 percent from 2010 with 32,300 trade visitors from nearly 150 Vcountries. There were 1,494 suppliers from 64 countries exhibiting their products.

There were many products that were light and playful. Examples include adding a small fairy tale book in with reduced-sugar chocolates for children, or puzzles and novels with chocolate bars to cre- ate a quiet luxury for adults to relax and enjoy the treat. Flavor combinations such as mango, lime and orange with guarana extract and vitamins; pear and white tea; strawberry and lychee; blackberry and apple; mango and cayenne; sour cherry and chili; blueberry and lavender; and peach and guava can be found in many new and traditional products.

Along with flavor combinations are flavor pairings such as lemon and rosemary; blood orange and marzipan; strawberry in champagne; and Taggiasca olive pieces in truffle filling to tempt consumers.

Vegetarian products include snack bars made with 100 percent vegetables and fruit gums.
