化的第一载体,分别体现在某一地方的地理条件,气候特点与当地人的经 济、教条等各个方面。 烹饪是一个民族或一个地方饮食文化的最佳表现。饮食早已是中国 一种文化。饮食文化在中国的习俗和日常生活中根深蒂固。中国烹饪可算 是全世界最重要的料理之一,其饭菜非常别致并及其美味。但对于一般的 西方人来说,他们对于中国菜的认识仅限于那些离他们家很近的中国餐馆 里。那里的饭菜是趋于满足外国人口味的西方化的中餐,并不是真正的中 国菜。 本篇论文的目的是研究中国烹调的特点,尤其是根据北方地理、历 史、文化的特点,研究北方饮食文化的发展和如何将营养理论真正地转化 成一种食物。 我选择研究中国北方饮食文化的原因有两个:第一是因为中国北方 的黄河流域是中国文化和中国饮食烹饪文化的发源地。第二是因为在我第 一次在北京留学的两个月内,我有机会品尝了真正的中国美味,这是我爱 上中国北方饮食文化的一个重要原因。 本篇论文共有三章:第一章研究中国饮食文化的历史,即从新石器 时代到快餐连锁的推广。依照的历史时代:古代中国,秦汉朝, 中国中世 纪,唐朝,宋朝,元朝,明朝,清朝与中华民国。新石器时代就是人类以 农业与牧业开始创造他们自己所需饮食的时代。 这种变化深深地改变了人 们的生活方式。他们开始使用精制的烹调技法以及高雅的烹饪法。食物再 也不只是他们营养与能量的来源,而变成了一种文化的乐趣。新石器时代 后,中国原始社会衍变成世界上最具文化底蕴的社会之一。周代所有的烹 调方法都尽人皆知,农业进步促使了养殖系统的优化,比如井田制。公元 2 前 221 年秦国君王一统天下,从那时以来中国社会兴旺并有很大的变革; 中国成为世界上最具文化的强国之一。饮食文化是中国高级文化的一个重 要方面。在中国历史中,繁华的和别国进行贸易、新食品的输入、邻国的 邦交、新宗教的输入、气候状况的变化都影响了中国饮食文化史, 并慢慢 演化成了现在的中国烹饪法。第一章的目标就是让读者弄清不同的历史时 代怎么影响了中国饮食文化和现代的中国菜是如何形成的。 第二章根据中国北方气候,地理和文化的特殊性,重点分析中国北 方部分省市,即河北,河南,陕西,山西省和北京市,传统菜肴的代表性。 中国菜系很多. 菜系,是指在选料、烹饪技艺方面,经长期演变而自成体 系,具有特别的地方风味。这些菜系都可以分为四大类:中国北方菜, 西 方菜,东方菜与南方菜。 这种说法是以这四个不同地区的地理与气候特色 而形成的。中国北方的气候是大陆性气候, 冬天比较冷,年降雨量比较低, 所以这个地方的饮食文化以气候干燥忍受的食料而凭,小麦就是最典型的 例子。这些气候特点还长久免除了别的地方很常见的食料的摄入, 比如说, 大米在宋朝成立时才成为了中国北方常用的食品。可是地理与气候状况不 是一个地方风味的唯一原因。 中国北方的省份在不同的历史情况与其附近 文化的影响下, 同样的主食, 首创了不同的风味菜, 都有它们自己的特 色。第二章的目标是根据中国北方气候,地理和文化的特殊性,研究中国 北方各个省份饮食文化的特色。 最后一章研究在中国北方饮食文化中最重要的烹调技法和北方常用 的传统五香、调味汁及配料的用房。口感和味道是全球烹饪法的最重要的 方面。这两个方面最具不同烹饪法跟不同风味代表性。口感和味道是通过 烹调方法与调味品得到的。所以,为了研究中国北方烹调的特点,不能不 uguale per tutti gli esseri viventi: tutti devono mangiare per vivere. Questo è il nutrimento usato dal corpo per sostenere la crescita, i processi vitali e per produrre energia. Il cibo è anche il primo vettore di cultura: racchiude in sé le caratteristiche climatiche e geografiche, le condizioni economiche, le norme religiose, le credenze, le superstizioni e i gusti di un popolo. La cucina, intesa come arte culinaria, è la massima espressione dei metodi di preparazione propri della tradizione e della cultura di un popolo o di una regione. Il cibo è da sempre un’importante componente della cultura cinese e assume un ruolo significativo all’interno delle tradizioni che si estende in ogni ambito della quotidianità. La cucina cinese è una delle più importanti e sofisticate al mondo, sebbene la sua conoscenza spesso si limiti al cibo servito in quei ristoranti cinesi che, sulle loro tavole, presentano un’idea distorta di esotismo piuttosto che la vera cucina cinese. Lo scopo di questa tesi è quello di studiare questa cucina, soffermandosi più in particolare sulla cucina che si è sviluppata al Nord della Cina, indagando su quei meccanismi storico-culturali e sulle caratteristiche geografiche e del clima che, nel corso dei secoli, hanno trasformato la necessità fisiologica di nutrirsi in una vera e propria cultura del cibo. La scelta della cucina cinese del Nord è dettata principalmente da due fattori: il Nord della Cina e più in particolare l’area che si estende sul corso del Fiume Giallo è il luogo di nascita della cultura cinese e delle sue prime forme di cucina. La seconda ragione, probabilmente meno accademica, è dovuta al fatto che nei miei viaggi in Cina da studente di lingue orientali a Pechino ho avuto, probabilmente per la prima volta, occasione di assaggiare la vera cucina cinese tipica. Questa tesi si divide in tre parti principali: il primo capitolo è dedicato alla storia del cibo e dell’alimentazione in Cina, dal neolitico sino all’arrivo dei primi fast- food, cercando di studiare quei meccanismi che hanno accompagnato l’evoluzione della cucina cinese e che l’hanno plasmata nella sua forma attuale. I periodi storici presi in considerazione sono: la Cina antica (dal Neolitico al 221 a.C.), le dinastie Qin e Han, il Medioevo cinese, le dinastie Tang, Song, Yuan, Ming, Qing ed infine il periodo dal 1911 ai giorni nostri. La prima parte del capitolo copre un lasso di tempo piuttosto 6 esteso compreso tra rivoluzione neolitica e la formazione del primo impero centralizzato. In questi secoli di storia vennero poste le basi per la nascita e lo sviluppo della cultura cinese. La rivoluzione neolitica coincide con quel periodo dell’evoluzione umana in cui le comunità

For example, language barrier was one of the main difficulties faced by humanitarian workers responding to the Ebola crisis in 2014. We propose to break language barriers by extracting information (e.g., entities) from a massive variety of languages and ground the information into an existing Knowledge Base (KB) which is accessible to a user in their own language (e.g., a reporter from the World Health Organization who speaks English only). The ambitious goal of this thesis is to develop a Cross-lingual Entity Extraction and Linking framework for 1,000 fine-grained entity types and 300 languages that exist in Wikipedia. Given a document in any of these languages, our framework is able to identify entity name mentions, assign a fine-grained type to each mention, and link it to an English KB if it is linkable. Traditional entity linking methods rely on costly human annotated data to train supervised learning-to-rank models to select the best candidate entity for each mention. In contrast, we propose a novel unsupervised represent-and-compare approach that can accurately capture the semantic meaning representation of each mention, and directly compare its representation with the representation of each candidate entity in the target KB.
