The frequent and abundant rainfall during the first months of the year, in addition to delaying the vineyard work which had been programmed, gave the vines ample reserves of groundwater in the soil. The vineyards, accordingly, went through a period of lengthy and vigorous growth and development during the spring, thanks as well to mild seasonal temperatures. The grapes, for this reason, were picked several weeks later than usual compared to previous vintage and were able to be harvested in a ripe and healthy state in late September only due to timely and careful systematic vineyard work and a dry month of August. Fermentation and Aging As in every vintage, the grapes were selected in the field during the harvest and then a second time on a sorting belt in the cellars which eliminated both unripe and unhealthy grapes not seen during the picking operations. The must fermented in the property’s conical cement fermenting tanks, and the fermentation took place in temperature-controlled conditions to best preserve aroma and flavor. The 12 to 18 month aging period took place in traditional 420 and 840 gallon (16 and 32 hectoliter) oak casks, and the wine was constantly monitored and regularly tasted to verify its evolution. It was then blended and completed the aging phase in stainless steel tanks until bottled.
