Es el caso de la producción de tlacoyos en la comunidad de San Miguel Tianguizolco, Huejotzingo, Puebla, México, donde las mujeres se han dedicado a esta actividad por más de 30 años. Esta investigación tuvo como objetivo describir el proceso de producción de tlacoyo en esta localidad, tratando de identificar oportunidades de mejora en cada etapa. Los resultados indican que la producción del tlacoyo se hace de manera tradicional, lo que ha permitido su permanencia en el mercado; sin embargo, hay oportunidad de hacer más eficiente el proceso introduciendo mejoras en el diseño de los espacios, infraestructura y prácticas de calidad.
