The major types can be roughly defined as: East Asian with its origins in Imperial China and now encompassing modern Japan and the Korean peninsula; Southeast Asian which encompasses Cambodia, Laos, Thailand, Vietnam, Brunei, Indonesia, Malaysia, Singapore, and the Philippines; South Asian states that are made up of India, Burma, Sri Lanka, Bangladesh and Pakistan as well as several other countries in this region of the Vietnamese meal, in Asian culture food often serves as the centerpiece of social continent; Central Asian and Middle gatherings Eastern. Terminology "Asian cuisine" most often refers to East Asian cuisine (Chinese, Japanese, and Korean), Southeast Asian cuisine and South Asian cuisine. In much of Asia, the term does not include the area's native cuisines. For example, in Hong Kong and mainland China, Asian cuisine is a general umbrella term for Japanese cuisine, Korean cuisine, Filipino cuisine, Thai cuisine, Vietnamese cuisine, Malaysian and Singaporean cuisine, and Indonesian cuisine; but Chinese cuisine and Indian cuisine are excluded. The term Asian cuisine might also be used to Indonesian cuisine address the eating establishments that offer a wide array of Asian dishes without rigid cuisine boundaries; such as selling satay, gyoza or lumpia for an appetizer, som tam, rojak or gado-gado for salad, offering chicken teriyaki, nasi goreng or beef rendang as the main course, tom yam and laksa as soup, and cendol or ogura ice for dessert.

Editorial by Philippe Marion > B&G. LOVE LETTERS FROM FRANCE! More than ever food and wine pairing is popular. Literally thousands of websites with recipes and wine suggestions have seen the daylight over the past few years and more and more new food events are followed by an incredible number of wine enthusiasts. Every country has its own culinary television channel or show where young and enthusiast chefs demonstrate their cooking and presentation skills. Chefs contests are presented as reality shows and we can see chefs at their best and at their worst. As an opposition to the fastfood world, culinary movements as "slow food" and "fooding" (the addition of food and feeling) appeared. Some famous magazines make strict recommendations when it comes to pairing wine and food, where others stick to a "drink what you like" rule. And at Barton & Guestier? Recently, with the launch of The Pairing Collection, we have tried to make food and wine pairing easy for consumers and after only few months of introduction we can say: it works. But there is more! As shown in the B&G History section of this newsletter, in 1954 already, we wrote in the "B&G. Love Letters from France" advertising campaign: A Loaf of Paté, a Label of Wine and Thou... which implicates that it is simple, but that there is something beyond pairing food and wine... it is a romance, a love story. Later, in the US, B&G Sparkling Burgundy is our recommendation to accompany Thanksgiving dinners, a disguised but true invitation for getting together and celebrate life.

  • Editorial by Philippe Marion > UNITY MAKES STRENGTH!
Editorial by Philippe Marion > UNITY MAKES STRENGTH! I am pleased to announce that from January 2016 Barton & Guestier and its sister company Patriarche joined forces to sell both brands on a larger scale worldwide. The complementarity of both brands is obvious in terms of offer. Barton & Guestier is the benchmark for AOC and Varietal IGP wines where Patriarche is the specialist of Sparkling wines and High End Burgundies, and B&G and Patriarche have different customers in most markets. The teaming up of the sales forces is leading to an increased number of export managers, as Barton & Guestier welcomed Kevin Blanco and Victor de la Chapelle. Consequently some markets were introduced to a new B&G sales manager and most already met during Prowein or locally. We also appointed Claire Bigot as Brand Ambassador for South-America and Caribbean, reporting to Audrey Clos. Claire is based in Mexico. The teaming up was already effective in USA and Asia: In 2012, B&G and Patriarche joined forces for the importation of their brands in the USA under the responsibility of Hubert Surville. Since then, both brands have seen constant growth on this market and 2015 showed a 30% increase. I take the opportunity to announce that this month the B&G Patriarche USA team welcomes Marion Mordelles, Field Sales Manager based in New York City, replacing Jamie Rodriguez who was appointed State Manager New York. In addition Chris Ferraro is promoted Regional Sales Manager in charge of Massachusetts, Vermont, Maine, New Hampshire, Connecticut and Rhode Island. In 2013, Carlos Varela moved to Asia to sell B&G and Patriarche across South East Asia with the help of Jonathan Lament and Victoire Desvigne.

  • Wine Is an Alcoholic Beverage Produced by Natural Fermentation of Freshly Gathered Grape Juice
Wines DEFINITION : Wine is an Alcoholic Beverage produced by natural fermentation of freshly gathered Grape juice. Produced according to the Local traditions and practices. WINE PRODUCING REGIONS OF THE WORLD. OLD WORLD WINES : Wine producing countries of Europe such as France, Germany, Italy, Spain & Portugal. NEW WORLD WINES : Wines producing countries such as Australia, South Africa, New Zealand, North & South America. HOW IS WINE MADE? GROWING GRAPES. Grapes grow on vines. There are many different types of grapes, but the best wine grape is the European Vitis vinifera. It is considered optimal because it has the right balance of sugar and acid to create a good fermented wine without the addition of sugar or water. HARVEST Weather is a major factor is determining whether a year is going to be a "good vintage" (or "year"). For example, was there enough heat during the growing season to lead to enough sugar? At harvest time, the short-term effects of weather are quite important. To produce great wine, the fruit should have a high (but not overly high) sugar content ("brix"). Think of raisins. As the fruit dries, the water evaporates. What is left is the sugary fruit. If it rains just at the point the wine grapes are ready, and before the grapes can be harvested, the additional water will cause the water level to increase, and the brix will go down. Not good. (You might ask, why not just add some sugar in the wine making process? Some do. Also considered "not good.") Every year the wine grape grower plays a game of chance and must decide when to harvest.
