A delicious blend of St. Germain Liqueur, New Amsterdam Vodka, Housemade Lemoncello, Raspberry and Chocolate Syrup, topped with a Candied Lemon/Chocolate Wedge. BLOOD AND SAND The classic Scotch-based Blood and Sand cocktail tastes like neither. The recipe for the Blood and Sand first appeared in print in Harry Craddock’s 1930 The Savoy Cocktail Book. It’s a complex combination, both fruity and smoky, and a sweet bit of grit! A crafted delight which consists of Dewar’s White Label Scotch, Cherry Heering Liqueur, Sweet Vermouth, Housemade Orangecello, Fresh Lemon and Simple Syrup, rimmed with Sugar in the Raw, Orange Twist. MINT JULEP Celebrate Derby Day year-round with the Mint Julep, a classic bourbon refresher. You’re sure to win with this refreshing combination of Jim Beam, Branca Menta, Cherry Heering, Housemade Simple Syrup and Fresh Mint. VESPER Pay tribute to 007 by mixing up his signature Vesper cocktail. The drink first appeared in Ian Fleming’s 1953 novel Casino Royale when Bond asked for “Three measures of Gordon’s, one of vodka, half a measure of Kina Lillet. Shake it very well until it’s ice-cold, then add a large thin slice of lemon peel. Got it?” New Amsterdam Vodka and Bombay Gin with a touch of Lillet Blanc over ice, shake and strain your new favorite cocktail into a Martini glass with a Lemon Peel. MOSCOW MULE This spicy vodka-and-ginger cocktail bites back. The Moscow Mule marries the clear spirit with ginger for a spicy kick. Lime adds a citrusy touch for a taste that will keep you coming back for more Start this classic in a copper mug with Stolichnaya Vodka, Fever-Tree Natural Ginger Beer and finish with a Squeeze of Fresh Lime. GIBSON The Martini’s savory second cousin, the Gibson uses a pickled cocktail onion in place of the typical briny olive to add an umami undertone to the classic cocktail. The Gibson is believed to have been created by San Francisco businessman Walter D.K. Gibson in the late 1800’s, who thought that eating onions prevented colds, hence the addition of the mini allium. This Classic can be made with New Amsterdam Vodka as well as Bombay Gin, Splash of Vermouth and a Filthy Onion. THE ZOMBIE The Zombie is an exceptionally strong smooth cocktail made of fruit juices and rum, so named for its perceived effects on the drinker. Donn Beach (formerly Ernest Raymond Beaumont-Gannt) of Hollywood’s Don the Beachcomber concocted it one afternoon in the mid-1930’s for a friend who was flying to San Francisco. The friend left after having consumed three of them. He returned several days later to say that he had been turned into a zombie for his entire trip. Bacardi Silver, Bacardi Black and Bacardi Oakheart Rum with Cherry Heering mixed to perfection with Lemon Sour, Pineapple Juice, poured over the rocks and garnished with a Pineapple Wedge and Black Cherry. DARK ‘N STORMY Even when this drink describes the weather, you’ll feel warm on the inside. According to a legend, the name Dark ‘n Stormy was coined by a sailor sometime after WWI who, while enjoying the cocktail, commented that it was the “color of a cloud only a fool or a dead man would sail under.” Gosling’s Black Seal Rum and ginger beer have been rumored to combat seasickness, while making an excellent cocktail. HURRICANE Created in the 1940’s, this powerful tropical cocktail will transport you to the French Quarter with the first sip. Bacardi Silver & Bacardi Black Rum, Lime Juice, Orange Juice and Passion Fruit with a Splash of Grenadine, shaken and finished with an Orange Slice and Black Cherry. MANHATTAN One thing we’re pretty sure of is that the drink had reared its beautiful head by the 1880’s, and we also know that it was one of the very first cocktails that called for vermouth as a modifier. Dear, sweet vermouth. Seagram’s VO, Carpano Antica, Gancia Americano, stir, strain and pour with an Orange Peel and Black Cherry. 11682 116 OLD FASHIONED The most classic of cocktails, the Old Fashioned, likely dates back to the early 1800’s. The earliest known definition of a cocktail was in an 1806 response from the editor in The Balance and Columbia Repository from Hudson, NY, which defined a cocktail as: “…a potent concoction of spirits, bitters, water, and sugar. A kind of bittered sling” Seagram’s VO, Carpano Antica, Fee Brothers Whiskey Barrel-Aged Bitters, stir, strain, pour on the rocks with an Orange Peel and Black Cherry. AVIATOR Noted for its beautiful color, this old-school gin Aviation cocktail is as blue as the sky. Created before Prohibition, this staple was lost to the United States after the Noble Experiment. Luckily, the return of lots of classic liqueurs and quality spirits put this cocktail back on the market. Bombay Gin, Luxardo Maraschino Liqueur, Fresh Lemon Juice, Creme de Violette with a Flamed Lemon Peel for garnish, served in a Martini glass. GINGER SMASH This drink is known as just Yum, Yum, Yum, by its peers. True statement. Maker’s Mark and Domaine de Canton Ginger Liqueur shaken with Lemon and Mint. HANDCRAFTED MOJITOS Housemade Simple Syrup, Fresh Mint DRAGONBERRY BLACK RASPBERRY WOLF BERRY MANGO BLACK CHERRY PINEAPPLE COCONUT ORANGE LIMÓN TANGERINE PEACH MELON MODERN CLASSICS NEGRONI While the drink’s origins are unknown, the most widely reported account is that it was invented in Florence, Italy in 1919, at Caffè Casoni, now called Caffè Cavalli. Count Camillo Negroni invented it by asking the bartender, Fosco Scarselli, to strengthen his favorite cocktail, the Americano, by adding gin rather than the normal soda water. The bartender also added an orange garnish rather than the typical lemon garnish of the Americano to signify that it was a different drink. Grey Goose Vodka with equal parts Gancia Americano and Carpano Antica shaken then strained into a Martini glass with an Orange Peel. BEE’S KNEES When bees flit from flower to flower the nectar sticks to their legs. The phrase “bee’s knees” means sweet and good, because the knees of the bee are where all the sweet, good stuff is collected. This drink really is the bee’s knees. Stolichnaya Vodka, Runny Honey Syrup, Housemade Limoncello, Ginger Beer and Muddled Lime.

  • FOOD SCIENCE the Study of the Physical, Biological, and Chemical Makeup of Food 58 FOOD SCIENCE
55 FOOD SCIENCE The study of the physical, biological, and chemical makeup of food 58 FOOD SCIENCE WHY DOES SWISS CHEESE HAVE HOLES? he holes in Swiss cheese come from bacteria that helps turn milk into cheese. All types of cheese contain bacteria, but not all bacteria are the same. When making Swiss cheese, cultures of the bacteria S. thermophilus, Eye See You! LactobacillusT , and P. shermani are mixed with cow’s milk. The holes in Swiss The bacteria helps produce curds, a thick substance that forms when milk cheese are called “eyes.” becomes sour. These curds are pressed in large molds, which are then soaked in a salty water solution called brine. Afterward, the cheese is stored at 72-80 degrees Fahrenheit and left to age, or ripen. During the aging process, the bacteria P. shermani releases carbon dioxide, which forms small bubbles in the cheese. These bubbles burst and form little air pockets, resulting in the holes of the Swiss cheese. Cheesemakers can control the size of the holes in Swiss cheese by changing the length of the aging process, as well as by changing the acidity of the brine and the temperature of the environment that the cheese is in during the process. The Cheese and Chanukah Connection There is a custom to eat dairy products and cheese on Chanukah. This custom stems from the heroism of Yehudis, of the Chashmona’im family. Yehudis was taken by the leader of the Greek troops. While she was with the Greek officer, Yehudis fed him a dish cooked with cheese, so he would become thirsty.

Hotel Indiana, 1920 In June of 1919 original construction began on our hotel. Construction workers were paid 45 cents an hour and worked ten hour days, six days a week. In just ten short months after construction began the “Hotel Indiana” opened on May 6, 1920. The cost to construct and furnish the hotel in 1919 was $250,000 – compared to the 2007-2010 renovation and restoration cost of approximately $15,000,000. In 1946 the Dekau Family purchased the hotel and renamed the “Red Apple Inn.” The Dekau family operated the Inn for sixty years. In 2007 Wabash resident and philanthropist Richard E Ford purchased the hotel and began a three year, $15 million dollar renovation and restoration. In May of 2010 the hotel reopened and began a new life as Charley Creek Inn named after the Miami Indian Chief from the area. Charley Creek Inn is on the National Register of Historic Places and is the recipient of Indiana Landmark’s Cook Cup for its impeccable historic restoration.
