Traditional Irish Boxty Recipe

Ingredients:

● 1 cup raw potatoes ● 1 cup mashed potatoes ● 1 cup all-purpose ● 2 tsp baking powder ● 2 tsp salt ● 2 eggs, lightly beaten ● 1/4 cup (about) milk to mix ● Butter or oil for frying

Method:

1. Peel about 5-6 potatoes depending on their size. Cut them in quarters (this they will cook faster) and place them in the pot filled with cold water. Bring it to boil, then turn the heat to medium and cook for 15 minutes. 2. Check if the potatoes are done with the fork. Carefully discard the liquid from the pot, and remove from heat. 3. Mash potatoes, and add 1/2 cup milk in a few bathes, combining with a spoon. Mash in a tablespoon of butter. 4. Now peel and grate the raw potatoes

5. Place the grated raw potatoes in a clean cloth and twist to remove excess moisture. 6. Whisk together flour, salt, and baking powder.

7. Combine flour mixture with the raw potatoes, the mashed potatoes, and the eggs. 8. Start slowly adding the milk, until you reach the consistency of the batter. 9. Heat a heavy skillet over medium heat and add butter or oil.

10.Drop batter into the hot pan.

11.After 3 minutes flip the – it should be lovely brown – and cook the other side 3 minute more.

**We highly recommend serving Irish boxty with sour cream and scallions, or you can add a little bit of bits or grated cheese.
