So sit back, relax and enjoy our hospitality- we look forward to welcoming you again. Glossary of Terms * Escabeche An acidic mixture used to marinate and cook. It’s roots can be traced back as far as the 1200s. Sauce Vierge A French sauce mainly based on olive oil, lemon juice, chopped tomato and chopped basil. Foie Gras Literally translates to fat liver, is the liver of a duck or a goose that has been especially fattened. This is a popular and well-known delicacy in French cuisine. Pain d’Epices Meaning spiced bread, is a type of cake to which aromatic spices are added. Camembert A soft and moist cheese. It was first made in the 18th century at Camembert, Normandy. Mortadella A large sausage or luncheon meat made of finely hashed or ground heat-cured pork, which incorporates at least 15% small cubes of pork fat (principally the hard fat from the neck of the pig). This is a product of Bologna, Italy. It is flavoured with spices, including whole or ground black pepper, myrtle berries and pistachios. Confit A cooking term describing when food is cooked in grease, oil or sugar water (syrup), at a lower temperature for a long period of time. Sauce Maltaise Traditional hollandaise sauce blended with blood orange juice to create a sweet, citrusy sauce. Samphire A plant that grows on rocky coastlines and gets a salty taste from the sea spray. Chanterelles A species of wild mushroom usually orange, yellow or white with a funnel shape. Barbary Duck Also known as Muscovy ducks, these birds are leaner than other breeds of farmed ducks. We use meat from the female duck which is better renowned for its tender meat. Glossary of Terms * Amaretti Refer to an amaretto (almond flavoured) macaroon that is traditional to Saronno, a commune of Lombardy, Italy. Grand Marnier An orange-flavoured liqueur created in 1880 by Alexandre Marnier-Lapostolle. It is made from a blend of Cognac brandy, distilled essence of bitter orange and sugar. Confit Byaldi A variation on the traditional French dish ratatouille. Financier Originally made by the Visitandine order of nuns in the Middle Ages. It is a small French cake with nuts and brown butter. Praline A form of confection containing roasted nuts and caramelised sugar. Arlette A French cinnamon flavoured palmier biscuit (a crunchy puff pastry cookie). Yuzu A very aromatic type of citrus fruit. Speculoos A type of spiced shortcrust biscuit, traditionally baked for consumption on or just before St Nicholas’ day in the Netherlands, Belgium, Luxembourg and around Christmas in Germany and Austria. Ganache This is a filling for pastries made from chocolate and cream. Was originally a kind of chocolate truffle introduced by the Paris confectioner Maison Siraudin in about 1862 and first documented in 1869. Parfait A frozen dessert which originated in France, is made by boiling cream, egg, sugar and syrup to create a custard-like puree.
